One of the best trout recipes I've tried is simply cooking the trout in the skillet in olive oil, and then adding garlic, lemon juice, white wine, fresh parsley and butter. Gluten free, healthy, easy-to-make and delicious! Low-carb dinner rich in lean protein and omega-3 fatty acids. A family favorite! Perfect way to cook an amazing fish: trout.

1.5 pounds trout (or salmon, or arctic char - 2 large fish fillets with skin on the bottom)
2 tablespoons olive oil (more, if needed)
1 tablespoon Italian seasoning ((dried thyme, oregano, parsley, combined together))
1/4 teaspoon salt (to taste)
4 garlic cloves (diced)
3 tablespoons lemon juice (freshly squeezed)
2 tablespoons white wine
2 tablespoons butter (softened)
2 tablespoons parsley (chopped)

Steps:

  • Season the top of fish fillets with Italian herb seasoning and salt (generously). Fish fillets will have skins on the bottom - no need to season the skins.
  • In a large skillet (large enough to fit 2 fish fillets), heat 2 tablespoons of olive oil on medium heat until heated but not smoking. To the hot skillet with olive oil, add fish fillets skin side up - flesh side down. Cook the flesh side of the fish for about 3-5 minutes on medium heat, making sure the oil does not smoke, until lightly browned.
  • Flip the fillets over to the other side, skin side down (add more oil, if needed). Cook for another 2-4 minutes on medium heat (to prevent oil from burning).
  • Remove the skillet from heat, close with the lid, and let the fish sit for 5-10 minutes, covered, in the skillet, until flaky and cooked through completely.
  • After the fish is cooked through, off heat, using spatula, carefully remove fillets to the plate, separating the fish from the skin. Carefully remove or scrape the fish skin off the bottom of the pan, making sure to leave all the cooking oils in the pan.
  • Add diced garlic, lemon juice, and white wine to the same pan with oil. Cook on medium-low heat for about 1 minute, until garlic softens a bit. Remove from heat. Add 1 tablespoon of chopped parsley, and 2 tablespoons of butter, off heat, to the sauce, stirring, until the butter melts and forms a creamy mixture.
  • Add fish to the pan, spoon sauce over the fish, top the fish and sauce with the remaining 1 tablespoon of parsley, and serve.

It's special to me because we did that, together, in our kitchen: father and son time. I serve it on sauteed spinach and potatoes. It is my very own recipe.

1 lemon, zested and halved
3 (4 ounce) fillets rainbow trout
salt and ground black pepper to taste
2 tablespoons butter
2 tablespoons Dijon mustard
1 pinch dried marjoram
1 pinch dried tarragon
1 ½ tablespoons sour cream
2 teaspoons capers
1 pinch dried parsley flakes, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking dish with aluminum foil and spray with cooking spray.
  • Juice 1/2 the lemon and cut the other half into 6 thin slices. Place slices in 3 columns of 2 into the prepared baking dish.
  • Season trout with salt and pepper. Place each fillet, skin-side down, over 2 of the lemon slices in the baking dish.
  • Bake in the preheated oven until trout flakes easily with a fork, about 15 minutes.
  • Melt butter in a small saucepan over medium-high heat. Add Dijon mustard; stir. Add the lemon juice, marjoram, and tarragon. Cook and stir until flavors meld, about 2 minutes. Reduce heat to medium-low. Add sour cream and capers. Stir until sauce is smooth but capers are not yet cooked through, about 2 minutes more. Reduce heat to low and let sauce sit until trout is baked.
  • Place each piece of trout on a plate and garnish with the lemon slices. Pour sauce evenly on top. Sprinkle lemon zest and parsley over the sauce.

I love this lemon butter herb baked trout made with just a few simple fresh ingredients in less than 20 minutes. Succulent, melt-in-your-mouth and delish.

2 pounds trout fillets ((preferably 2-3 larger size fillets))
1 cup (20g) finely chopped herbs Note 1
2 tablespoon butter
2 tablespoon olive oil
1 lemon (2 tbsp lemon juice plus zest of whole lemon)
salt and pepper

Steps:

  • HEAT OVEN TO 400F/204C. Prepare a pan lined with parchment or foil sprayed with oil.
  • PREPARE TROUT FILLETS: Lay fillets on pan. Microwave butter and oil for 20-30 seconds until butter is melted. Using a sharp knife, cut slits horizontally every 2 inches on each fillet (about 3-4 slits per fillet). Stuff half of mixed herbs into slits. Sprinkle fillets with salt and pepper. Drizzle HALF of butter oil mixture (about 2 tbsp) and the lemon juice over trout .
  • BAKE TROUT: for 9-11 minutes, depending on thickness of fillets, or until cooked. Ideally, trout will be moist and warm pink - not dry, pale and flaky.
  • FINISH AND SERVE: Sprinkle remaining herbs and lemon zest over top of fillets. Drizzle on remaining 2 tbsp butter-oil mixture. Sprinkle lightly with sea salt or kosher salt. To serve: To serve without skin, slip spatula between flesh and skin, then lift up. I cut trout into portions first (just down to the skin) to make this easier. Serve immediately.

