This recipe makes the most tender and tasty meatballs. I also freeze these meatballs and take out how many servings I need for each meal. If cooking in sauce, add baked meatballs 20 minutes before serving time.

Here is an updated version of a popular dish using frozen precooked meatballs to speed up the prep time.

- Heat oven to 375°F. Spray 2-quart round casserole with no-stick cooking spray. Set aside.
- Cook noodles according to package directions. Drain.
- Melt butter in 10-inch skillet until sizzling; add mushrooms. Cook, stirring occasionally, 5-6 minutes or until softened.
- Combine water and gravy mix in 3-quart saucepan. Cook over medium heat 3-5 minutes or until mixture comes to a boil and is thickened. Remove from heat; stir in sour cream and nutmeg. Add cooked egg noodles, mushrooms, meatballs and parsley; gently stir to coat.

ALMOST-FAMOUS SWEDISH MEATBALLS
Some people drive for hours to get to an Ikea store, and we know they aren't making the trek just for the $9.99 chairs. They're going for the Swedish meatballs. The dish has been a main attraction at Ikea Restaurants since an in-store chef developed the recipe in Switzerland in 1985. Although Ikea's Real Swedish Food Book, published in 2000, included a meatball recipe, reps confirmed that it is not the one served at their restaurants. Ikea is keeping that baby a secret, so chefs in Food Network Kitchens hit a nearby store for a tasting, then created this spot-on copy.

- Make the meatballs: Put the breadcrumbs in a large bowl. Heat the butter in a skillet over medium heat. Add the onion, garlic, allspice, 2 teaspoons salt and 1/4 teaspoon white pepper and cook, stirring, until soft, about 5 minutes. Add the milk and Worcestershire sauce and bring to a simmer. Pour the milk mixture over the breadcrumbs and stir to make a thick paste; let cool. Add the beef, pork, egg and egg white to the bowl and mix until combined.
- Brush a baking sheet with vegetable oil. Roll the meat into 1-inch balls and arrange on the prepared baking sheet. Cover with plastic wrap and refrigerate at least 1 hour.
- Preheat the oven to 400 degrees F. Bake the meatballs until cooked through, about 20 minutes.
- Make the gravy: Melt the butter in a large skillet over medium heat. Add the flour and cook, whisking, until smooth. Whisk in the beef broth and Worcestershire sauce and bring to a simmer. Add the cream and meatballs. Reduce the heat to medium low and simmer until the gravy thickens, about 10 minutes. Season with salt and black pepper. Transfer to a serving dish; sprinkle with the parsley and serve with lingonberry jam, if desired.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- In a large bowl, combine ground beef, ground pork, chopped onion, bread crumbs, egg, and milk. Season with parsley, Worcestershire sauce, 2 teaspoons salt, and 1 teaspoon pepper. Mix well with your hands. Shape into walnut-size balls, and place on baking dish.

- For the meatballs:Preheat oven to 400°F (205°C).Place all of the ingredients for the meatballs in a large bowl. Using your hands, mix it all together thoroughly. Just make sure to not over-mix it or the meatballs could get tough.Roll the meat into 1 1/2-inch balls and place them on a baking sheet, making sure they don't touch. You may need to use more than one pan. You should get about 46 meatballs.Bake in preheated oven for 15-20 minutes, or until cooked through.For the gravy:Meanwhile, as the meatballs are baking, make the gravy. Melt the butter in a large pot over medium heat. Whisk in the flour, salt and pepper. Cook for 2 minutes, whisking frequently. Pour in 1 cup of milk while whisking, then pour in the remaining milk. - Preheat oven to 400 degrees F. Line a rimmed 18x13-inch baking sheet with aluminum foil, spray with non-stick cooking spray.
- Add bread crumbs, nutmeg, allspice, cardamom, salt and pepper to a large mixing bowl. Pour in milk and toss with a fork, let rest while sautéing onions.
- Melt 1 tablespoon butter in a 12-inch skillet over medium heat. Add onions and saute for about 6 minutes until softened and slightly golden brown, while adding garlic during the last 30 seconds.
- Add beef and pork to bread crumb mixture along with egg yolks and onion mixture. Gently toss mixture to evenly distribute ingredients.
- Scoop dough out 1 ounce at a time and shape into balls. Transfer to prepared baking sheet spacing evenly apart.
- Bake in preheated oven for 18 to 22 minutes until cooked through.
- Meanwhile in same skillet used to saute onions, melt remaining butter over medium-heat. Add flour and cook and whisk for 2 to 3 minutes until golden brown.
- While whisking, slowly pour in broth and cream. Add in Worcestershire sauce, season with salt and pepper to taste.
- Bring to a simmer over medium-high heat, whisking constantly. For a thicker consistency simmer over low heat for a few minutes.
- Add meatballs to warm sauce and toss, sprinkle with parsley. Serve warm with egg noodles or mashed potatoes and lingonberry jam if desired.

- Soak bread in milk.
- Add the following to soaked bread:.
- - Eggs, slightly beaten.
- - Ground beef.
- - Onion.
- - Sugar.
- - Spices (except dill weed).
- Shape into 1" balls. Brown on all sides in skillet (or bake in 400 degree oven for 20 min.).
- Remove meatballs to 2 quart casserole.
- In skillet, or saucepan:.
- Add 5 Tbsp flour (or cornstarch) to meat drippings, then add 1 can Consomme and 1 can water.
- Note: Shake with 1 soup can of water with flour (or cornstarch) if meatballs were baked. Then add to Consomme.
- Cook, stirring gravy until thick and smooth.
- Add 1 cup light cream and 1 tsp dillweed, and stir until blended.
- Add to meatballs.
- Bake, covered for 30 minutes at 400 degrees.
