SPINACH PESTO PASTA BAKE RECIPE BY TASTY

Steps:
- Preheat oven to 400°F (200°C).
- In a blender or food processor, add the spinach, basil, pine nuts, parmesan, garlic, salt, lemon juice, and olive oil.
- Blend until you reach a creamy consistency. Set aside.
- Add the pasta to a large bowl then add the tomatoes. Pour the pesto onto the pasta and mix well to combine.
- Transfer the mixture to a baking dish and top with mozzarella.
- Cover with foil and bake for 10-15 minutes.
- Carefully remove and allow to cool for 5 minutes.
- Enjoy!

TURKEY BAKE WITH WHOLE WHEAT PASTA
My husband and I LOVE pasta, but with our new diet and exercise plan, pasta is not our friend, so here's a way to make it a little easier for us to enjoy our faves!

- Preheat an oven to 300 degrees F (150 degrees C).
- Stir the ricotta cheese, mozzarella cheese, garlic, salt, and pepper in a bowl; set aside on counter to allow to come to room temperature.
- Bring a pot of water to a boil; cook the penne in the boiling water until cooked through yet firm to the bite, about 11 minutes. Drain and transfer to a large mixing bowl.
- While the pasta cooks, place a skillet over medium heat. Crumble the turkey into the skillet; cook and stir until the turkey is completely browned. Drain and add to the pasta.
- Spread 2 tablespoons of the spaghetti sauce into the bottom of a 13x9-inch baking dish; stir the rest of the spaghetti sauce into the pasta and turkey mixture. Spoon about half of the pasta mixture into the baking dish; top with the cheese mixture and spread into an even layer. Spread the remaining pasta mixture over the cheese layer. Cover with aluminum foil if desired.
- Bake in the preheated oven until slightly brown on top, about 30 minutes.

BAKED WHOLE WHEAT PASTA WITH SPINACH AND MOZZARELLA
A fresh, light, dish. I am sure you could use regular pasta, but the whole wheat pasta with fresh mozzarella (not pre-shredded) is really what makes this extra good. Baked with a golden brown crust and gooey cheese. Start dinner with a bowl of tomato soup (your favorite recipe) and a toasted baguette with pesto and parmesan. And then enjoy the main course.

Steps:
- Almonds -- In a medium dry saute pan on medium high heat, add the almonds and cook a couple of minutes until they get golden brown. Keep an eye of them, they do not take long.
- Fresh Bread Crumbs -- If you are using dry bread crumbs, skip this step.
- Chop up the bread fairly fine. Then in that same saute pan you used to toast your almonds in, bring to medium high heat and add 1 teaspoon of the olive oil. Toss in the bread crumbs, seasoning and toast until golden brown. They only take 1-2 minutes and stir often.
- Pasta -- Cook the pasta according to package direction in salted boiling water. Drain well, return to the pot and toss with the olive oil and set to the side off the heat. As the pasta cooks, saute your vegetables.
- Vegetables -- Once again, use that same saute pan and add 1 tablespoon of the olive oil and heat to medium medium/high heat. Add the garlic, onion and little salt and pepper and saute 2-3 minutes, then toss in the spinach and saute just a few seconds until the spinach is slightly wilted. Don't cook more than just a few seconds. Remove from the heat and stir in 1/2 of the lemon zest and 1 cup of the almonds. Add to the pasta along with the chicken broth. Check for seasoning, salt and pepper. Personally, I like to add some extra pepper.
- Bake -- In a 13x9 or similar size baking dish, sprayed with Pam or any non-stick spray, add the remaining lemon zest. Then add 1/2 of the pasta, 1/2 the cheese; then the rest of the pasta, and the rest of the cheese. Sprinkle with the almonds, and then top with the bread crumbs and cover with foil and bake in a 375 degree oven for about 20 minutes. Remove the foil and bake another 10 minutes until the bread crumbs get golden brown.
- Serve -- ENJOY! I like to keep it a bit healthy and serve with a bowl of tomato soup and a baguette with melted cheese.
INSTANT POT BAKED ZITI
Steps:
- Using the saute button, when hot add the oil and garlic; stir 1 minute, or until golden.
- Add water and salt to the pot to deglaze, making sure the garlic is not stuck to the bottom of the pot.
- Add spinach and pasta and stir.
- Pour the marinara sauce evenly over the uncooked pasta, making sure it's covering all the pasta. Do not stir.
- Cover and cook high pressure 7 minutes.
- Quick release, then open the lid, stir the pasta, dollop in the ricotta, top with Pecorino and the mozzarella.
- Cover the lid 3 to 4 minutes, until the cheese melts.

- Slice the zucchini, tomato, mushrooms, and mozzarella and set it all aside. Dice the onion and chop garlic. Place onion and garlic in a frying pan with some olive oil and sauté until golden. - 1. Turn the oven on to 400 degrees Fahrenheit. Bring a large pot of water to boil. Add pasta and a big pinch of salt, and cook according to package directions, until al dente. Drain pasta and set aside.
- 2. While water boils/pasta cooks, heat 2 Tablespoons of olive oil in a large skillet or dutch oven over medium heat (if you have one that's oven-proof, you can bake the finished dish right in the same skilled you use to make it in!). Add artichoke hearts and sautee for 5-10 minutes, or until golden and fully defrosted. Season with a pinch of salt and pepper and break up the artichokes with your spatula/spoon to get them into slightly smaller chunks. Remove artichokes from the pan and set aside.
- 3. Put the remaining olive oil in the pan with the minced garlic and flour, and stir for about 30 seconds before adding the broth and whisking to remove any lumps of flour. Turn heat to high and, once boiling, return heat to medium and stir in the salt, pepper, crushed red pepper flakes, and frozen spinach (no need to squeeze out the liquid, but it helps if you break it up in the bag so it's not one giant lump, before adding it to the pan). Let cook for a minute or two, until spinach is defrosted.
- 4. Turn off the heat and add half of the shredded mozzarella and all of the parmesan to the saucy spinach mixture. Add the drained pasta and reserved artichokes, and stir everything together. If you used an oven-safe pan, top the pasta with the remaining mozzarella and put the pan in the oven to bake for 15 minutes, or until bubbly and golden. If your pan isn't oven-safe, pour the contents of the pan into a large casserole dish, sprinkle with mozzarella, and bake. In either case, you may need to turn the oven to BROIL in the last few minutes of baking for an extra golden top and crispy pasta edges, if you're interested in either of those things.
