TATER TOTS
Steps:
- If necessary, cook the bacon according to one of my easy methods listed below. Once cool, dice into small pieces.
- Increase the oven temperature to 425 degrees F. Scrub and peel the potatoes. Place potatoes in a large pot and cover with 1 inch of cold water. Bring to a simmer over medium heat and cook for 6 minutes (the potatoes should be about halfway cooked). Drain and let cool for 15 minutes.
- Once cooled, grate the potatoes into a large bowl.
- Add the olive oil, flour, salt, garlic powder, and black pepper. Gently combine by hand so that the ingredients are as evenly distributed as possible.
- Add the bacon, cheese, and chives.
- Stir to combine.
- Generously coat two 24-cup mini muffin tins with nonstick spray, or make the tots in two batches. With a spoon, scoop about one heaping tablespoon of the potato mixture into each muffin cavity, then with your fingers, press each scoop flat.
- Bake until the potatoes are brown at the edges, about 15 minutes, then remove from the oven and coat the tops with cooking spray. With a small offset spatula or table knife, flip each tot. Coat tops with nonstick spray once more, then return the pan to the oven and bake until browned, 12 to 15 additional minutes until golden brown. Let cool in the pan for 2 minutes, then serve with Greek yogurt or sour cream.

BAKED TATER TOTS

Steps:
- Preheat oven to 425° F
- If using large potatoes, cut in half or quarters and place in a large saucepan covered with cold water. Bring to a boil and cook for about 6-7 minutes until parboiled. Drain well and let cool.
- Using a box grater with the large grid, finely shred potatoes. Drain potatoes on a towel, removing as much water as possible.
- Transfer shredded potatoes to a large bowl. Stir in flour, garlic powder, onion powder, oregano and dill; season with salt and pepper, to taste.
- Form potatoes into tots.
- Place tots on a parchment lined baking sheet and place in the pre-heated oven for 25-30 minutes, turning on each side while baking.
- Serve immediately

BAKED TATER WEDGES AND UTAH'S FAMOUS FRY SAUCE
Steps:
- Preheat oven to 450 degrees.
- Add your oil to a baking sheet with sides.
- Cut each potato into 8 wedges.
- Combine all dry ingredients into bag (either Ziploc or paper) and add a few potatoes at a time. Shake to coat well.
- Place the potatoes coated side down into the oil in the pan.
- Continue doing this until all the potatoes have been coated and placed in the oil.
- Bake for about 20 minutes and then pull out and flip over on the other side. Bake for an extra 20 minutes. Pull wedges out of the oven and then sprinkle with a little kosher salt. Serve hot.

PARMESAN TATERS
Steps:
- Preheat the oven to 400 degrees F.
- Combine the tater tots and the olive oil in a bowl. Toss to coat, spread on a baking sheet and bake until golden brown and crisp, about 30 minutes.
- Remove the tater tots from the oven, season with salt and pepper and transfer to a mixing bowl. To the taters, add the garlic, parsley and cheese. Toss to combine and serve immediately.

- Put potatoes, oil and soup mix in a plastic bag; close and shake until potatoes are coated.

AUTHENTIC MEXICAN MARRANITOS (MOLASSES GINGERBREAD PIGS)
Moist and rich-tasting beneath a glossy, ever-so-slightly flaky top. Not quite cookie, not quite cake. Marranitos -- or cochinos, or puerquitos, as are they are called in some Mexican-American communities -- are often called "Gingerbread Pigs," although they don't actually have ginger in them - and no cinnamon either. In fact, traditional marranitos get their delicious spicy-brown goodness from molasses. Baking soda is the leavening agent, and it's the variation in the amount used that makes some bakeries' pigs fatter than others. In Mexico, bakers take piloncillos -- unrefined brown sugar pressed into small cone shapes -- and boil the sugar with just enough water to make their own molasses syrup, which is then added to the dough for the little pigs. Then the dough is rolled out and cut with pig-shaped cookie cutters about the size of a medium-size grown-up's hand. (4.5") *This recipe is from Fort Worth baker Marco Rangel, and is used for the molasses pigs he sells at his bakery, the Panaderia San Marcos. It uses the non-traditional addition of cinnamon. You may wish to try also adding a bit of dry ground ginger. And you may use a milk wash instead of an egg wash.

- Place tilapia in an ungreased 13x9-in. baking dish. In a small bowl, combine the butter, lemon juice, garlic powder and salt; pour over the fillets. Sprinkle with capers, oregano and paprika., Bake, uncovered, at 425° until fish just begins to flake easily with a fork, 10-15 minutes.

BAKED TATER PIGS
At the fair we ate Tator Pigs, sausages cooked in a whole potato with sour cream, butter and salt and pepper. Then the local vendor couldn't sell them any more. This is my adapted recipe. A definite kid pleaser!

Steps:
- In large mixing bowl, mash tator tots.
- Add saltine crackers.
- In another bowl, wisk egg, milk and 1 tsp oil.
- Pour into tator tots and mix with hands or spoon.
- Wipe off Sausage links with paper towels.
- Take a 6 X 6 piece of foil. Spread a little oil on the foil.
- Mound two spoonfuls of tator tot mixture. Place a sausage on the mound. Mold the tator tots around the sausage, Add more for the top of sausage if needed.
- Take the foil and press around the sides and top.
- Do the same with the other sausages.
- Preheat oven 375*.
- Carefully take off the foil and place on Pam sprayed tray.
- Bake 20 Minutes. Remove from oven. Let set 10 minutes.
- Remove from tray by spatula.
- Alternate baking method:.
- Spray Pam in muffin cups.
- Mound and flatten two spponfuls tator tot mixture. Add one sausage broken in small pieces. Cover with tator tot mixture. Press down.
- Bake 20 minutes. Let set 10 minutes before removing.
- Remove from muffin pan by spatula.
- Serve with sour cream or ranch dressing.
