They say what happens in Vegas, stays in Vegas, but that's mostly because people just don't remember exactly what happened. Well, the only thing I didn't forget was this special potato gratin that Chef John Schenk taught me how to make 10 years ago at his restaurant Strip House. Not only is it the soul mate of steak, but it's also a great side dish for big holiday gatherings since you can make it the day before and bake when needed.

1 teaspoon butter, or as needed
3 large russet potatoes, scrubbed
2 shallots
3 teaspoons kosher salt
½ teaspoon freshly ground white pepper
1 pinch cayenne pepper, or to taste
2 ½ cups grated sharp white Cheddar cheese
1 ¾ cups sour cream

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Butter a casserole dish.
  • Wrap each potato in foil and place on a baking sheet. Poke holes into potatoes using a knife.
  • Bake in the preheated oven until very tender and easily pierced with a knife, about 1 hour and 15 minutes.
  • Let potatoes cool to room temperature, at least 20 minutes. Unwrap. Cover with plastic wrap and refrigerate until completely chilled, 8 hours to overnight.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Shred potatoes into a large bowl using a cheese grater. Mince shallots to get 1/4 to 1/3 cup.
  • Add shallots in with the potatoes; season with salt, white pepper, and cayenne. Toss with two forks until well combined. Add Cheddar cheese and mix well. Gently toss in sour cream until barely combined. Transfer mixture into the prepared baking dish, piling it up high, then patting it down very lightly.
  • Bake in the preheated oven until piping hot and top is browned, 30 to 35 minutes.

3 pounds sweet potatoes, scrubbed clean
Olive oil, for drizzling
Kosher salt and freshly ground black pepper, for sprinkling
Paprika, for sprinkling
Garlic powder, for sprinkling

Steps:

  • Preheat the oven to 450 degrees F and line a rimmed sheet pan with foil. Cut the ends off the potatoes, then cut the potatoes in half lengthwise. Cut into thick wedges, keeping all of the fries evenly sized. Spread the fries on the lined sheet pan and drizzle with a few tablespoons of olive oil, a big pinch of kosher salt and lots of freshly ground pepper. Sprinkle to taste with paprika and garlic powder and toss everything to evenly coat. Roast until brown and crispy on the bottoms, 10 to 15 minutes.
  • Flip all the fries, and return them to the oven to roast until they are brown and crispy, another 10 to 15 minutes. Allow to cool slightly before serving

4 sweet potatoes
2 tbsp olive oil , plus extra to rub on the potatoes
juice 1 lime
2 tsp chilli powder
1 tsp garlic powder
1 tsp ground cumin
500g lean beef steak , cut into medium-sized strips
2 onions , thinly sliced
a mixture of 4 orange, yellow and red peppers , thinly sliced
small handful coriander , chopped
2 avocados , halved, stoned and peeled

Steps:

  • Heat oven to 220C/200C fan/gas 7. Wash the sweet potatoes, prick them with a fork all over, then rub with a little olive oil and season generously. Wrap each potato in tin foil and bake on a baking tray for 45-55 mins until soft.
  • To make the marinade, put the lime juice, chilli powder, garlic powder, cumin, 1 tbsp olive oil and a generous pinch of seasoning in a bowl. Mix everything together, then pour half the marinade into a second bowl. Add the steak to one of the bowls and mix well. Add the onions and peppers to the other bowl and mix to ensure everything is evenly coated. Cover both bowls in cling film and chill in the fridge until needed.
  • When the sweet potatoes have about 20 mins left to cook, heat the remaining 1 tbsp olive oil in a large frying pan over a medium heat. Add the onion and pepper mixture, cook for 12-15 mins, stirring often, until they go soft and start to glisten and brown, then tip onto a plate. Wipe the pan clean with some kitchen paper, add the steak and cook for 3-5 mins, stirring often. Add the onions and peppers back to the pan for a few mins before serving, then remove from the heat and stir through most of the coriander.
  • Mash the avocado in a bowl with a fork. Add a good pinch of salt and the rest of the coriander.
  • To serve, halve each sweet potato lengthways, mash the insides with a fork, then top with a spoonful of the steak fajita mixture and a dollop of mashed avocado. Enjoy!

