Baked Feta Cheese With Oregano image

A simple and tasty Greek appetizer. Serve with crackers or pita wedges. Also good served with toasted pinenuts and kalamata olives.

8 ounces feta cheese
oregano, to taste (fresh or dried)
olive oil, to taste
aluminum foil

Steps:

  • Cut feta into bite sized pieces.
  • Cut pieces of aluminium foil approximately 2x2inches in size.
  • Place a piece of feta cheese (not too thick) on each piece of foil.
  • Dredge oregano over the feta cheese, add some drops of olive oil (to taste).
  • Fold the aluminium sides of the aluminum up to enclose the cheese.
  • Bake in preheated oven for 15-20 minutes.
  • Serve hot.

The baked tomatoes burst and give this sauce an awesome flavor and not to mention this is one of the easiest recipes you'll ever make.

cooking spray
1 pint cherry tomatoes
½ medium onion, diced
3 large cloves garlic, minced
¼ cup olive oil
salt and freshly ground black pepper to taste
1 (8 ounce) package feta cheese
1 (8 ounce) package farfalle (bow-tie) pasta
½ cup heavy cream
2 tablespoons chopped fresh basil

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a casserole dish with cooking spray.
  • Place cherry tomatoes, onion, and garlic in the prepared dish. Drizzle olive oil over top and season with salt and pepper; toss to coat. Set feta block in the center of the dish and turn over to coat with olive oil and spices.
  • Bake in the preheated oven until tomatoes soften and feta is starting to brown, about 35 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  • Remove casserole dish from the oven and stir in cream, basil, and pasta. Keep stirring until pasta and feta are well mixed with the sauce. Serve immediately.

We went to the Greek Island of Kos and had this as a starter in a restaurant - we loved it! When we got home I had a go and made it myself. It can be served as a side dish too.

1 red sweet bell pepper
10 ml olive oil
20 g unsalted butter
400 g feta cheese
2 large onions
3 tomatoes
3 garlic cloves
50 g fresh parmesan cheese
paprika

Steps:

  • Preheat the oven to 220°C/425°F/Gas Mark 7
  • You will need two individual serving dishes that can go into the oven.
  • De-seed and cut the bell pepper length ways into 3 cm strips.
  • Brush the pepper slices in a little oil and place on a preheated non stick baking tray and roast for about 20 minutes. Remove from the oven.
  • Char the skin of the pepper slightly with a cooks blow torch if you think the skin isn't looking nice and roasted. Put the peppers to one side.
  • Now, in a saucepan, melt the butter and the olive oil.
  • Slice the onion thinly and finely chop the garlic. Add the onion and garlic to the saucepan. Over a low heat, cook until soft but not coloured.
  • Cut the feta cheese into 2cm cubes.
  • Using individual serving dishes, layer the onions, with the thinly sliced tomatoes and the roasted red pepper slices.
  • Top with the cubed feta cheese. Finish by sprinkling with the grated parmesan cheese. Sprinkle a pinch of paprika on top of each dish.
  • Cover with aluminium foil (trying not to touch the cheese) and bake in the oven for about 15 minutes. Uncover and bake for another 5 to 10 minutes, or until the feta starts to get a nice colour.
  • Take care not to cook too much as it looks better if the feta stays in cubes.
  • Serve with nice fresh crusty bread.

2 garlic cloves, sliced
chili flakes, 1 big pinch
2 (400 g) cans plum tomatoes, drained
fresh oregano leaves, 1 small handful chopped
2 (200 g) blocks feta cheese, broken up into large chunks

Steps:

  • Heat 3 tbsp oil in a pan, add the garlic and cook for a minute.
  • Add the chilli and tomatoes and simmer for 25 minutes until thickened. Season and stir in the oregano.
  • Heat the oven to 200C/fan 180C/gas 6.
  • Put the feta in an ovenproof dish, cover with sauce and bake for 20 minutes before serving.
