You don't have to wait until Thanksgiving to enjoy sweet potatoes-try them in a salad, as a side dish, or for dessert.

4 medium sweet potatoes (2 1/2 to 3 pounds)
Blue cheese
Pecans
Sour cream
Bacon
Chopped chives
Butter
Coarse salt and ground pepper
Black beans
Salsa
Monterey Jack
Chopped cilantro

Steps:

  • Preheat oven to 400 degrees. Pierce 4 medium sweet potatoes (2 1/2 to 3 pounds) several times with a fork; place on a rimmed baking sheet. Bake until tender, 45 to 60 minutes. With a paring knife, cut an X in the top of each potato, and spread open. Add desired topping, and serve immediately.
  • BASIC: Dot with softened butter, and season with coarse salt and ground pepper.
  • SOUTHWESTERN: Layer with black beans, salsa, shredded Monterey Jack, and chopped cilantro.
  • FRENCH: Crumble blue cheese over top, then sprinkle with chopped toasted pecans.
  • ALL-AMERICAN: Dollop with sour cream; sprinkle with crumbled bacon and chopped chives.

6 large baking potatoes
1/3 cup butter, softened
6 green onions, sliced
1/4 cup mayonnaise
2 tablespoons crumbled cooked bacon
1-1/2 cups shredded cheddar cheese

Steps:

  • Scrub and pierce potatoes; place on a microwave-safe plate. Microwave, uncovered, on high for 20-23 minutes or until tender, turning once. , Meanwhile, in a small bowl, combine the butter, onions, mayonnaise and bacon; set aside. Cut an X in the top of each potato; fluff pulp with a fork. Top each with 3 tablespoons of butter mixture. Sprinkle with cheese.

3 medium/large sweet potatoes (mine were 10-11 oz each. You can bake more than 3 potatoes (I just had 3 on hand). )
brown sugar (optional, for serving)
marshmallows (optional, for serving)
ground cinnamon (optional, for serving)
butter (optional, for serving)
salt and pepper (to taste)

Steps:

  • Preheat the oven to 425°F. Line a baking sheet with parchment paper or foil, for easy clean up.
  • Clean the sweet potatoes by scrubbing underneath running water. Dry the skin.
  • Poke each sweet potato with the tines of a fork.
  • Place on baking sheet and bake for 50-65 minutes or until the thickest part can have a fork inserted with no resistance.
  • Remove from oven and let cool slightly.
  • Serve with butter, salt and pepper, or marshmallows, or brown sugar and cinnamon.

4 small russet potatoes (about 1 1/4 pound total)
1/2 cup nonfat Greek-style yogurt or 2/3 cup regular, plain nonfat yogurt
1 tablespoon olive oil
1 tablespoon finely chopped parsley leaves
1 tablespoon finely chopped chives

Steps:

  • Preheat the oven to 450 degrees F.
  • Poke each potato with a fork a few times. Place on a baking sheet lined with foil and bake for 45 to 50 minutes, until they are easily pierced with a knife. Wrap them loosely in the foil for 5 minutes or until ready to serve.
  • If using regular yogurt, place it in a strainer lined with paper towel and set the strainer over a bowl. Let the yogurt drain and thicken for 20 minutes.

15-ounce can black beans
1/4 teaspoon kosher salt
1 cup canned corn (or thawed frozen)
1 cup guacamole

Fresh chopped cilantro
Sour cream (or cashew cream)
Other topping ideas: Classic: Sour cream, high quality cheddar, chives, optional bacon

Steps:

  • Preheat the oven to 425 degrees Fahrenheit. (Alternatively, you can use our Quick Baked Potato or Baked Sweet Potato methods.)
  • Scrub the potatoes and pierce them all over with a fork. Rub each potato with olive oil. Place the potatoes directly on oven rack (with a tray on rack below to catch any dripping oil). Bake 20 minutes and flip with tongs. Bake additional 25 minutes and check for tenderness with a fork. The fork should easily pierce the potato to the center. If not tender, continue baking, up to 15 minutes more depending on size of the potato.
  • Meanwhile, drain and rinse the black beans and mix them with the kosher salt. Drain or thaw the corn. Chop the cilantro. Or follow the notes above for other topping ideas!
  • When the potatoes are done, open the tops with a fork and top with the pico de gallo, seasoned black beans, corn, guacamole, cheddar cheese, cilantro and sour cream. Or follow the notes above of your choosing. Enjoy!
