TACO BAKE II
This is a tasty recipe that my whole family enjoys. Very easy to make!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium skillet over medium heat, brown the ground beef and drain fat. Add the diced tomatoes with green chile peppers, water, sour cream and taco seasoning mix. Let simmer for 5 to 10 minutes.
- In the bottom of a 9x13 inch baking dish, place a layer of tortilla chips. Cover with a layer of the meat mixture then a layer of cheese. Repeat this process until the last layer is cheese.
- Bake in the preheated oven for 20 minutes, or until the cheese is bubbly.

BAKED TACO CASSEROLE
This recipe came from a friend of my sisters. She came to visit and made this and I loved it! I have made this over and over and it never fails to be a great hit. I don't like onions, so I don't use onions in this recipe. However you can use them if you like when you are browning the ground beef or just put a layer on top of the beef after its in the dish. I love green peppers, and have added them on top of the ground beef, but the kids don't like it that way. So I modified it and add the peppers into the ground beef when I'm cooking it.

Steps:
- Preheat oven to 375 degrees.
- Mix the Bisquick and the water. Spread into a greased 8 x 8 baking dish.
- Brown the ground beef with the peppers, then drain. Add the taco seasoning. Set aside.
- Mix the sour cream, mayonnaise, and cheddar cheese.
- Add the ground beef to the top of the Bisquick mix.
- Top with the tomatoes.
- Then spoon the cream mixture to the top of the tomatoes and spread evenly.
- Bake for 25-30 minutes.

My preschooler doesn't eat ground beef unless it's taco flavored, so I came up with this casserole we all like. To make assembly easy, I prepare the taco meat and freeze several bags at a time. - Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir ground beef in a large skillet over medium-high heat until crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease. Stir salsa, onion, mayonnaise, chili powder, and cumin into the beef. Remove from heat.
- Spread about half the ground beef mixture into the bottom of a 2-quart casserole dish. Spread about half the tortilla chips in a layer atop the beef mixture. Layer about half of each of the Cheddar and Monterey Jack cheeses over the tortilla chip layer. Repeat layers with remaining ingredients, ending with Monterey Jack cheese. Cover dish with aluminum foil.
- Bake in preheated oven until the cheese is melted in the middle, about 30 minutes.

- Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Season beef mixture with cumin, salt, pepper, and garlic powder. Add stewed tomatoes with juice and enchilada sauce; bring to a boil. Reduce heat, cover, and simmer for 5 minutes.
- While beef mixture is simmering, preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Layer 1/2 of the tortillas with damp paper towels on a microwave-safe plate. Microwave on high until warm, 30 seconds to 1 minute. Repeat with remaining tortillas.
- Mix cottage cheese and chiles together in a small bowl. Place 1 tablespoon cottage cheese mixture in each tortilla and fold in half.
- Place 1/2 of the beef mixture in the bottom of the prepared baking dish. Top with 1/2 cup pepper Jack cheese and 1/2 cup Cheddar cheese. Place cheese-filled tacos over the cheese. Pour remaining beef mixture over the tacos. Cover with aluminum foil.
- Bake in the preheated oven until thoroughly heated, about 20 minutes. Remove and discard the foil, top with remaining pepper Jack and Cheddar, and bake until cheeses are melted, 4 to 5 minutes more.

BAKED TACO CASSEROLE
This recipe is like tacos - seasoned ground meat, cheese, lettuce, tomatoes - but instead of filling taco shells, it is baked into a casserole with a cornbread crust. So feel free to vary the ingredients here to suit your own taste in tacos. I almost always have a can of some type of beans in my pantry, and any type works well....

- 1. Preheat oven to 400°F. Prepare Jiffy cornbread mix according to package directions. Place into a greased shallow 2-quart casserole dish or 9x13" pan. Bake 15 minutes and remove from oven. Lower oven temperature to 350°F.
- 2. While cornbread is baking, brown ground beef and onions in a skillet, adding in the taco seasoning, and breaking meat up until it's very fine. Add any water called for with the taco seasoning and stir well. When the cornbread comes out of the oven, spread the seasoned meat mixture evenly over the cornbread.
- 3. Evenly distribute the black beans on top of the meat. Then top all with the 2 cups of cheese. Return casserole to oven, and continue baking about 10 minutes until cheese is melted.
- 4. Remove from oven and allow to rest 5 minutes before slicing into squares to serve. Top each serving with lettuce, tomatoes, sour cream, salsa, and green onions as desired.
