- Sprinkle fillets with seasoned salt; drizzle with lemon juice. In a large skillet, heat oil over medium-high heat. Add onion; cook and stir until tender. Add tomatoes, peppers, broth, tomato paste, garlic powder and oregano; cook and stir 2-3 minutes longer., Place fillets over tomato mixture; cook, covered, 6-8 minutes or until fish flakes easily with a fork. If desired, serve with pasta.

BAKED TILAPIA WITH TOMATOES AND POTATOES

- Preheat the oven to 400 degrees F. Toss the potatoes with 1 tablespoon olive oil, 1 teaspoon thyme, 1/4 teaspoon salt, and pepper to taste in a bowl. Coat a rimmed baking sheet with cooking spray; add the potatoes and spread in an even layer. Roast until browned and crisp, tossing halfway through, about 35 minutes.
- Meanwhile, toss the tomatoes, olives, capers and garlic with 1 teaspoon olive oil, 2 tablespoons vinegar and 1 teaspoon thyme in a bowl. Coat another baking sheet with cooking spray; add the tomato mixture and spread in an even layer. Roast until softened, 15 minutes.
- Mix the remaining 2 teaspoons olive oil and 1 teaspoon thyme, 2 tablespoons vinegar, 1/4 teaspoon salt, and pepper to taste in a bowl; brush on the fish. Place the fish on top of the roasted tomato mixture and return to the oven until just cooked through, about 10 minutes. Divide among plates and serve with the potatoes.
BAKED TILAPIA
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Coat bottom of a medium baking dish with about 1/4 cup olive oil.
- In a small bowl, blend remaining olive oil, tomato paste, garlic powder, oregano, salt and pepper.
- Arrange tilapia fillets in the prepared baking dish, skin side up. With a spatula, spread the olive oil and tomato paste mixture over the tilapia, heaping the majority in the centers of the fillets. Arrange onion and green pepper slices on and around the fillets.
- Bake in the preheated oven 15 minutes, until fish is easily flaked with a fork. Remove from heat, top each fillet with 1 tablespoon butter, and set oven to broil. Broil 5 to 7 minutes, until butter is melted and lightly brown.

- Melt 1 tbsp butter in saute pan over medium high heat.
- Season both sides of tilapia with Adobo seasoning. Cook for 2-3 minutes on each side without moving. Set aside and cover with foil to keep warm.
- Melt remaining 3 tbsp butter in pan. Add garlic and cook until fragrant, about 30 seconds. Add white wine, capers, and tomatoes. Bring to a simmer.
- Add about 1 tbsp cold water to cornstarch and mix to make a slurry. Pour into sauce mixture while stirring and simmer about 5 minutes, until thickened.
- Cook angel hair pasta according to directions. Drain.
- To save dishes, while the pasta is draining in a colander, add olive oil to the hot pasta pot, add spinach, and stir until just wilted, 1-2 minutes.
- Divide pasta, fish, and spinach between plates and spoon sauce over everything.

- Lightly oil a shallow baking dish large enough to hold the fillets in one layer.
- In a bowl stir together the oil, the thyme, the tomatoes, the olives, the red pepper flakes, the garlic, the onion, and the lime juice.
- In the prepared baking dish arrange the fillets, skin sides down, season them with salt, and spoon the tomato mixture over them.

- Preheat a grill for medium-high heat.
- Place the tilapia fillets side by side on a large piece of aluminum foil. Season each one with salt and pepper. Place one tablespoon of butter on top of each piece of fish, and sprinkle garlic, basil and tomato. Pour the wine over everything. Fold foil up around fish, and seal into a packet. Place packet on a cookie sheet for ease in transportation to and from the grill.
- Place foil packet on the preheated grill, and cook for 15 minutes, or until fish flakes easily with a fork. Open the packet carefully so as not to get burned from the steam, and serve.

SPICY BAKED TILAPIA AND TOMATOES
This is a recipe that my wife created and I simply LOVE! This has become one of our two top favorite fish recipes ever. It is a little spicy, and that can be adjusted as desired. But this one is never fishy, and is a nice blend of seafood and Mexican-style food. We always make this with frozen or fresh tilapia, but you could substitute any light, thin white fish fillet.

- Sauté the onion in olive oil until lightly brown.
- Add garlic and sauté for a minute longer, then scoop out and set aside.
- Pat fish dry, then sprinkle with lemon juice and salt (optional) on one side. Lightly sprinkle with bread crumbs on that side for a light coating.
- Place fish in the hot pan breading side down and repeat the sprinkle with lemon juice, salt, and bread crumbs for the top side.
- Fry fish over medium-high heat till done through, about 10 minutes, flipping once. remove fish and set aside in a baking dish.
- Add onions, garlic, crushed tomatoes, and Mexican tomato sauce to pan and heat over medium heat. Be sure to scrape all the leftovers from frying into the sauce by scraping/stirring.
- Pour the cooked sauce over the fish in the baking dish to cover completely and bake in the oven at 350° for about 20 minutes.

BAKED TILAPIA WITH TOMATOES AND ONIONS
Steps:
- Preheat oven to 450 degrees. Rinse off tilapia fillets and pat dry with paper towels. Season both sides of Tilapia with Old Bay, Seasoning Salt, Sea Salt, and Pepper then set aside. Lay out a sheet of aluminum foil long and wide enough for both tilapia to fit and so you can fold up the sides to prevent juices from running during baking. Drizzle olive oil on the foil along with the Lemon and Garlic Dill Sauce. Lay tilapia on top then distribute the diced tomato and onions across tilapia fillets. Fold edges of aluminum foil to create a "pocket" for the fillets and make sure its sealed. Place foil pocket in the oven and let baked for approximately 15 mins. During the 15 mins, you can also whip up a rice pilaf if you desire. After the 15 mins remove tilapia from oven and immediately serve over a bed of rice pilaf.
