Baked Tilapia With Herb Butter image

4 tablespoons unsalted butter, softened
2 tablespoons chopped fresh tarragon or basil
8 ounces sliced mixed mushrooms (about 4 cups)
4 stalks celery, sliced
1 bunch scallions, sliced
Kosher salt and freshly ground pepper
4 6-ounce tilapia fillets

Steps:

  • Preheat the oven to 400 degrees F. In a small bowl, mix the butter and tarragon until combined; set aside.
  • Lay out 4 large pieces of foil. Layer the vegetables in the center of each piece of foil, starting with the mushrooms, then the celery and scallions. Dot the vegetables with some of the herb butter (use about half) and season each portion with 1/4 teaspoon salt, and pepper to taste. Lay the tilapia fillets over the vegetables; dot with the remaining herb butter. Sprinkle each fillet with 1/4 teaspoon salt, and pepper to taste.
  • Bring the foil ends together, fold over and crimp closed on all sides to make sealed packets. Place the packets on a baking sheet and bake until the fish is cooked through but still moist, 18 to 22 minutes. Remove the packets from the oven and let sit 2 minutes before opening. Transfer the fish and vegetables to plates and drizzle with the cooking juices.

2 teaspoons roasted garlic, mashed into a paste
½ teaspoon garlic powder
½ teaspoon oregano
½ teaspoon Italian seasoning
½ teaspoon dried parsley flakes
¼ teaspoon salt
4 tilapia fillets
1 teaspoon lemon juice, or to taste

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Brush a broiler pan with olive oil.
  • Stir butter and garlic paste together in a bowl. Divide garlic mixture evenly between two bowls, reserving one bowl for serving.
  • Stir garlic powder, oregano, Italian seasoning, parsley, and salt together in a bowl.
  • Place tilapia fillets on prepared broiler pan; brush each fillet with garlic butter and sprinkle each with Italian seasoning mixture, reserving 1/2 the garlic butter in the bowl and 1/2 the Italian seasoning mixture.
  • Broil fillets in the preheated oven for 2 minutes, brush again with garlic butter, and broil for 2 more minutes. Turn fillets over. Brush with garlic butter and sprinkle with remaining Italian seasoning mixture. Broil until tilapia fillets flake easily with a fork, 3 to 5 minutes. 1 onion, chopped
¼ teaspoon cayenne pepper

Steps:

  • Rub the fish fillets with the crushed garlic, then place them in a shallow, non-reactive dish. Spoon the olive oil over the fish until they are coated. Place the onion on top of the fish. Cover the fish and refrigerate overnight to allow the fish to soak in the marinade.

1 pinch dill weed or parsley, dried
Paprika powder
Salt and pepper, to taste

Steps:

  • Preheat the oven to 350°F (180°C). Mince the garlic into fine pieces. Place the garlic in a saucepan, add butter and dillweed or parsley. Add one dash of salt, one dash of pepper and one dash of paprika powder to the saucepan. The exact amount will depend on your own preferences. Heat the saucepan over low heat until the butter is fully melted and begins to simmer. Remove the saucepan from the heat and brush some of its content over the bottom of a baking dish.
