BEEF TAQUITOS

Like tacos, only neater to eat. In Mexico, they're often deep-fried, but baking them works well too. It's easier and healthier, and the tortillas still turn golden brown and crispy around the edges. Serve with salsa and sour cream.

1 tablespoon vegetable oil, plus more
vegetable oil, for brushing on the taquitos
1 medium onion, finely chopped
1 garlic clove, minced
3/4 lb lean ground beef
1/2 cup salsa, plus more salsa, for dipping
2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
10 (6 inch) flour tortillas
1/2 cup cheddar cheese or 1/2 cup monterey jack cheese, shredded
sour cream

Steps:

  • Heat the oven to 400°. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook them for 3 minutes, stirring often. Add the beef and use a wooden spoon or a spatula to break it up while it cooks, until it is no longer red, about 3 minutes. Stir in 1/2 cup of the salsa, the chili powder, and the salt and pepper. Cook the mixture over low heat, stirring occasionally, for 10 minutes.
  • Place the tortillas on a plate and cover them with damp paper towels. Microwave them until warm and pliable, about 45 seconds. Top each tortilla with 2 tablespoons of the beef mixture, spreading it to an inch from the edges. Sprinkle cheese evenly over the beef.
  • Roll up the tortillas and place them on a foil-lined baking sheet with the seam sides down. Brush the taquitos lightly with vegetable oil, then bake them until the filling is heated through and the tortillas are lightly browned, about 8 to 12 minutes. Serve them hot with sour cream and/or salsa.

1 ½ cups finely chopped tomatoes
½ cup minced onion
5 cloves garlic, minced
3 jalapeno peppers, seeded and minced
⅓ cup chicken broth
¼ cup taco sauce
2 tablespoons all-purpose flour
2 teaspoons ground cumin
2 teaspoons dried oregano
2 teaspoons chili powder

1 pound shredded, cooked rotisserie chicken
24 (6 inch) corn tortillas
3 cups shredded sharp Cheddar cheese
1 cup shredded lettuce, or to taste
½ cup sour cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a large baking pan with olive oil cooking spray.
  • Heat oil in a large skillet over medium heat. Add tomatoes, onion, garlic, and jalapeno peppers, then stir in chicken broth, taco sauce, flour, cumin, oregano, chili powder, and salt. Cook until heated through, 5 to 10 minutes. Add shredded chicken, mixing vigorously until ingredients are well blended; cook until hot, 2 to 3 minutes.
  • Wrap 8 tortillas in damp paper towels and microwave on high until soft and flexible, about 30 seconds. Repeat twice more to heat remaining tortillas.
  • Spoon about 2 tablespoons chicken mixture down the center of a tortilla and sprinkle with Cheddar cheese. Roll tightly around the filling and place seam-side down in the prepared baking dish. Repeat to form remaining taquitos. Spray taquitos with cooking spray and sprinkle with remaining Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and taquitos are crispy, 20 to 22 minutes.
  • Place shredded lettuce on a serving platter and arrange taquitos on top. Serve with sour cream and guacamole.

2 cups shredded rotisserie chicken
1 cup shredded mild white Cheddar cheese
1/2 teaspoon ground cumin
1/2 cup chunky prepared salsa, plus more for serving, optional
Eight 6-inch flour tortillas
1/2 cup sour cream, for serving, optional

Steps:

  • Add enough oil to a heavy bottom straight-sided pan to come 2 inches up the sides. Heat over medium heat to 350 degrees F on a deep-fry thermometer.
  • Meanwhile, mix together the chicken, Cheddar, 1/2 cup salsa and the cumin in a medium bowl. Spoon about a 1/4 cup of the mixture into the center of each tortilla. Roll the tortillas tightly around the filling and secure with a toothpick.
  • Working in batches of 2 or 3 at a time, place the taquitos in the hot oil and fry, flipping as needed to brown evenly, until crispy and golden brown, about 3 minutes. Using tongs, remove the taquitos to a paper-towel lined plate to drain. Continue with the remaining taquitos. Serve alongside salsa and sour cream for dipping, if desired.

