EASY ROASTED TURKEY LEGS

Never fight over the last drumstick again! Additional legs are an absolute Thanksgiving necessity, and also used in place of a whole turkey.

8 turkey legs
1 1/2 cups butter
5 tablespoons black pepper
7 tablespoons onion powder
5 tablespoons salt
3 (16 ounce) cartons turkey broth or 3 (16 ounce) cartons stock

Steps:

  • In a large bowl pour in all of the Turkey Broth/Stock (Could also be Chicken Stock) and marinate the uncooked Turkey Legs overnight, or at least 3 hours, in the refrigerator.
  • After 3-8 hours in the refrigerator, take a large roasting pan with a wire rack, remove the refrigerated legs from the bowl of broth---use tongs and place directly on the roasting rack/pan. Sprinkle generous amount of salt, black pepper, and onion powder on each leg. Spread foil across the top of the roasting pan to keep the legs covered while roasting in a pre-heated 350F oven.
  • Meanwhile, melt a stick of butter in a saucepan---until it's liquified.
  • 8 legs usually take about 1hour and 45 minutes to fully cook. The legs need to be turned/flipped with tongs, basted (brushed with the melted butter) and then re-seasoned with just the onion powder and black pepper--- every 20 minutes during roasting.
  • Turkey legs are usually done after insterting a meat thermometer that registers 175F in the thickest part of the leg, however, they do keep cooking even after they're removed from the oven.
  • The cooked turkey pan juices and drippings are usually used to flavor gravy and stuffing.

¼ cup salt
water to cover
2 tablespoons butter, melted

1 cup chicken broth

Steps:

  • Put turkey drumsticks in a large bowl with enough water to cover. Stir salt into water to dissolve.
  • Brine drumsticks in refrigerator for 2 hours; drain. Rinse drumsticks with clean water and pat dry.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Brush butter over drumsticks to coat; season with black pepper.
  • Pour chicken broth into a roasting pan. Lay turkey legs into the broth. Place a lid on the roasting pan.
  • Bake in the preheated oven until no longer pink at the bone and the juices run clear, 1 hour 45 minutes to 2 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).

4 medium turkey drumsticks ((bone-in skin-on, about 10 oz each))
1/4 cup butter (melted)
1 teaspoon sea salt
1/4 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon dried thyme
1 teaspoon paprika

Steps:

  • Preheat the oven to 450 degrees F. Fit a rimmed roasting pan with a roasting rack and spray the rack with avocado oil spray.
  • Pat the turkey legs dry with paper towels. Brush them all over with melted butter and rub with the seasoning mix. Place on the roasting rack and lightly spray with avocado oil.
  • Roast, uncovered, for 20 minutes, until the skin is browned.
  • Loosely cover with foil, to avoid scorching the top, and continue roasting until the juices run clear when pierced with a fork and an instant-read thermometer registers 165 degrees F (make sure it isn't touching the bone), about 30 more minutes.

4 turkey drumsticks (Note 1)
1 tablespoon vegetable oil
1 ¼ cup chicken stock (divided (Note 2))
1 onion
3 medium carrots
1 large piece of celeriac (about 7 oz/ 200 g (Note 3))
1 red bell pepper
3-4 garlic cloves
1 tablespoon tomato paste
sweet paprika powder
salt and pepper
some parsley

Steps:

