COCONUT-POACHED FISH WITH BOK CHOY
This one pot, Thai-influenced dish couldn't be easier to assemble, and its beautiful presentation makes it look like you spent a lot longer on dinner than you actually did. The poaching liquid does double duty by gently cooking the fish and wilting the bok choy. If bok choy is unavailable, another sturdy green, like kale or Napa cabbage, can be substituted. Serve with steamed jasmine rice to soak up some of the fragrant coconut milk broth.

Steps:
- Season fish well with salt. In a large sauté pan, heat oil over medium heat. Add shallot, garlic, ginger and chile, and cook, stirring often until they become translucent, about 2 minutes. Season with salt.
- Add coconut milk, fish sauce and brown sugar, and whisk together until combined and sugar dissolves. Bring mixture to a gentle simmer. Add cod fillets and turn the heat down to low. Cover and cook until cod is just cooked through and opaque, about 6 to 8 minutes. Carefully remove the fish and plate in bowls.
- Add bok choy to the coconut milk broth and turn heat to medium-low. Cook bok choy until leaves are wilted and stems are tender, about 1 to 2 minutes.
- Divide bok choy evenly alongside the fish and ladle the coconut milk broth over each portion. Top with cilantro, scallions and a good squeeze of lime, and serve with remaining wedges on the side. Garnish with flaky salt, if desired.

BAKED FLOUNDER WITH HERBED MAYO AND VERMOUTH
From an old cookbook submitted by someone named Brewster D. Dogget of Wiscasset, Maine. I had cut this out of the book but haven't made it yet. I make a similar fish with mayo that my mother in law gave me but this is a little different with the vermouth. I broil my fish at the end for a brief time until it just starts to brown. Hope you like this.

- Position a rack in the center of the oven and preheat to 425 degrees F. Line a rimmed baking sheet with parchment paper. Lay the asparagus in the center of the prepared baking sheet, drizzle with 1 tablespoon olive oil and toss with 1/4 teaspoon salt and 1/8 teaspoon pepper. Roast until the asparagus just begins to change color, 5 minutes.

Drizzle with the remaining 1 tablespoon of olive oil and sprinkle with the grated ginger, 1/4 teaspoon salt and 1/8 teaspoon black pepper; toss to coat. Place the salmon fillets to the right of the asparagus, spacing them evenly apart. Brush with hoisin.
- Roast until the bok choy is tender and the leaves begin to crisp, the asparagus is tender, and the salmon is cooked through yet still moist, about 12 minutes more. Divide salmon and vegetables between two plates and top with sliced scallions.
BAKED WHITING WITH BOK CHOY AND VERMOUTH
Whiting is a delicate and small ocean-going fish, with a white flakey consistency upon being cooked. It has more flavor than flounder, but is by no means a "heavy-tasting" fish. When I've found them locally, they're usually sold whole. You can get your fishmonger to de-gut and clean them, if you'd rather not do this yourself. I personally prefer the sesame oil to the canola oil, but tastes vary.

Steps:
- Preheat the oven to 450°F.
- 1. Whisk together the first 6 ingredients in a large bowl.
- 2. Spread a rimmed (18×13-inch) half sheet pan with the tablespoon of olive oil.

- 4. Next, toss the asparagus in the glaze and arrange in one even layer in another corner of the baking sheet.
- 5. Finally, toss the bok choy with the remaining glaze and arrange in a pile in the open space on the baking sheet (don't worry about piling it up a little-it will help them steam and cook through).
- 6. Roast in the oven for 12 to 15 minutes, or until the fish is firm to the touch (if you'd like a little more color on the salmon, broil it for 2 minutes at this point).
- 7. Remove from the oven, garnish with sliced scallions and sesame seeds, and serve.
