BAKED CLAMS OREGANATA

Baked Clams Oreganata image

Provided by Anne Burrell

Categories     appetizer

Time 40m

Yield 1 dozen clams

Number Of Ingredients 9

1 dozen littleneck clams, scrubbed
1 cup plain bread crumbs
2 cloves garlic, smashed and chopped
3 tablespoons finely chopped fresh oregano leaves
2 tablespoons finely chopped Italian parsley leaves
Pinch crushed red pepper flakes
Kosher salt
2 to 3 tablespoons extra-virgin olive oil
1/2 to 3/4 cup chicken stock

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the clams on a sheet tray and put them in the preheated oven for 2 to 3 minutes or until the clams just begin to open. We don't want to cook the clams, we just want them to open a little.
  • Using a butter knife pry the clams open and remove the top shell and discard. Completely pull the clam away from the bottom shell and place it back in the bottom shell. This will allow for easy eating.
  • Preheat the broiler and adjust the rack to the top shelf.
  • In a bowl, combine the bread crumbs, garlic, parsley, oregano, crushed red pepper and some salt. Add the olive oil and stir until well combined. Add chicken stock until the mixture is quite wet. Taste to check the seasoning, add more salt if needed.
  • Pack each clam full of the bread crumb mixture. Pack the bread crumbs down and really secure the edges. This will help the clam stay moist.
  • Place the clams on a sheet tray and add about 1/2 cup of water to the tray. This will also help the clams stay moist. Put the tray under the broiler for 5 to 6 minutes or until the bread crumbs are nice and brown and crispy.

BAKED STUFFED CLAMS

Categories     Food & Cooking     Appetizers

Yield Makes 16

Number Of Ingredients 7

2 tablespoons olive oil
1 small red onion, coarsely chopped
5 garlic cloves, crushed
1 cup dry white wine
16 littleneck or cherrystone clams (each about 3 inches wide), scrubbed
Herbed Breadcrumb Stuffing
Seaweed, for serving (optional)

Steps:

  • Heat olive oil in a pot over medium-high heat. Cook onion until softened but not browned, stirring occasionally, about 5 minutes. Add garlic and saute, stirring, just until fragrant, about 1 minute.
  • Add wine, and bring to a simmer. Add clams, and stir to combine. Cover and steam until clams have opened, 5 to 7 minutes. Remove from heat. Use a slotted spoon to transfer clams to a rimmed baking sheet to cool, discarding any that do not open. Strain clam broth through a fine sieve, and reserve broth for making stuffing.
  • When clams are cool enough to handle, remove all meat, and reserve. Remove half of each clam shell, and discard. Arrange the remaining halves on a rimmed baking sheet. Cut each clam into ½-inch pieces; return pieces to shell. (Clams can be prepared to this point up to 1 day ahead. Cover with plastic wrap and refrigerate.)
  • Preheat oven to 350 degrees F. Dividing evenly, press Herbed Breadcrumb Stuffing into clam shells, smoothing with the back of a spoon. Bake until tops are golden, 25 to 30 minutes. Nestle clams on seaweed, if desired, and serve immediately.

BAKED CLAMS

Baked Clams image

This recipe for baked clams tried to bridge the gap between the glory of a clam pulled from a clambake and the unfortunate, common mediocrity of ubiquitous baked stuffed clams. It contains some of the usual suspects - onion and celery - and some unusual ones, like clam juice and vermouth. Importantly, it doesn't require clam shucking, which is a dangerous occupation, best avoided unless you are very brave.

Provided by Tamar Adler

Time 1h

Yield 6 servings (or 2 if you love clams)

Number Of Ingredients 11

24-30 littleneck or cherrystone clams*
3 tablespoons clam juice
3 tablespoons water
2 tablespoons dry vermouth
1 cup combined (any combination) sliced green or plain white garlic, finely sliced leek, chopped celery, fennel or fennel top
3 tablespoons butter plus 2 tablespoons unsalted butter, separated
2 tablespoons heavy cream
1/4 cup chopped celery leaf
1 tablespoon chopped fennel frond
1 tablespoon chopped chervil (if available; if not, use more celery leaves or fennel fronds)
3 tablespoons fresh bread crumbs

Steps:

  • Wash the clams very well. Put them, the clam juice, water and vermouth in a big pot with a cover. Cook them over very high heat, bringing them to a boil, until they are just cooked, removing them one by one, or by the few, to a roasting pan or other flat tray, with tongs or a hand-held sieve, the instant they pop open.
  • Once they've cooled, remove the clams from the shells. Divide top and bottom shells. Wash as many as you plan to serve, and leave them to dry. Add any liquid left with the clams to the liquid in the clam pot.
  • Sauté the cup of garlic, leeks, celery and fennel in 3 tablespoons of butter, adding only the tiniest, barest bit of salt to help the vegetables release their liquid. Cook for 5 to 10 minutes, until leeks are tender and taste good. Through a fine strainer, add all the liquid in the clam pot. Bring to a boil, and cook down until only about 1 cup of liquid remains. Add the heavy cream. Taste for salt. Add the chopped leaves and chervil and the clams, either whole or roughly chopped.
  • Divide the remaining 2 tablespoons of butter into 24 small squares. If it seems difficult, use more butter. No precision needed. Fill each half clamshell very full with the clam mixture - with either 1 clam per shell, if left whole, or a spoonful, if chopped. Top each half with a sprinkle of bread crumbs and a tiny square of butter.
  • Put in a single layer, in 1 or 2 large roasting or baking pans, under the broiler at its highest setting, quite close to the broiler. Serve hot.