  • Prepare turkey: Dry the turkey legs with kitchen paper. Sprinkle them generously with salt, pepper, and sweet paprika powder.
  • Brown: Heat the oil in a large Dutch oven or another large, heavy-bottomed ovenproof dish. Brown the turkey drumsticks on all sides, about 3 minutes on each side.
  • Simmer: Add 1 cup (250 ml) of the stock, cover the pan and simmer for 15 minutes.
  • Preheat oven: In the meantime, preheat the oven to 400 degrees Fahrenheit/ 200 degrees Celsius.
  • Prepare vegetables: Clean and chop the vegetables. Whisk the tomato paste into the remaining chicken stock. Add the vegetables and tomato paste to the pot.
  • Roast covered: Place the pot in the oven and roast for about 35-40 minutes. Baste the drumsticks with the cooking liquid twice while roasting. If necessary, add a bit more chicken stock.
  • Roast uncovered for another 10 minutes to allow the skin to get crispy.
  • Check the internal temperature with a meat thermometer; it should be 170 degrees Fahrenheit/ 77 degrees Celsius (Note 4).
  • Rest meat: Transfer meat to a large platter and let rest for about 15 minutes. In the meantime, make the gravy.
  • Remove about 1/3 of the vegetables from the pan and set them aside.
  • Blend the remaining veggies and adjust the taste with salt and pepper if necessary.
  • Return the reserved vegetables to the sauce, sprinkle with parsley, and serve.

Steps:

  • Rub the turkey with olive oil. Combine all the ingredients for the rub and then sprinkle liberally over the turkey on both sides.

  • Place the turkey leg on top, skin side down and roast for 30 minutes.

2 fat turkey legs
1/2 stick butter, softened
1/2 tsp poultry seasoning (more if you like)
salt and pepper, to taste
1 lemon or orange, zested
1/4 c chicken broth
2 stalk(s) celery, peeled and diced (optional)
2 carrots, diced (optional)

Steps:

  • 1. Rinse turkey legs and pat dry. Slip the skin of the turkey back over the leg. This is done by slipping your fingers between the skin and meat of the leg.
  • 2. Smear butter onto meat on both sides of the leg.
  • 3. Sprinkle meat with poultry seasoning, salt, and pepper.
  • 4. Secure skin back over the leg.
  • 5. Cover legs on both side with lemon or orange zest.
  • 6. Place foil in the bottom of a long rectangular pan. If you wish, dice carrots and celery and add to pan.
  • 7. Add chicken broth to pan.
  • 8. Place turkey legs in pan.
  • 9. Roast legs at 350 degrees for one hour and twenty minutes.
  • 10. CAUTION: Do not over bake and since ovens are different, start checking on the turkey leg temperature after one hour. Turkey temperature should be 175 degrees when you take it from the oven.
  • 11. When ready, take turkey legs from oven and let rest 15 minutes to redistribute the juices.
  • 12. Taste your broth. If it's to your liking, spoon on turkey legs. If not, add salt, pepper, and a little butter and warm. Then spoon over turkey legs.

2 turkey legs with thighs, bone-in skin-on (approximately 2 lbs. each)
1 tablespoon vegetable oil
1 tablespoon brown sugar
1/4 cup balsamic vinegar
1/2 tablespoon Worcestershire sauce (optional)
2 tablespoons paprika
1 tablespoon salt
1 teaspoon ground black pepper
Half medium onion, cut into 1/2-inch wide slices
2 to 3 medium carrots, sliced into 1/2-inch pieces
1 cup celery, sliced into 1/2-inch pieces
10 baby potatoes, halved

Steps:

  • In a large bowl or ziploc bag, combine turkey legs with vegetable oil, brown sugar, balsamic vinegar, Worcestershire sauce, paprika, salt and pepper. Toss to coat turkey in the marinade. If marinating in a ziploc bag, press the air out of the bag, seal tightly, and press the seasoning around the turkey legs to coat. Transfer turkey to the refrigerator and marinate for at least one hour. The longer, the better.
  • Arrange onions, carrots, celery, and potatoes on a large roasting pan and place the roasting rack over the vegetables in the pan. Place the marinated turkey legs onto the rack. Drizzle any remaining marinade over the vegetables.
  • Preheat oven to 375 F. Transfer the pan into the oven and bake for 1 to 1.5 hours (depending on the size of the turkey legs) until golden brown and the internal temperature for the turkey legs reaches 165 F.
  • Turn the broiler on high and broil the turkey legs for 3-4 minutes to achieve an extra crispy skin. Make sure to monitor the colour of the turkey skin during broiling since it can burning very quickly.