2 boneless beef ribeye steaks (6 ounces each)

1 tablespoon dark brown sugar

Steps:

  • Preheat the oven to 375 degrees. Wash the sweet potato and wrap it with foil. Place on a baking sheet lined with parchment paper. Bake potato for approximately 1 hour, or until you can easily pierce the potato with a fork.
  • While the potato is baking use a mixer to mix together the butter and honey until the texture is uniform. To serve remove the foil and split the potato open with a knife. Top with the brown sugar, cinnamon, and finally a scoop of the honey butter. Store leftover honey butter in the refrigerator.
  • Serve each potato with 2 tablespoons of the honey butter.

• 4 or 5 whole Sweet Potatoes
• Cinnamon, Butter and/or Brown Sugar as desired.

Steps:

  • Pre-heat your oven to 350 degrees.
  • Scrub and wash potatoes well.
  • Pat dry with paper towels or just set aside to air dry a few minutes.
  • Use a fork to punch a few holes in each potato. Be careful, they're kinda tough.
  • Line a cookie sheet or baking pan with aluminum foil.
  • Place the potatoes on the baking sheet and then place in your oven, pre-heated to 350 degrees.
  • Bake for about 45 minutes to One Hour, depending on how soft you want them.
  • Remove from oven and peel as many as you intend to use.
  • Top with a little cinnamon, some pats of butter and brown sugar as desired.
  • Serve warm and Enjoy.

6 large baking potatoes
3 tablespoons olive oil

1/4 cup A.1. Original Sauce
1/8 cup water
1/8 cup vegetable oil
3 tablespoons steak seasoning
1 tablespoon garlic powder
1/2 cup shredded colby-monterey jack cheese
4 tablespoons butter
1/2 cup sour cream
1/2 teaspoon paprika

Steps:

  • 1. Pre-heat oven to 375 degrees.
  • 2. Wash and dry potatoes, place on a baking sheet, rub olive oil all over potatoes, and sprinkle with Kosher salt and Cracked black pepper. Bake approximately 1-1 1/2 hours, or until fork tender.
  • 3. While potatoes bake, place stew meat in a bowl, and sprinkle with Webers seasoning. Wisk together the Worcestshire sauce, A-1, water and vegetable oil; pour over stew meat and stir.
  • 4. Slice the top 1/8 inch of each potato off, and either save to make potato skins, or discard.
  • 5. Scoop the inside of each potato into a bowl, leaving approximately 1/8 of an inch still intact with the skin. I use an ice cream scooper.
  • 6. Sprinkle the insides of each potato with salt, pepper and 1 Teaspoon of the garlic powder and return to oven to bake.
  • 7. Preheat a deep skillet on high, and add the stew meat mixture, cook just until browned, stirring occasionally.
  • 8. Add the cheese, butter, sour cream, paprika, remaining garlic powder, and salt and pepper to taste to the potato pulp. Mash until smooth consistancy.
  • 9. Put the potato mixture in a pastry bag with a large tip, and set aside.
  • 10. Remove the potatoes from the oven. Turn the temperature up to 425 degrees.
  • 11. Using a slotted spoon, fill the potatoes with the steak pieces. Top each stuffed potato with the potato mixture, piping it up as high as you want, or create a pretty design.
  • 12. Bake topped potatoes for 10-15 minutes, depending on desired well-ness of the steak. Remove from oven, and let stand 2 minutes. Serve and ENJOY!

2 russet potatoes (skin scrubbed clean under water and patted completely dry)
2 tablespoons olive oil

Steps:

  • Preheat your oven to 425 degrees with the oven rack in the middle. Line a baking sheet with parchment paper.

My husband and I love those incredible baked sweet potatoes you can only order at steakhouses - but who wants to have the oven on all day just for potatoes! Well here is a really slick alternative that is even better then the restaurants.

1 yam, per person
olive oil
aluminum foil
butter
brown sugar (optional)

Steps:

  • Select yams that are about the same size. Wash thoroughly.
  • Using a sharp knife, cut out a nickel-size wedge from the side of each yam. This keeps the yams from exploding during cooking.
  • Coat yams with olive oil. Wrap each one securely in foil. Repeat foil process 3 times, rotating yam each time. Continue foiling each yam until all are finished.
  • Place yams in slow cooker. Add 1/4 cup water to bottom.
  • Turn cooker to low. The yams will be ready to go in about 4-5 hours, but you can keep them on low all day if you need too.
  • When ready to serve, upwrap yams, add butter and brown sugar and enjoy!
  • Note: by wrapping the yams a minimum of 3 times with foil you lock in the moisture and keep the slow cooker clean too - making clean up a breeze.
