TURKEY SPINACH MEATBALLS



Turkey Spinach Meatballs image

These tender-baked turkey and spinach meatballs are packed with veggies and protein! Enjoy them over whole grain pasta, zucchini noodles or a bed of spagehtti squash. I love adding them to my weekend meal prep, so I have them on hand for easy weeknight meals.

2 pounds ground turkey ((I use one extra lean and one regular))
2/3 cup finley diced onion, (about half of a small onion)
8 ounces cremini mushrooms, (minced)
10 ounces frozen spinach, (defrosted and strained of excess water)
1/2 cup Romano cheese
1/2 cup panko bread crumbs
1 egg, (beaten)
2 egg whites, (1/4 cup)
1 teaspoon grated nutmeg
1.5 teaspoon kosher salt
1 teaspoon black pepper
4 cups tomato sauce*

Steps:

  • Preheat oven to 400ºF and line two rimmed baking sheets with parchement paper (or spray with cooking spray).
  • Add ground turkey to a large bowl along with the onions, mushrooms, spinach, Romano cheese, panko breadcrumbs, egg, egg whites, nutmeg, salt and pepper. Use your hands to gently combine all of the ingredients together.
  • Scoop a heaping tablespoon of the mixture and roll into a ball. If the mixture is very sticky, wet your hands to make this process easier.
  • Place the meatball on the prepared baking sheet and repeat until you have used all of the meat. You should have 35-40 meatballs when you are done.
  • Bake for 20 minutes or untl the internal tempertaure of the meatballs reaches 165ºF.
  • *OPTIONAL: heat tomato sauce in a large saue pan or shallow pot (I like to use my cast-iron skillet) and transfer cooked meatballs into the sauce. Simmer for 5-10 minutes, serve and enjoy!

1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (6 ounce) container crumbled feta cheese
½ teaspoon paprika
½ teaspoon onion powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 24-cup mini muffin tin with cooking spray.
  • Mix together turkey, drained spinach, feta cheese, paprika, onion powder, salt, and pepper in a large bowl until well combined. Roll into 24 meatballs and place in the prepared muffin tin.

2 tablespoons olive oil
1 large onion, finely chopped
2 garlic cloves, finely minced
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon dried thyme leaves
1/2 teaspoon dried oregano
1/4-1/2 teaspoon crushed red pepper flakes (optional, adjust to your preference)
16 ounces frozen chopped spinach (defrosted, drained, and squeezed to remove excess water)
2 tablespoons Worcestershire sauce
1/3 cup chicken broth
2 1/2 lbs lean ground turkey
3/4 cup breadcrumbs
2 large eggs

Steps:

  • Preheat oven to 400 degrees F. Prepare a large baking sheet by spraying with cooking spray. I actually line my baking sheet with foil and then spray with cooking spray.
  • In a frying pan on medium heat, heat olive oil until hot. Then add onion, garlic, salt, pepper, thyme, oregano, and red pepper flakes. Sauté until onion is tender (about 5-6 minutes total time).
  • Add spinach to pan and combine with onion mixture. Add Worcestershire sauce and chicken broth and mix well to combine. Cook until most of the liquid has cooked out (evaporated). I don't have much liquid in my pan after I combine all these, but it will depend on how well you drained your spinach. Remove from heat and allow to cool to room temperature.
  • In a large bowl, combine the turkey, bread crumbs, and egg. Add cooled onion/spinach mixture to the meat. I do all of this step with my hands, but you can use a spoon if you prefer.
  • With your hands, create meatballs that are about 1 - 1 1/2 inches in diameter and place them on the baking sheet. Leave a little bit of space between each meatball. When you are done shaping your meatballs, you will probably have about 40-42 meatballs from this recipe. Don't need that many? Freeze them after baking or cut this recipe in half (but I say freeze them and then you've done the work only once and have a future meal).
  • Bake until your meatballs are cooked through with an internal temperature of 160 degrees F - which was about 20 minutes for my oven. Remove from oven and serve as desired.

A slice of soaked toasted bread adds moisture to the meatballs and works with an egg and some good olive oil to bind the meat mixture together. Serve these ground turkey meatballs with salad, or in my rich homemade pasta sauce over pasta or rice. Also delicious as an appetizer to feed a crowd!

2 cups baby spinach
1 slice whole wheat bread (crust removed)
1 pound ground turkey
1 yellow onion (grated)
3 garlic cloves (minced)
1/2 cup feta cheese (crumbled)
1 egg (beaten)
1/2 cup chopped fresh parsley
1 tablespoon dried crushed mint
1 tablespoon extra virgin olive oil
Kosher salt and black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Toast the bread until just brown then transfer it to a bowl and add water to cover. Allow it to soak for about 5 minutes or until very tender. Discard the water and squeeze the bread very dry and crumble it a bit with your hands.
  • In a skillet heat 1 tablespoon extra virgin olive oil. Add the spinach and cook briefly over medium heat until just wilted. Remove from the heat and let cool briefly.
  • Make the meatball mixture. In a large mixing bowl, add the ground turkey, onions, garlic, crumbled feta, egg, parsley, and mint. Add the bread and wilted spinach. Season with a big pinch of kosher salt and black pepper. Mix well to combine.
  • Form the mixture into balls (golf ball size) and arrange them on a large lightly oiled sheet pan.

  • Transfer to the top rack and turn the broiler on for just a couple of minutes or until the tops are browned.
