OLD FASHIONED BAKED BEANS
Comfort food at its finest! This has been a staple in Nova Scotia homes for generations. Serve with brown bread and butter, and a good cup of tea! Prep time includes soaking the beans overnight.

Steps:
- Soak beans overnight, well covered with cold water.
- Pour off soaking water and pick over beans to remove any bad ones, or debris.
- Put beans in a pot.
- Cover with fresh cold water and add 1 tsp. baking soda.
- Bring to a boil and cook until skins of beans crack when you take one out on a spoon and blow on it.
- Cut onion in quarters and put in bottom of a bean crock or large casserole.
- Add the partially cooked beans.
- Put cut up salt pork on top.
- (Some people use the salt pork fat. I don't like fat, so I prefer to use the salt pork meat.) Combine brown sugar, molasses, mustard and salt with 1 1/2 cups boiling water.
- Pour over the beans.
- Add more boiling water, if needed, to come just to the top of the beans.
- Also, if needed during baking tme, add more boiling water.
- Bake, covered, at 300 degrees F for 6 hours, or until beans are tender.
BEAN-HOLE BAKED BEANS
All over Maine in the summer time, there are signs for Bean-hole Beans Suppers and Baked Beans Community Dinners. It all starts with local beans! Marfax beans cooked in molasses make wonderful baked beans. In this recipe, the beans hold thier shape, and the flavor shines through. Traditionally Bean-hole Beans are baked in a covered pot several inches deep in the ground, on top of a bed of embers for the whole day. Recipes vary, calling for molasses, brown sugar, maple syrup or a combination of sweeteners. This recipe is lightly sweet, using both maple and molasses as a nod to the history. You can increase the molasses to half a cup, if you like that sweet, tangy flavor. The beans are soaked and then parboiled, to cut down the cooking time and adjust for a home oven version. The method in this recipe was inspired by old advertisement pictures from 1929 ads that ran in newspapers around the country, showing the layering of the ingredients! Use Marfax (the classic baked-bean bean), Yellow Eye, Navy, Pinto beans - or a mixture of dry beans. Double the recipe, as it keeps well and can be frozen. This recipe can be made in the slow cooker set on low for 8 hours.

Steps:
- Soak the beans overnight in cold water.
- In the morning, drain the water.
- Preheat the oven to 300°F.
- In a heavy bottomed pot, bring the beans to a boil and let them simmer for 15 minutes. Drain the beans in a colander.
- In an oven safe pot, like a dutch oven or bean pot, layer the ingredients: half of the chopped onions, half of the parboiled beans, another layer of onions, the strips of pork, followed by the mustard and the rest of the beans. Drizzle the molasses and maple syrup on top. Add salt and pepper to taste. Add extra slices of onions on top if desired.
- Top with boiling water until beans are just covered.

- Soak beans overnight, then drain and cover with water, boil for 30 minutes. Drain, add to slow cooker with these ingredients and cover with water. Cook on high about 7 hours.
MOLASSES BAKED BEANS WITH SALT PORK
Steps:
- Gather the ingredients.
- Rinse the beans and pick them over. Place in a large bowl; add water to more than cover the beans (beans will expand).
- Let beans stand overnight. Drain beans.
- Combine beans and onion in a large saucepan; add water to cover and heat to boiling.
- Cover and simmer for about 45 minutes or until skins begin to burst when you scoop a few out in a spoon and blow on them.
- Drain liquid into a small bowl and reserve for sauce and cooking.
- Measure one cup of the bean liquid into a bowl; add molasses, mustard, brown sugar, and salt. Stir well.
- In a 2-quart bean pot or baking dish, layer half of the salt pork and all of the beans.
- Pour the molasses mixture over beans; add just enough more reserved bean liquid to cover the beans. Top with remaining salt pork, pressing pieces down into the liquid. Keep extra reserved liquid refrigerated for use during baking.
- Bake the beans covered at 300 F for 4 hours, checking occasionally. If beans seem too dry, add more reserved liquid. Uncover and bake for about 1 hour longer or until the baked beans are tender.

- Sort the yellow eye beans, removing any broken beans, stones, and dirt clods. Put the beans in a strainer and rinse under running water.
- Put the beans in the pressure cooker, sprinkle with the salt, and set the onion and garlic on top. Pour in the 6 cups of water, stir, and then lock the pressure cooker lid.
