BAKED APPLES WITH APRICOTS AND CASHEWS
Created for RSC #6. We love baked apples in our family, and are always on the lookout for interesting fillings.

Steps:
- Preheat the oven to 375 degrees F
- Partially peel 8 apples, leaving the bottom half intact
- Remove the core (I use a melon baller)
- Cut a thin slice off the bottom of the apple if necessary to make it stand upright
- Place the apples in a baking dish
- Peel the 9th apple, cut it into 1/2 inch dice
- Combine the apple dice with the applesauce, raisins, apricots, cashews, 1/3 cup sugar, lemon juice and 1/4 teaspoon cinnamon
- Toss to combine
- Combine the remaining sugar and cinnamon in a small bowl
- Fill the apples with the stuffing
- Place 1/2 teaspoon of butter on top of each apple
- Sprinkle each apple with some of the cinnamon/sugar mixture
- Add white wine to the baking dish to the depth of 1/2 inch
- Bake for 1 hour or until tender, basting the apples occasionally with the pan juices
- Add water (or more wine) if neccesary
- Serve warm or at room temperature

BAKED APPLES RECIPE (TWO WAYS)
You can use this recipe to make stuffed baked apples with my delicious cinnamon and brown sugar mixture and nuts of your choice, or you can make baked sliced apples, tossed with the same delicious brown sugar mixture. Either way, serve your baked apples warm. This recipe is vegan and gluten free, but if you like, you can serve the cooked apples with a good scoop of your favorite ice cream!

- Heat the oven. Preheat the oven to 375 degrees F and adjust a rack in the center
- Make the cinnamon and brown sugar mixture. In a small bowl, combine the sugar, nuts, raisins or dried fruit of your choice. Add the cinnamon and cardamom. Mix well.

SIMPLE BAKED APPLES
This is a family standard. We have it at least once a week during the winter. The spices, nuts and raisins can be interchanged or omitted depending upon your tastes. This also serves as a great breakfast, side dish, or dessert.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish, or coat with non-stick cooking spray.
- Place apples in a large bowl. In a small bowl, mix together sugar, flour, cinnamon, nutmeg and cloves. Stir spice mixture into apples until evenly distributed. Fold in raisins and walnuts. Spoon into prepared dish. Pour milk evenly over apple mixture.
- Bake in preheated oven for 45 to 60 minutes, or until soft and bubbly. Allow to cool slightly before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter. Place in a shallow baking dish and sprinkle with cinnamon.
- Bake in preheated oven for 15 minutes, until sugar begins to caramelize and apples are tender.

BAKED APPLES

- Preheat the oven to 400 degrees F.
- Slice off about 1/4-inch of the top of each apple. (The apple tops are perfect for snacking.) Scoop out the seeds and core of the apple with a melon-baller to make a pocket. Peel off about a 1/2-inch band of the apple's skin along the upper half of the apple with a vegetable peeler. Brush the peeled part and the interior of the apple with lemon juice.
- In a small mixing bowl, combine the butter, lemon zest, and sugar. Add the currants and nuts. Place some of the butter mixture and a cinnamon stick in each of the apples. Place the apples in an ovenproof baking dish just large enough to hold the apples upright. Pour in the cider and rum, bake until the apple is tender, about 30 minutes. Baste the apples with the cider/rum mixture with a bulb baster, 2 or 3 times, during baking.
- Serve warm or at room temperature with softly whipped cream or vanilla or cinnamon ice cream.
- Serving suggestions: Whipped cream, or vanilla or cinnamon ice cream.
