These delicate, crunchy fries are the perfect French bistro-inspired accompaniment to our Hanger Steak with Shallots.

Vegetable-oil cooking spray
2 medium russet potatoes (about 1 1/2 pounds), cut into matchsticks
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper

Steps:

  • Preheat oven to 425 degrees. Coat 2 baking sheets with cooking spray; set aside. Toss together potatoes, oil, and 1 teaspoon salt in a bowl. Arrange potatoes in a single layer on prepared baking sheets.
  • Bake, turning potatoes with a metal spatula 2 or 3 times and rotating sheets halfway through, until potatoes are crisp and edges turn golden brown, 18 to 20 minutes. Arrange potatoes on a large piece of parchment paper; let cool 5 minutes. Season with salt and pepper.

3 tablespoons soybean oil (often labeled "vegetable oil")
½ teaspoon sea salt
½ teaspoon freshly ground black pepper
¼ teaspoon paprika
¼ teaspoon garlic powder

Steps:

  • Position rack in upper third of oven and preheat oven to 425 degrees F. Spray baking sheet with non-stick spray.
  • Place sweet potatoes and soybean oil in large bowl, toss lightly. Sprinkle with salt, pepper and paprika.
  • Arrange potatoes in a single layer on prepared baking sheet, being sure not to overcrowd.
  • Bake until tender and golden brown, turning occasionally. Cooking time is 18 to 24 minutes. Cool 5 minutes before serving.

2 pounds baking potatoes, each cut into six wedges
2 tablespoons olive oil
½ teaspoon dried thyme leaves
¼ teaspoon ground black pepper
salt to taste
¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Arrange potato wedges on a baking sheet. Drizzle olive oil over the wedges; season with thyme, pepper, and salt. Turn wedges with a spatula to coat with oil and seasonings.
  • Roast potato wedges for 15 minutes, turn, and continue roasting until soft in the center, about 15 minutes more. Transfer wedges to a platter and sprinkle cheese over them.

1 Russet potato, scrubbed (skin on)
1 tablespoon canola or olive oil
1/4 teaspoon salt

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Spiralize potato into thin strings (I keep them to 12-inch or less.)
  • Toss potato strings, oil and salt in a large bowl.
  • Grease baking pan with cooking spray and spread out so potatoes are barely overlapping.
  • Bake for 10 minutes and stir. Bake for an additional 10-12 minutes or until the fries are crisp to your liking.
  • Cool for 5 minutes and serve.
