BAKED SWEET POTATO FRIES WITH SRIRACHA DIPPING SAUCE

Steps:
- Pre-heat oven to 400 degrees F. Grease a large baking sheet with oil and set aside.
- Scrub and cut the sweet potatoes into 1/3 inch sticks. You can go as thin or as thick as you would like but remember the thicker the are, the longer they will need to bake.
- In a large bowl, toss sweet potatoes with olive oil, salt, pepper, and paprika. Place on the baking sheet in a single layer. be sure not to overlap for best results.
- Bake fries, turning once and rotating pans once, until edges are lightly browned and centers are tender; 15 to 20 minutes.
- To make sriracha dipping sauce:
- Combine the sour-cream, light mayo, and sriracha sauce in a small bowl. Mix with a fork until fully combine and creamy.

- Preheat oven to 425 degrees.
- Whisk olive oil and sriracha together in a small bowl. Pour over sweet potatoes in a large bowl and toss to coat.
- Combine cumin, chili powder, paprika, salt and pepper in a small bowl. Add spices to potatoes and toss to coat. Arrange potatoes in one layer on an unoiled baking sheet.
- Bake on lowest rack 10 minutes. Turn potatoes with a spatula and bake 10 more minutes, or until golden brown on all sides.
- While potatoes are cooking, whisk dipping sauce ingredients together in a small bowl.
- Remove potatoes from oven and serve with sriracha dipping sauce.

- Preheat oven to 425°F and position the racks in the upper and lower thirds of the oven. Line two baking sheet with parchment paper.
- Using a sharp chef’s knife, cut the top and bottom off the sweet potatoes and stand them on one of the flat sides. Cut each into thin planks, ¼-inch thick, and then into matchsticks. Add the potatoes to a large mixing bowl and toss with the olive oil. Sprinkle with the starch, salt, and paprika; toss until well coated.
- Divide the fries among the prepared baking sheets and arrange in an even layer, making sure there’s space between each fry. Bake for 20 minutes, swapping the baking sheets from top to bottom halfway through, until nicely browned (but not blackened at the tips). Remove from the oven and toss the potatoes to redistribute. Return to the oven for five minutes, until crispy. Allow to cool for a few minutes on the pan before transferring to a serving platter or 8-inch parchment paper cone.
- While the fries are baking, make the aioli: In a small mixing bowl or food processor whisk or pulse the egg yolks, mustard, lime juice, sriracha and garlic until smooth. Working slowly, add 1 teaspoon of the olive oil and whisk or pulse until incorporated. Repeat with 3 additional teaspoons. Once the oil is taking, slowly drizzle in the remaining olive oil, followed by the coconut oil, whisking or pulsing throughout. Once the mixture is thick, season with the salt.