1 onion (diced)
2 teaspoons minced garlic
1 pound ground beef
1 ounce taco seasoning mix
15 ounces black beans (rinsed and drained)
3 cups chunky salsa (divided)
1 ½ cups shredded cheddar cheese
20 flour tortillas (6 inch)
½ teaspoon salt

Steps:

  • Preheat oven to 425 degrees.
  • Cover a cookie sheet with aluminum foil and spray lightly with cooking spray.
  • In a large skillet, heat oil and add onion and garlic. Saute for about 5 minutes until soft.
  • Add beef and taco seasoning, cooking until meat is browned.
  • Add beans and 1 cup salsa. Mix well and let cook for a couple of minutes so that the flavors can meld and the mixture can thicken.

12 corn tortillas
2 chicken breasts, cooked (or 1 large can shredded chicken)
1 small onion
2 tblspn canola oil
1 cup shredded cheese, if desired
2 tbspn homemade taco seasoning

Steps:

  • Preheat oven to 425-degrees.
  • Chop the onion into very small bits.
  • In a small pan, place the onion, homemade taco seasoning, canola oil and chicken.
  • Shred the chicken while you cook over medium heat until the onions are tender and translucent.
  • Remove from heat and allow to cool to the touch.
  • Place about 3 tblspns of meat in the center of the tortilla across the tortilla.
  • Fold the tortilla in half over the meat, then roll tightly.

Homemade Taquitos image

Crispy Homemade Taquitos (also called Rolled Tacos) made with seasoned shredded beef corn tortillas all of the best toppings. They can be baked or fried and are sure to be your new favorite recipe!

1 2.5-4lb beef chuck roast *
Salt and freshly ground black pepper
14 oz can beef broth
½ cup salsa
1 1/2 Tbsp chili powder
1 teaspoon garlic powder
1/2 Tbsp cumin
1 teaspoon dry minced onion powder
20 corn tortillas
Oil for frying
toothpicks
Salsa
Sour cream
Guacamole
Shredded cheese

Steps:

  • For the Slow Cooker: Season roast with salt and pepper. Add chili powder, garlic, cumin, minced onion, beef broth and salsa. Cook on LOW for 7-8 hours or until meat is tender and shreds easily.
  • Remove roast to a plate and shred the meat. Discard any large pieces of fat. Return to the pot to keep warm.
  • For the Instant Pot: Season roast with salt and pepper. Cut it into four large pieces and place in instant pot. Add chili powder, garlic, cumin, minced onion, beef broth and salsa. Cook on manual/high pressure for 50 minutes. When timer beeps allow the pressure to naturally release before removing the lid (about 15-20 minutes).
  • Remove roast to a plate and shred the meat. Discard any large pieces of fat. Return to the pot to keep warm.
  • Assembly:
  • If frying, add about 1 1/2 inches of oil to a large skillet and heat to medium-high.
  • Drain beef and set aside. Heat a non-stick griddle over medium high heat. Cook tortillas for about 15 - 30 seconds on each side until soft and pliable. Remove tortillas to a plate covered with tinfoil to keep them warm and pliable.
  • Spoon about 2 tablespoons of the meat mixture into a line at one end of a tortilla and tightly roll it up. Use a toothpick to secure it.
  • Fried Taquitos:
  • Your oil should be hot (the tortillas should sizzle immediately when you put them in).
  • Fry the rolled tacos in small batches, for a few seconds on each side, rotating them as they cook, until they are golden and crispy on all sides. Place them on a paper towel lined plate.
  • Baked Taquitos:
  • Preheat oven to 425 degrees F. Spray the tops of the tacos with cooking spray , or brush them lightly with oil. Bake for 15-20 minutes or until the shells are crispy.
  • Serve taquitos with guacamole, shredded cheese, salsa and sour cream.

  • Cook beef - Cook beef in a non-stick pan over medium heat until no pink remains. If there is a lot of liquid in the pan, drain before proceeding.Sprinkle taco seasoning over the beef. Add ⅓ cup of water. Cook, stirring continuously for another 2-3 minutes, until the water reduces and beef is well mixed with seasoning. Set beef aside to cool before rolling taquitos.

