SIMPLY THE BEST BAKED ONION RINGS!
These baked onion rings are incredible! There is no way that you feel like you are eating healthy and low fat when you eat these. This is a slight adaptation of a Yahoo Health recipe. I dip mine in ketchup but my husband is a purist who prefers his plain. And while the prep time can be a little long, make it a social time. I talk to everyone in the house while I make these, and then sit back and enjoy how great they smell as they cook!

Steps:
- Preheat the oven to 450 degrees F.
- Spray a baking sheet slightly with oil and set aside. Place potato chips in the bowl of a food processor and process into crumbs, about 20 seconds. Transfer to a shallow bowl, add cayenne, and set aside. In another bowl, combine buttermilk, 2 tablespoons of flour, salt and pepper and set aside. Slice onions into 1/2-inch circles and separate into rings, keeping only large, whole rings (reserve rest of onions for other uses). You should come out with about 12 to 14 rings.
- Place the remaining flour in a sealable plastic bag, then add onions, and shake to coat. Dip onions 1 at a time into the buttermilk mixture, then dip into potato chip crumbs and place on baking sheet. Spray canola oil evenly over rings and bake for 20 minutes, or until coating is crisp. Season with salt, to taste, and serve immediately.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly oil a baking sheet with olive oil.
- Separate the onion slices into rings, and set aside. Whisk together the flour, baking powder, and salt in a bowl. Place the onion rings into the flour mixture, and thoroughly coat the rings; remove and set aside. Whisk the egg and milk into the remaining flour mixture until smooth; dip the floured onion rings into the batter, and lay the rings on wire racks to drip, so that excess batter will drip off the rings. Place aluminum foil or baking pans under racks for easier clean-up.
- Stir the panko bread crumbs and Italian seasoning together in a shallow bowl. Gently lay the battered onion rings into the panko crumbs, and press to coat the rings with crumbs on all sides. Lay the coated onion rings on the prepared baking sheet. Drizzle additional olive oil on rings, or spray the coated rings lightly using an oil mister.
- Bake the onion rings in the preheated oven until the coating is brown and crunchy and the onion is tender, about 20 minutes. Serve hot.

CRISPY BAKED ONION RINGS

Steps:
- At least 4 hours ahead of time, place the sliced onion rings into a large dish and pour buttermilk overtop. You don't have to drown the onions, just make sure they are somewhat submerged. Cover tightly and store in the refrigerator. In this step, you are soaking the onions, which will tenderize them. I strongly suggest soaking them for at least 12 hours for the best taste. I soaked mine overnight.
- Once the onions have soaked, remove from the refrigerator. Set aside.
- Preheat oven to 425°F (218°C). Line two large baking sheets with parchment paper or silicone baking mats. In a medium bowl, beat the egg whites. Set aside. In a large shallow dish (I used a pie dish), mix the whole wheat flour, cornmeal, bread crumbs, and the seasonings together until combined.
- Remove each ring from the buttermilk and dip in egg whites. Immediately submerge in the bread crumb mixture, mixing around to coat the onion well. If the bread crumbs won't adhere, dip in egg whites and then the breading again. If you find you need more breading, make more.
- Lay each breaded ring on the baking sheets in a single layer. You'll have two batches if your onions were quite large like mine. When all the rings are breaded, spray each with nonstick spray to "seal" the breading, which will prevent the breading from staying raw and allows it to bake onto the onion rings.
- Bake each batch for 15 minutes, remove from the oven and flip each ring using tongs. Spray the other side with nonstick spray. Then bake for 15 more minutes. A note about bake time: all ovens are different! And everyone likes a different level of crispiness. I baked my onion rings in my oven for 30 minutes, rotating and flipping once, and they were perfectly brown and crisp. Just bake the rings until they reach your desired level of brownness.
- Allow the onion rings to sit out for 10 minutes before digging in. Enjoy immediately.

Steps:
- Preheat the oven to 425°F. Grease a large baking sheet with cooking spray.
- Slice the onions into 1/2-inch wide rings then place the rings in a bowl of water.
- In a medium bowl, whisk together the flour, 1 teaspoon salt and 1/4 teaspoon pepper. In a second medium bowl, whisk together the egg whites and the mayonnaise. Add the breadcrumbs to a third medium bowl.
- Remove each onion ring from the water, shaking off any excess and then placing it immediately into the flour, tossing until it's thoroughly coated, then dip the onion ring into the egg white mixture until it's thoroughly coated and then into the breadcrumbs, pressing them firmly onto all sides of the onion ring. Place the onion ring on the prepared baking sheet and repeat the coating process with the remaining onion rings.
- Throughly spray the onion rings with cooking spray (this is optional, but it helps them brown more evenly). Bake the onion rings for 10 minutes then flip them once and bake an additional 5 minutes until they're golden brown and crispy. Serve immediately with your favorite dipping sauce.

- Pour a little bit of the almond flour mixture into a third bowl. Dip an onion ring in the egg. Shake off the excess, then press into the almond flour mixture, coating all sides. Place on the lined baking sheet. Repeat with all the onion rings, adding more almost flour mixture from the main bowl as you run out (don't use the main bowl for dipping because the mixture will get soggy before you're done using it). You may need more breading mixture depending on how many rings your onion has and how large it is.
- Bake for 8-10 minutes, flip over, then bake for another 8-10 minutes, until the onion rings are lightly browned on both sides. If desired, place them under the broiler for 1-3 minutes to crisp up (watch them closely to avoid burning). *Alternatively, you can fry these in oil for a few minutes on each side to achieve a crispier result, compared to baking.
