CUBE STEAK PARMESAN
This is a great Italian style way to prepare beef or venison cube steaks. Double the ingredients for a crowd!

- Preheat the oven to 350 degrees F (175 degrees C). In a shallow dish, stir together the flour, salt and pepper. In a separate bowl, whisk together the eggs and water with a fork. In a third bowl, or shallow dish, mix together the cracker crumbs, 1/3 cup of Parmesan cheese and basil.
- Heat the oil in a large skillet over medium heat. Dredge the cube steaks in the seasoned flour, dip into the egg mixture, and coat with the cracker crumb mixture. Place them in the skillet, and fry just until browned on each side. Arrange steaks in a single layer in a greased casserole dish.
- Bake for 25 minutes in the preheated oven. Meanwhile, in a medium bowl, stir together the tomato sauce, sugar, 1/4 teaspoon of oregano, and garlic powder. Spoon over steaks when the 25 minutes are up. Top each steak with mozzarella cheese and remaining Parmesan cheese; sprinkle remaining oregano over the top. Bake for 5 more minutes, or until the cheese is melted, and the sauce is hot.

- Heat large heavy ovenproof skillet on medium heat 3 min. Add oil; tilt skillet to evenly cover bottom with oil. Add steaks; cook 2 min. Turn.

- Mix the breadcrumbs with the grated lemon zest, grated Parmesan, chopped parsley, salt and pepper.

- Turn on the smoker. Preheat your smoker to 225 degrees F.
- Prep the steaks. Season the New York strip steaks on all sides with Hey Grill Hey Signature Beef Seasoning (or equal parts salt and pepper).
- Make the Parmesan crust mixture. In a small bowl, combine the mayo, Parmesan, garlic, basil, and black pepper and set aside.
- Smoke the steaks. Place steaks on smoker, close the lid, and cook until the internal temperature of the steaks are 10 degrees away from your target temperature. (Pull at 115 degrees F for rare, 125 for med rare, 135 for medium, 145 for medium-well, and 150 for well done).
- Preheat your oven. When your steak is nearly to temperature specified above, set your oven to High Broil. Place a cast iron skillet on the very top rack of your oven to preheat. It needs to preheat for about 8-10 minutes.
- Add the Parmesan crust. Remove the steaks from the grill and place them on a plate. Top each steak with half of the Parmesan mixture. Carefully place the steaks onto the preheated cast iron skillet and slide them under the broiler.
- Broil the Parmesan crusted steaks. Broil for about 2-3 minutes, or until the Parmesan crust has melted and the top of the cheese is bubbly and browned. Your steak should be a few degrees under your final desired internal temperature, (125 degrees F for rare, 135 for medium rare, 145 for medium, 155 for medium well, and 160 for well done).
- Rest and serve. Rest the steaks for 5-10 minutes. The carry over cooking and heat from the skillet should finish the cooking process while the steak rests in the skillet for 5-10 minutes. Remove the steaks from the skillet and serve.

I made this panko parmesan crusted baked cod one weeknight and it was a hit! It's a wonderful option for weeknight dinner and easy to make. The crunchy panko and parmesan crust is infused with rosemary and lemon zest, and will leave your kitchen smelling amazing!

- Preheat oven to 400°F
- On a small baking tray add panko and gently spray with avocado oil. Bake in oven for 4 minutes or until golden brown. This will give your crust a nice, golden color. Remove from oven and set aside to cool.
- In a casserole dish, add enough olive oil to coat the bottom.
- Cut cod fillets into 6 ounce pieces. Season both sides with salt and pepper and add to casserole dish. Cook for 11 minutes.
- Meanwhile, in a bowl, add freshly grated parmesan, garlic, rosemary, panko, 1 teaspoon kosher salt, lemon zest, and melted butter. Mix well to coat. Set aside.
- Remove fish from oven and pour lemon juice on fillets. Carefully add panko parmesan mixture on top. Gently push on the top to set the crust.
- Place in oven and cook for 11 minutes. If fillets are thicker, you may have to cook for 1-2 minutes longer.
- Remove from oven and serve with lemon wedges for squeezing. Finish the top with a sprinkle of salt (optional).

- Preheat the oven to 425°. Rub the tenderloins all over with olive oil and season with salt and the cracked peppercorns. Set the tenderloins on a large, heavy-gauge rimmed baking sheet, allowing space between them, and roast in the upper third of the oven for 20 minutes.

Remove from the heat and let the sauce stand for 5 minutes. Whisk in the butter, 1 tablespoon at a time, and season the sauce with salt and pepper.
