GRANDMA'S BAKED CORN



Grandma's Baked Corn image

Holidays or family gatherings are never the same without grandma's baked corn. She is gone now, so I treasure this recipe. Prep time is apporoximate. I'm not sure of the servings. We were a family of 6, but no matter how much she made, we never had any left over.

Number Of Ingredients 8

1 1/2 quarts frozen fresh corn, thawed
2 large eggs, slightly beaten
3 tablespoons flour
1 1/2 cups milk
1/2 cup sugar
1 1/2 teaspoons salt
2 tablespoons butter
crushed cracker, for the top (I use Ritz or saltine)

Steps:

  • Mix together all ingredients except crackers and pour into a Pyrex, or other glass baking dish.
  • Sprinkle with crushed cracker crumbs.
  • Bake at 350 for 1 hour or until firm.
  • Do not over cook or it will be dry.

1 (15.25 ounce) can whole kernel corn
1 (14.75 ounce) can cream-style corn
½ cup sour cream
1 cup butter or margarine, melted
2 eggs
1 (12 ounce) package corn muffin mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine the whole-kernel corn, cream-style corn, sour cream, melted butter or margarine, beaten eggs and corn muffin mix. Mix well and pour into one 9x13 inch baking pan.
  • Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes.

Learned from my godmother who was a chef, this recipe brings back a special Southern nostalgia. Simple yet flavorful, a wonderful side dish for any meal. Play with the spice and sugar measurements to suit your own taste.

2 eggs
2 tablespoons milk
2 (14.75 ounce) cans creamed corn
2 tablespoons butter, diced
1 tablespoon all-purpose flour
1 tablespoon white sugar
½ teaspoon black pepper
½ teaspoon celery salt
½ teaspoon onion powder
¼ teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl beat eggs with milk. Blend in the corn and butter. Stir in flour, sugar, black pepper, celery salt, onion powder and garlic powder. Transfer to a glass pie plate.
  • Bake in preheated oven for 45 minutes to 1 hour, or until top is golden and bubbly.
  • Allow to cool for 10 minutes before serving.

If you like sweet cornbread, this is the recipe for you! My mom made this for me as a child, and now it's my family's favorite.

1 cup all-purpose flour
1 cup yellow cornmeal
⅔ cup white sugar
1 teaspoon salt
3 ½ teaspoons baking powder
1 egg
1 cup milk
⅓ cup vegetable oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray or lightly grease a 9 inch round cake pan.
  • In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and vegetable oil until well combined. Pour batter into prepared pan.
  • Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

I got this from my sister, who makes it for every Thanksgiving. I like it a lot better than the recipes using Bisquick or corn muffin mix. Tip: thaw the corn in a colander in the sink and you won't have to drain it afterwards!

2 cups frozen corn, thawed (pour off excess water)
2 tablespoons shortening
1 1/2 tablespoons flour
1 cup milk
1 tablespoon sugar
1 teaspoon salt
1/8 teaspoon pepper
2 eggs, beaten
1/2 cup bread (optional) or 1/2 cup cracker crumb, mixed with melted butter (optional)

Steps:

  • Melt shortening and then add the flour.
  • Add milk gradually and bring to a boil, stirring constantly.
  • Add corn, sugar, salt and pepper and heat thoroughly.
  • Remove from heat and add beaten eggs.
  • Pour into greased baking dish, sprinkle with buttered crumbs if desired.
  • Bake at 350°F for 35 minutes or until firm.