1/4 cup butter, melted

  • Preheat the oven to 375 degrees F. Line a rimmed baking sheet with aluminum foil. Place the trout fillets on the foil. Season with salt and pepper. Sprinkle the green onions and parsley over the top. Combine the melted butter, lemon juice, and garlic in a small bowl. Mix well. Place the trout in the oven. This is from a small cookbook my DM picked up at the Gilroy Garlic Festival some years ago "Totally Garlic Cookbook" by Helene Siegel and Karen Gillinham. This sure looks like a meal meant to be cooked right here in my home...some feel I use too much garlic, I say Never too much garlic.

5 garlic cloves, peeled and sliced
1/2 bunch spinach, rinsed and trimmed
salt and pepper
4 small trout, bones and scales removed
flour
2 tablespoons butter
2 tablespoons olive oil
1 lemon, cut into 4 wedges

Steps:

  • Blanch the garlic slivers in boiling water 3 minutes. Drain, rinse with cold water, and rinse again.
  • Wilt the spinach leaves in a large dry pot over high heat, turning occasionally, 3 minutes. Remove from heat, squeeze out excess water and roughly chop. Combine in small bowl with garlic slivers, salt, and pepper.
  • Preheat oven to 400 degrees F. Season inside of trout with salt and pepper. Divide spinach mixture and tuck inside fish. Tie with string around center of each to hold stuffing. Dust the outsides with flour and season with salt and pepper.
  • Melt butter and oil in 2 large skillets over high heat. Fry the fish about a minutes per side. Transfer to oven and cook 4 minutes, turning after 2 minutes. Serve hot with lemon wedges.

4 (8 -10 ounce) rainbow trout
1/4 cup butter, melted
1 teaspoon finely shredded lemon peel (set aside)
3 tablespoons lemon juice
1/4 cup finely chopped onion
1 tablespoon snipped fresh rosemary or 1 tablespoon tarragon
1/2 teaspoon salt
1/4 teaspoon black pepper
snipped fresh parsley (optional)
lemon wedge

Steps:

  • Thaw fish, if frozen. Rinse fish; pat dry with paper towels.
  • On a cutting board, spread each fish open, skin side down.
  • In a small bowl stir together melted butter and lemon juice. Set half of the butter mixture aside. Brush remaining half of the butter mixture over fish.
  • In a small bowl stir together onion, rosemary, lemon peel, salt, and pepper. Sprinkle onion mixture over fish.
  • Fold fish closed. Place fish on a greased 15x10x1-inch baking pan.
  • Bake in a 450 degree F oven for 15 minutes or until fish begins to flake when tested with a fork.
  • If desired, sprinkle fish with parsley. Serve fish with lemon wedges and reserved butter mixture.

  • Season trout with salt and pepper; dredge with flour. Heat oil in a skillet. Saute trout quickly in hot oil, browning evenly on both sides. , Remove trout to a shallow baking pan. 2 rainbow trout, weighing 2 pounds each
Salt and freshly ground pepper
2-4 tablespoons butter
2 sprigs of fresh herb fennel
Spinach-butter sauce
1 cup spinach leaves
2/3 cups heavy cream
6 tablespoons butter

Steps:

  • Preheat the oven to 375° F.
  • Clean the trout and wash well, making sure to remove the line of blood from the inside near the backbone. Dry with paper towels and season inside and out with salt and freshly ground pepper. Put a lump of butter and a sprig of fennel into the center of each trout. Take a large sheet of aluminum foil and smear a little butter on the center. Put the trout onto the buttered bit and fold over the edges into a papillote shape. Seal well to ensure that none of the juices can escape. Repeat with the other trout. Put the two foil parcels on a baking sheet, making sure they are not touching. Bake in the preheated oven for about 30 minutes.
  • Meanwhile, make the spinach-butter sauce. Remove any large stems from the spinach and wash well. Cook in 2 1/2 cups salted boiling water for 4-5 minutes or until just soft and tender. Drain, pressing out every last drop of water, then mince the spinach. Put the cream into a saucepan and simmer on low heat until reduced to about 3 tablespoons. Then, on a very low heat, whisk in the butter bit by bit as though you were making a hollandaise sauce. Stir in the spinach.
  • When the fish is cooked, open the parcels and use some of the delicious juices to thin the sauce. Put the two parcels on a hot serving dish and bring to the table. Skin the fish and lift the juicy pink flesh onto hot plates. Spoon the spinach-butter sauce over the fish and eat immediately.