These oven baked flautas are filled with a zesty refried bean and cheese filling! Similar to taquitos, they can be made with either flour or corn tortillas.

2 green onions
1 1/2 cups refried beans, Homemade Refried Beans or vegetarian canned refried beans
1/4 cup salsa, plus more to serve
1 teaspoon chili powder
3/4 cup shredded cheddar or Mexican blend cheese
14 6-inch flour or corn tortillas*
2 tablespoons olive oil, for brushing
1/4 teaspoon kosher salt, for sprinkling
For dipping: easy guacamole, salsa, or sour cream (or spicy sour cream mixed with hot sauce)

Steps:

  • Preheat the oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper (necessary for cleanup!).
  • Thinly slice the green onions.
  • If you're using canned refried beans, take a taste and determine whether they're well seasoned. If not, add a few pinches of kosher salt and cumin. If you're using our Homemade Refried Beans, they'll be perfectly seasoned and you can skip this step.
  • In a large bowl, mix together the green onion, refried beans, salsa, chili powder, and shredded cheese.
  • Optional step: If you're using 100% corn tortillas, you may want to pan fry each one in a skillet with a drizzle of olive oil (or without in a dry pan) to prevent cracking and help them be easier to work with. Every tortilla brand is different, so if your tortillas seem brittle it's helpful to heat them before rolling. You can do this with corn tortillas too!
  • Lay a tortilla on a work surface. Spoon about 2 tablespoons of the bean mixture in a dollop onto the bottom half of the tortilla. Be careful not to use too much! Tightly roll the tortilla from the bottom (the filling will spread out and hold the tortilla together). Place the flauta seam-side down on the baking sheet. Repeat for the remaining tortillas.
  • When the flautas are assembled, brush the tops with oil and sprinkle them with a bit of salt. Bake for 15 to 20 minutes, until crisp and browned. Some of the beans will come out the ends of the rolls, which is expected (enough filling will remain to perfectly flavor them!). Serve with salsa, guacamole, or sour cream. Freezing instructions: Cool the flautas to room temperature, then freeze in a sealed container. To reheat, bake in a 350 degree oven for 10 to 12 minutes, until warmed through.

I got this recipe off of a blog (bigboldbeautifulfood.blogspot.com). I have made it once and the flavour was really good, but it looked funny! The instructions are long but it is actually very simple and quick to make. I am posting how the recipe is originally written (well almost) but you might want to add a bit more spice. I served it with a spicy salsa and it tasted great. The chicken broth is needed if you are using corn tortillas only.

2 cups cooked chicken, shredded

Steps:

  • Preheat oven to 425F and oil a baking sheet.
  • Heat olive oil over medium heat in a skillet. Add onions and cook until starting to turn translucent, 3-5 minutes.
  • Add garlic, cumin, paprika, and salt. Stir to combine and cook 2 to 3 minutes longer, until fragrant.
  • Take from heat and stir in cilantro and chicken. Set aside.
  • IF YOU ARE USING FLOUR TORTILLAS:.
  • Lay tortilla on work surface and spread 2 or 3 tablespoons of chicken mixture over bottom third. Top with cheese and roll up.
  • Place seam side down on the baking sheet. Repeat with remaining tortillas. Spray or brush tortillas lightly with oil.
  • Bake until crisp and lightly browned, 12-15 minutes. Serve immediately.
  • IF YOU ARE USING CORN TORTILLAS.
  • Bring chicken broth to a simmer in a skillet or pot wide enough to hold tortillas.
  • Dip tortillas one at a time, briefly, just to soften, 1-2 seconds (I find it might take 3-4).
  • Lay tortilla on work surface and spread 2 or 3 tablespoons of chicken mixture over bottom third. Top with cheese and roll up.
  • Place seam side down on the baking sheet. Repeat with remaining tortillas. Spray or brush tortillas lightly with oil.
  • Bake until crisp and lightly browned, 12-15 minutes. Serve immediately.
