BAKED FISH FILLETS
Seasoned with garlic, onion and citrus, these baked fish fillets are moist and tasty, and they look especially pretty on a colorful bed of shredded carrots.

- In a nonstick skillet coated with cooking spray, saute onion and garlic until tender; remove from the heat. Stir in parsley and orange zest. , Place halibut in an 11x7-in. baking dish coated with cooking spray. Top with onion mixture. Combine orange and lemon juices; pour over fish. Sprinkle with salt and lemon-pepper. Cover and bake at 400° for 15-20 minutes or until fish flakes easily with a fork.

BAKED FISH FILLETS PIQUANT
My mother found this in our local newspaper when I was little. She called it "drunk fish". It is really delicious.

Steps:
- Marinate fish fillets for 1 hours in wine.
- Drain fillets on paper towels.
- Dip both sides of fish in crumbs.
- Arrange in greased shallow baking dish.
- Mix Mayonnaise, onion, sour cream, and spread evenly over fish.
- Cover with thin layer of crumbs.
- Dust with paprika.
- Bake at 500 degrees F for 10 minutes or until fish flakes.

BAKED GEFILTE FISH
Gefilte Fish is generally made with a "white" fish, and you can use different ones in this recipe. It's totally up to you which ones you use here. I really like this recipe, but not the kind you get in a jar, it's much better to make your own.

Steps:
- 1. Preheat oven to 350'F.
- 2. Lightly oil a 9x5" metal loaf pan Line the bottom with lightly oiled wax paper.
- 3. In your food processor, with the metal blade, add the onion and chop with a few pulses off and on. Saute the onion in the light oil, then cool in another bowl.
- 4. Add the carrots and chop this mixture fine. Return the cooled onion to the food processor bowl and add the rest of the ingredients pulsing twice, then turn off, pulse twice again using this method until you have a meat loaf type of consistency.
- 5. Pour into your prepared loaf pan. Bake for 1 hour 15 minutes then move to a wire rack and cool for 10 minutes.
- 6. Place a knife between the fish and the loaf pan and slide it around to loosen the fish, then invert onto a dish and continue to cool.
- 7. Cover and refrigerate or wrap well in tin foil and then in plastic wrap and freeze.
- 8. This makes, 10 servings, or 20 hors d'oevres. This is good served with beet horse radish for luncheon. It is best when you make it 2 or 3 days ahead. That gives the flavours a chance to marry better.

QUICK BAKED FISH FILLETS
I came up with this recipe when I wanted to use up a box of stuffing mix with some fish, and didn't want to add a bunch of spices. This is so delicious, and is wonderful for company.

Steps:
- Mix bread crumbs and spices from stuffing mix in one bowl.
- Mix egg and milk together in separate bowl.
- Add to bread crumb mixture red pepper flakes and cheese.
- Dip fish fillets in milk and egg mixture, then in stuffing mix.
- Place in lightly greased 9x13.
- Sprinkle the leftover stuffing mix on top of fish, and drizzle with 1/2 c butter.
- Bake 15 minutes at 400°F.

- If fish is frozen, thaw according to directions. Dry fish between paper towels.
- Dip fish into french dressing.
- Heat butter or use non stick cooking spray and add coated fish sprinkling onions over top, cooking over medium to medium low heat for 8 minutes on each side turning only once. Serve.
