BAKED SWEET POTATOES STUFFED WITH CRANBERRIES, PEARS, AND PECANS

- Position rack in center of oven and preheat to 350°F. Line baking sheet with foil. Pierce potatoes in several places with fork; place on prepared baking sheet. Bake until potatoes are tender when pierced with fork, about 55 minutes. Cool slightly.
- Meanwhile, place cranberries in small bowl; pour enough hot water over to cover. Let stand 5 minutes to soften. Drain well. Melt 2 tablespoons butter in large nonstick skillet over medium-high heat. Add pears and sauté until tender and golden, about 4 minutes. Stir in cranberries, pecans, ginger, and brown sugar; sauté 1 minute. Mix in 2 teaspoons vinegar and 1/2 teaspoon salt.
- Cut off top 1/4 of each potato lengthwise; discard tops. Using fork, gently mash pulp inside each potato. Sprinkle with salt and pepper. Melt remaining 2 tablespoons butter in small saucepan over low heat. Whisk in remaining 1 1/2 tablespoons vinegar. Drizzle about 1 teaspoon butter-vinegar mixture into each potato; mix with fork to blend.
- Mound cranberry mixture in sweet potatoes. (Can be prepared 4 hours ahead. Cover loosely with plastic wrap; let stand at room temperature. Rewarm sweet potatoes uncovered in 350°F oven until heated through, about 20 minutes.)

- Preheat oven to 375 degrees F (190 degrees C).
- Arrange the sweet potatoes on a baking sheet, and bake in preheated oven for 1 hour.
- Cut a slit into the top of each potato. Carefully scoop out the pulp from the potato, leaving the skins intact; place the potato in a large bowl. Add the margarine and pineapple to the potato and stir together. Stuff the potato mixture back into the reserved potato skins. Sprinkle the pecans over each potato.
- Return the stuffed potato skins to the oven; bake another 12 minutes.

- Wash and pat dry the sweet potatoes.Poke several times with a fork and wrap in foil. Place potatoes on a baking sheet and roast for 45 to 60 minutes, until very tender when poked with a fork.
- While potatoes are roasting, prepare the caramelized pear stuffing. To do so, peel, core, and chop the pears. Add them to a small saucepan along with the rest of the ingredients for the pears. Cover and heat to medium-high and bring to a full boil. Reduce heat slightly and continue cooking, stirring occasionally, until pears are tender and caramelized, about 8 to 10 minutes. Set aside until ready to use.
- Lower the oven temperature to 350 and remove the potatoes from the oven. Once cool enough to handle, unwrap the potatoes, cut down the length of each, and scoop out much of the flesh into a mixing bowl. Add the yogurt, honey, cinnamon and salt. Mash and stir until well-combined. Taste stuffing mixture for flavor and add more yogurt and/or honey to taste. Place potatoes back in the oven and cook until heated through, about 8 to 10 minutes. Serve with hot caramelized pear mixture, and enjoy.

- Halve the pears and then core. I cored the pears with a cookie scoop but you can use a melon baller, too. Slice a small part off of the backside of each pear half to create a flat surface so the pear sits flat when laid on the pan.
- Place the pear halves on a large baking sheet or baking pan, cored side up. Place three cranberries into the cored part of each pear half. Sprinkle each pear half with about 1/2 tbsp of the pecans and then sprinkle each pear half with the cinnamon and nutmeg. Drizzle each pear half with 1/2 tsp of honey. I did this by squeezing the honey into a 1/2 tsp measuring spoon and then drizzling over each pear half.
