Spinach-Mushroom-Sausage Pierogi Bake image

Cream cheese adds richness to a mixture of sauteed vegetables and sausage. Pour it all over packaged frozen pierogi. (You don't even have to thaw them!) The recipe from Jan Valdez of Chicago was a finalist in our Best of the Midwest® recipe contest.

1 16 ounce package frozen potato pierogi
⅓ cup chopped onion
1 tablespoon olive oil
4 cooked chicken sausages, sliced (12 ounces total)
1 8 ounce package sliced mushrooms
1 clove garlic, minced
1 10 ounce package frozen chopped spinach, thawed and squeezed dry
3 ounces cream cheese, cut up
¼ cup chicken broth
½ teaspoon salt
¼ teaspoon ground black pepper
½ cup shredded mozzarella cheese

Steps:

  • Place the frozen pierogi in a 2-quart rectangular baking dish; set aside. In a large saucepan cook the onion in hot oil for 2 to 3 minutes or until just tender. Stir in the sliced sausage, mushrooms and garlic. Cook and stir 3 minutes more. Add the spinach, cream cheese, chicken broth, salt and pepper. Cook and stir over medium heat to melt cream cheese. Pour the sausage mixture over the pierogi in the baking dish. Sprinkle with mozzarella cheese.
  • Bake, uncovered, in a 400° oven about 30 minutes or until lightly browned and heated through.

3 c. flour
1 c. water
1/2 t. salt
1 egg
1 T. butter
1 shallot, minced
2 cloves garlic, minced
16 oz. frozen spinach, cooked & drained
6 oz. cream cheese
1/2 c. grated Parmesan cheese
1 slice Havarti cheese
salt
pepper
nutmeg

Steps:

  • Combine all ingredients, knead dough, until smooth and less sticky, or if using a Kitchen Aid with a dough hook, just continue to mix, incorporating another 1/2 - 3/4 c. flour
  • Wrap in plastic wrap until ready to use
  • Saute shallot and garlic in butter until translucent
  • Combine with all remaining ingredients
  • Heat until cheeses are melted and well combined, (other than the cream cheese, use any combination of cheeses, the Parmesan and Havarti were just what we had on hand and like)
  • Season to taste with salt, pepper, and nutmeg, allow filling to cool
  • Roll out dough to 1/8 inch thickness
  • Cut into large circles, about 3.5 inches
  • Lightly moisten, just around the edge, on half of the circle
  • Fill with one teaspoon of spinach mixture, fold in half, sealing edge, and crimping with a fork
  • Bring a large pot of salted water to a boil, add about 10 pierogi, stir occasionally, cooking just until they float to the top
  • Remove pierogi with a slotted spoon and drain
  • Some people will eat the pierogi, as is, at this point, we prefer to saute them in butter with onions

Take a one-pot dinner to the next level with this baked Kielbasa and Pierogies Sheet Pan Meal. It's a delicious and efficient way to get dinner on the table even on the busiest nights.

2, 14 ounce packages Kielbasa (I like Hillshire Farms brand because it's readily available.)
2 medium onions (peeled, halved, and cut into 1/2-inch thick strips)
12 baby bell peppers (or 2 large bell peppers, stemmed, seeded and cut into 1/2-inch thick strips)
1 tablespoon olive oil
1/2 teaspoon plus 1 teaspoon kosher salt (divided)
1/2 teaspoon freshly ground black pepper
24 frozen pierogies
2 tablespoons canola or peanut oil
1 tablespoon chili powder
2 teaspoons Tabasco or preferred hot sauce
1/2 teaspoon granulated garlic or garlic powder
1/2 teaspoon granulated onion or onion powder
any robust mustard like grainy Dijon (smooth Dijon, spicy brown, etc...)

Steps:

  • Preheat oven to 400°F.
  • Cut the kielbasa into 4-6 inch lengths and arrange around the outside of the sheet pan. Toss the onions and bell peppers with the olive oil, 1/2 teaspoon of kosher salt, and black pepper in a large mixing bowl then use your hands or tongs to move it to the pan, depositing it between the lengths of kielbasa.
  • In the same large mixing bowl you used for the peppers and onions, toss the pierogies with the remaining ingredients to coat, then arrange those in the center of the sheet pan. The goal is to get as many pierogies touching the surface of the pan as possible. Try not to have multiple layers of pierogies. Place the pan in the oven. After 15 minutes, try to remember to flip the pierogies over, having any that weren't touching the pan do so now. If you forget, it's not a disaster, but they'll be better if you remember.
  • Bake an additional 15 minutes, for a total of 30 minutes or until the pierogies are puffy and beginning to show signs of golden brown around the edges, the sausages are plump, and the onions are crisp tender. Serve immediately with a nice salad.

1 dozen frozen potato and onion pierogies
1 (10 ounce) can cream of mushroom soup
5 ounces chopped fresh spinach or 1 box frozen chopped spinach
2 tablespoons chopped onions
1 garlic clove
1/2 teaspoon olive oil
1/4 cup mozzarella cheese
1/4 cup parmesan cheese

Steps:

  • Thaw 1 dozen frozen pierogies in boiling water for 3-5 minutes uncovered. Drain.
  • Preheat oven to 350 degrees.
  • Finely chop onion.
  • Mince garlic.
  • Saute fresh spinach in olive oil. Not neccesary if using frozen spinach, just thaw and squeeze water out of it. Remove from pan.
  • Saute onion add more olive oil if needed.
  • Stir garlic into onion and just heat through.Add soup and warm.
  • Grease 13x9 pan.
  • Drizzle 2 tablespoons of sauce on bottom of dish.
  • Place pierogies in single layer.
  • Put spinach on top of each pierogie.
  • Pour rest of sauce evenly over top of spinach and pierogies.
  • Top with mozzarella and parmesan cheese.
  • Bake at 350 degrees covered for 20 minutes.

1 teaspoon olive oil
1 medium onion, chopped
1 tablespoon minced garlic
1 tablespoon minced fresh basil
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup meatless pasta sauce
1 package (14 ounces) frozen potato and cheese pierogi, thawed
1-1/2 cups frozen chopped spinach, thawed and squeezed dry
1 large egg, room temperature, lightly beaten
1 cup frozen cubed butternut squash (about 5 ounces)
1-1/2 cups shredded part-skim mozzarella cheese
1/2 cup sour cream, optional

Steps:

  • Preheat oven to 350°. Line a 9x5-in. loaf pan with foil, letting ends extend up sides; grease foil., In a small skillet, heat oil over medium-high heat. Add onion; cook and stir until tender, 6-8 minutes. Add garlic, basil, salt and pepper; cook 1 minute longer. Remove from the heat., Spread 1/2 cup pasta sauce into prepared pan. Top with pierogi; press firmly. Top with onion mixture. Mix spinach and egg; spoon over onion mixture. Spread squash evenly over spinach; spoon remaining 1/2 cup pasta sauce over top. Sprinkle with cheese. Bake until bubbly and cheese is golden brown, 55-65 minutes., Let stand 10 minutes. Lifting with foil, remove from pan. Cut into slices. Serve with sour cream, if desired.
