8 large sweet potatoes, peeled and cooked
1/2 cup light brown sugar
2 tablespoons orange juice
1/2 cup Amaretto
1/2 cup sugar
1/2 cup melted butter
2 teaspoons grated orange rind
1/2 teaspoon salt (optional)
1 cup miniature marshmallow

Steps:

  • Preheat oven to 350 degrees.
  • Mash the sweet potatoes in a mixing bowl until they are smooth with a mix er or potato masher.
  • Add the brown sugar, orange juice, Amaretto, sugar, butter, orange rind and salt.
  • Stir until well combined.
  • Spray a 3 quart casserole dish with nonstick cooking spray.
  • Spoon the sweet potatoes into the casserole dish.
  • Bake for 20 minutes.
  • Sprinkle the marshmallows over the top of the sweet potatoes.
  • Bake for 15 minutes or until the marshmallows are melted and lightly toasted.

2 lbs sweet potatoes
3/4 cup sugar
2/3 cup buttermilk
1/2 cup butter, softened
2 eggs
2 tablespoons Amaretto
1 1/4 teaspoons vanilla
1 teaspoon cinnamon
1 teaspoon baking soda
2/3 cup chopped pecans

Steps:

  • In a large saucepan, cover sweet potatoes with water. Boil until tender; drain.
  • Remove the skins from the sweet potatoes and arrange them in a greased 2 quart baking dish.
  • Process the sugar, buttermilk, butter, eggs, amaretto, vanilla, cinnamon, and baking soda in a blender until smooth. Stir in pecans.
  • Spoon pecan mixture over sweet potatoes. Bake at 350 degrees for 30 minutes.

It's perfect with rich holiday meats like turkey, goose, ham and other roasted pork... and it's sooooo easy. I made it for Thanksgiving; but it would be equally wonderful for Christmas, a unique addition to the holiday table!

1 (29 ounce) can sweet potatoes
1/4 cup butter
1/4 cup brown sugar
2 tablespoons orange marmalade
1/4 teaspoon salt
2 tablespoons amaretto liqueur
10 coconut macaroons (like the Archway size)
2 tablespoons butter
1 tablespoon amaretto liqueur

Steps:

  • Heat sweet potatoes in their liquid in a saucepan over medium heat until hot, then drain.
  • Mash in the butter, then add the brown sugar, marmalade, salt and Amaretto liqueur.
  • Transfer mixture into a greased 1-1/2 quart baking dish.
  • Preheat oven to 350 degrees F.
  • Chop coconut macaroons coarsely.
  • Melt butter in a small saucepan, then add macaroons and the 1 tablespoons Amaretto liqueur.
  • Stir to combine over low heat, crumbling the macaroons further.
  • Sprinkle the macaroon topping over the prepared sweet potato mixture; then bake assembled casserole until warmed through, about 30 minutes.

10 small medium yams or sweet potatoes (about 5 pounds), peeled, halved crosswise and cut into chunks
2 Tbsp tablespoon olive oil
kosher salt and freshly ground pepper
1/4 c cup of honey
1/2 tsp teaspoon ground cinnamon
1/2 tsp teaspoon vanilla extract
1/4 tsp teaspoon freshly ground nutmeg
1/4 tsp teaspoon ground cloves
CRUNCH
20 course ground gingersnap cookies
3/4 c cup light brown sugar, packed
1 stick of butter, melted
1/2 c cup all-purpose flour
1/2 c cup of roasted chopped pecans

Steps:

  • 1. For the yams: Preheat the oven to 350 degrees F. Toss the yams with the oil in a medium bowl and sprinkle with salt, pepper, honey, cinnamon, nutmeg and cloves. Toss to coat.
  • 2. Spread the yams and all the sauce evenly into a 9-by-13-inch baking dish. bake until beginning to become tender, about 30 minutes
  • 3. For the crunch: Meanwhile, pulse the gingersnaps in a food processor until they are fine crumbs with a few larger pieces. Transfer to a medium bowl and stir in the sugar, butter pecans and flour to combine. Form crumbles in several sizes using your hands and chill in the refrigerator.
  • 4. Remove the yams and stir to coat with the sauce. Top with gingersnap crumbles and bake until the yams are very tender and the topping is nicely browned, about 10 minutes longer. Serve.

3 can(s) sweet potatoes or yams, 29 oz each
1/2 c light brown sugar (packed)
1/4 c orange juice
1/2 c amaretto liqueur
1/2 c sugar
1/2 c margarine, divided
2 c large or miniature marshmallows

  • 1. Preheat over to 350 degrees.
  • 2. Drain canned yams or sweet potatoes. Place in large mixing bowl. Add 2 tablespoons margarine. Place in microwave for 1 minute.
  • 3. Mash potatoes and margarine with potato masher.
  • 4. Melt remaining margarine. With an electric mixer, whip potatoes, margarine, sugars, juice, and amaretto.
  • 5. Pour into a greased 2.5-quart casserole.
  • 6. Bake for 30 minutes.
  • 7. Remove from oven and top with marshmallows.
  • 8. Return to oven and bake for 10 - 15 more minutes until marshmallows slightly brown and "puff."
