- Preheat oven to 325°. In a large skillet, saute onions in butter until tender and liquid has evaporated. Place half the onions in a greased 2-qt. baking dish; sprinkle with half the cracker crumbs and cheeses. Repeat layers., Bake, uncovered, 20-25 minutes or until golden brown.

Roasted in the oven or on the grill, these onions are simple and tasty. They taste like French onion soup, and smell great. In college I used to put it on the top of my gas stove! Still delicious just the same. Very very easy and loads of flavor.

- Preheat oven to 400 degrees F (200 degrees C).
- Peel and core onions, then slice halfway through. Place onions on sections of aluminum foil large enough to wrap them completely. Place a bouillon cube in the center of each onion; place pat of butter on top. Season with salt, pepper, and paprika. Wrap the onions in foil.
- Roast in preheated oven for 15 minutes.

- Quarter onions halfway through and open slightly. Place each on a 18x12-in. piece of heavy-duty foil. Place 2 teaspoons butter in center of each onion; sprinkle with salt, pepper and, if desired, garlic salt. Fold foil to seal tightly. Bake at 350° until onions are tender, 50-60 minutes. Open foil carefully to allow steam to escape.

- 1. Prepare a fire in a charcoal grill. Trim a slice from the top of each Vidalia Onion, and peel the Vidalia Onion without cutting off the root end. With a potato peeler, cut a small cone-shaped section from the center of the Vidalia Onion. Cut the Vidalia Onion into quarters from the top down, stopping within a half inch of the root end. Place a bouillon cube in the center, slip slivers of butter in between the sections, and sprinkle with pepper. Wrap each Vidalia Onion in a double thickness of heavy-duty foil. Place the Vidalia Onions directly onto the hot coals and cook for 45 minutes, turning every so often. Or, bake the foil-wrapped Vidalia Onions in a 350°F oven for about 45 minutes. Serves one onion per person.
- 2. Or you can prepare onions and wrap in Saran Wrap and put in microwave for 19 minutes.
BAKED VIDALIA ONIONS
Sweet Vidalia onions, stuffed with garlic and butter and drizzled with balsamic vinegar, wrapped in bacon and placed in individual packets to be cooked on the grill or oven.

- If preparing in the oven, preheat oven to 350 degree F.
- Trim and peel the onion but leave the root intact. Cut a very thin sliver off of the root end if you need to level the onion. Cut a 1-inch core out of the top of the onion; reserve scraps for another use.
- Peel the garlic and cut into slivers; stuff into the onion.
- Place onion onto a square of heavy duty aluminum foil large enough to wrap the onion and enclose the top.
- Drizzle onion with the balsamic vinegar, place the butter into the center of onion, and season lightly with salt, pepper and Cajun seasoning.
- Wrap onion with one slice of bacon, then the other, securing with a toothpick if needed. Seal foil tightly around the onion.
- Place onto a hot grill or bake on a tray in a preheated 350 degree F oven for 1 hour.
- Carefully open the tops of the packets and return to the oven for 20 minutes, to crisp the bacon.
- Serve as is in the packets, one per person, or use a spatula to remove onion to a serving platter. Cut larger onions into quarters. Pour juices over the top and serve.

- Preheat your oven to 350°F. Peel your onion, leaving the root intact. If your onion sits level, you can leave it alone. If not, cut a thin slice off the root to create a flat bottom.
- Use a paring knife to cut a 1 inch deep cone into the top of the onion.
- Insert a vegetable, chicken or beef bouillon cube into the hole.
- Fill the rest of the hole with butter, about 1-2 tablespoons. Season with salt and pepper.

- Get the biggest Vidalias you can find. Peel and cut a thin slice off the top and bottom of the onion so that it sits flat in a casserole dish. Take out a little of the core and cut a bit X in the top of the onion. Place each onion on a large square of aluminum foil.
- Top with pat of butter, salt, pepper and Worcestershire sauce, to taste. Place in dish and bake at 400 degrees for 45 minutes to an hour, or until tender (check on these; you don't want it overcooked and too soft).
- Variation: Prepare onions as above, but instead of Worcestershire sauce, pour on about 2 Tablespoons of Kahlua before baking. It makes them nice and sweet. You can also put these on a gas grill or nestle them right down into the charcoal (use heavy-duty aluminum foil).

- Preheat oven to 425 degrees F.
- With a sharp knife, cut out a 1 inch in diameter by ¾ inch deep cavity in top of onions, reserving scraps.
- Season each onion.
- Combine butter, Worcestershire Sauce, cumin and sugar.
- Fill cavities of onion with the butter mixture.
- Arrange onions in baking dish, add broth, wine and scraps to dish and bake, basting occasionally, for 45 minutes to 1 hour, or until very tender.

- Butter a 9x13 baking dish. Preheat oven to 350 degrees. Melt 3 tablespoons butter in saucepan and add mushrooms. Sprinkle with flour. Cook over medium heat, stirring occasionally, about 8 minutes. Add vinegar. Slowly stir in cream or half and half. Cook and stir until mixture thickens slightly. Add pepper. Set aside. Saute onion rings with remaining butter in a large skillet until slightly wilted, 10-12 minutes. Place in baking dish and top with grated Swiss cheese. Top with mushroom mixture. Butter bread on both sides and arrange over all. Bake 30 minutes or until bubbly and bread is nicely browned.

- Line a baking sheet with foil. Trim the stalk ends from the onions, cutting crosswise about 4 - 6" above the bulbs. Shave the root ends from the onions and cut in half lengthwise. Toss the onions with the oil and hot sauce and lay out on the baking sheet. Sprinkle with salt. Roast in a preheated 500º oven until onions are brown and tender, turning once, about 15 minutes. Melt butter in heavy saucepan over medium-high heat. Add sugar and stir until it dissolves. Remove from heat. Add vinegar. Return to heat. Simmer until mixture thickens slightly, about 2 minutes. Drizzle glaze over the onions before serving.