BAKED STUFFED CLAMS

Baked Stuffed Clams image

My clams are requested all the time. They are the perfect appetizer for any occasion and so easy to make. Definitely guaranteed to rival anything you get in a restaurant! Great to freeze and have as a quick snack anytime. (Note: if you don't have clam shells, form tin foil into clam shaped cups, and proceed as directed.)

Provided by Danielle Merk

Categories     Appetizers and Snacks     Seafood

Time 1h

Yield 12

Number Of Ingredients 12

24 Clean Clam Shells
2 (6.5 ounce) cans minced clams, drained with juice reserved
1 (6 ounce) can crab meat, drained
4 cups fresh bread crumbs
¼ cup minced sweet onion
2 cloves garlic, minced
2 tablespoons chopped Italian flat leaf parsley
4 tablespoons butter
2 tablespoons olive oil
lemon pepper to taste
paprika to taste
2 lemons, quartered

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • In a large frying pan, melt butter with olive oil over medium heat. Stir in onion, and cook until translucent. Stir in clams, crab meat, parsley, lemon pepper, and bread crumbs. Reduce heat to low, and slowly pour in clam juice until mixture is slightly sticky, but not wet. The bread crumbs will continue to absorb moisture, so be careful not to add too much clam juice.
  • Fill each clean clam shell with mixture, pressing tightly into shell. Arrange on a baking sheet, and sprinkle lightly with paprika. (Stuffed shells may be covered and frozen at this point for later use.)
  • Bake in the preheated oven for 20 minutes, or until golden brown and sizzling. If frozen, bake at 350 degrees F (175 degrees C) for 30 minutes, or until warmed through. Serve warm on a platter with lemon wedges.

  • Once you have your green peppers ready and your clams ground or chopped, preheat your oven to 350F. In a large frying pan, heat 2 tablespoons of the butter and saute the onion and celery until softened and translucent, but not browned. Salt them as they cook.
  • Remove the vegetables to a bowl to cool. When they are cooled, mix well with the clams, the chopped green pepper, Tabasco, Worcestershire, cheese and half of the crushed Ritz crackers. Stir in enough of the clam juices to make a thick paste.
  • Stuff the mixture into clam shells or ramekins or small, oven-proof bowls. Top with the remaining crushed crackers and drizzle the remaining butter over them. Grind black pepper over them.
  • Bake uncovered for 20 to 25 minutes. I like to put the clam shells on a baking sheet so I can take them all out at once. Serve with lemon wedges.

  • Rinse the clams of any grit then steam clams in around 1in/23cm boiling water until they open up, around 8-10min. Remove them from the water (save some of it), allow the clams to cool then take them off the shell - if a bit gets stuck don't worry about it, that's the 'foot' that's not as tender to eat. Dice up the clam meat relatively small. Split the shells open and keep 8 of the best for stuffing. NB if clams don't open on steaming, don't use them, this means they were already dead.
  • Warm the butter in a skillet/frying pan and soften the onion in the butter for a minute or two. Then add the garlic and pepper and cook another minute before adding the breadcrumbs.

  • In a large pan, melt the butter. Saute the onion in the melted butter until translucent, then add garlic and continue to saute until fragrant.
  • Add the oregano, parsley, crushed red pepper, black pepper, and Italian seasoning to the pan and combine with the butter, onion, and garlic. Crumble the ground chorizo into the pan and brown it, stirring occasionally to prevent it from burning.
  • While the chorizo cooks, scoop the bread out of the crust and break it up into small pieces, discarding any particularly hard bits of crust. In a large bowl, beat the eggs with the clam juice until combined. Add the bread to the bowl and mix well until the bread is completely soaked, then add the chorizo mix and continue to combine everything.
  • Roughly chop the baby clams. If you have a food processor, just give the clams a couple of quick pulses. Whatever you do, you do NOT want a clam puree. Trust me.

  • Cook the clams. Scrub the shells of the clams under cool water. Discard any clams that are opened or with gaping shells. Fill a large pot of water 1/2 of the way with water - enough water to almost cover the clams completely so they all open at the same time. Add a small quartered onion, bay leaf, and peppercorn to the water or you can just cook the clams in plain water. Bring to a boil and add the clams. Cover and cook for 6 to 10 minutes, until the clams have opened and the meat has turned opaque. Remove the clams from the water, strain the broth and reserve up to 1 1/2 cups broth. Let the clams cool for 10 to 15 minutes, remove the clam meat from the shells, and set aside. Separate the clamshells into two pieces, clean off any broken pieces or remaining residue. Reserve about 18-20 of the best shells.
  • Prepare the stuffing ingredients. In a food processor, pulse the crackers into a fine crumb. Set aside. Wipe out the food processor and repeat with the onion, celery, and red pepper. Pulse until the vegetables are minced but not puréed, set aside. Wipe out the food processor and repeat with the clams. Pulse the clams in the food processor just until the clams are chopped into small to medium pieces, set aside.
  • Make the stuffing. In a large skillet, melt the butter over medium-high heat. Add the onions, celery, and pepper, season with a sprinkle of salt and black pepper. Cook the vegetables until translucent, about 3 minutes, then remove from the heat. In a large bowl, combine the sauteed vegetables, chopped clams, and cracker crumbs (see notes.) Melt the remaining butter and pour over the mixture. Add the Worcestershire, lemon juice, garlic, 1/4 teaspoon salt, 1/8 teaspoon pepper, and fresh parsley. Mix the clam broth into the stuffing a little at a time, until the stuffing mix is thick but a little wet. It should be similar to a thick paté.
  • Stuff the shells. Preheat the oven to 375°F. Stuff the clean shells with the mix, lightly pressing the stuffing into the clamshell. The stuffing should be slightly round on top. Set each stuffed shell on a lipped baking sheet. Optional: Top each stuffed clam with a 1-inch slice of bacon before cooking.
