SPICY SOUTHWEST CHICKEN SANDWICH

6 sun-dried tomatoes packed in oil, chopped
1 chipotle chile, canned
2 tablespoons adobo sauce
2 tablespoons water
1/4 cup olive oil
1 tablespoon balsamic vinegar
2 teaspoons Dijon mustard
1 teaspoon light brown sugar
salt
black pepper, freshly ground
1 avocado, ripe and pitted
1/4 cup fresh cilantro, chopped
1 lime, juice of
2 1/2 cups chicken, thinly sliced
4 slices bacon, thick, cooked until crisp (optional)
1 large tomatoes, ripe, cored and thinly sliced
1/2 red onion, thinly sliced
8 slices focaccia bread or 8 slices sourdough bread, lightly toasted

Steps:

  • 1. In a blender, mini-chop, or food processor, pulse the sun-dried tomatoes, chipotle, adobo sauce, water, oil, vinegar, mustard, and brown sugar together until smooth. Season with salt and pepper to taste and pulse again. Transfer to a small bowl.
  • 2. In another small bowl, mash the avocado with half the cilantro and all of the lime juice. Season generously with salt and pepper to taste.
  • 3. Spread 4 of the slices of bread with the avocado mixture. Spread the remaining 4 pieces of bread with the sun-dried tomato-and-chipotle mixture, then layer on the chicken, bacon, tomato, onion, the remaining cilantro, and the bread. Cut in half and serve immediately.

Number Of Ingredients 11

4 tablespoons mayonnaise
2 tablespoons chopped fresh cilantro
1 large garlic clove, pressed
1 small jalapeño chili, minced
1/2 teaspoon ground cumin
6 slices hickory-smoked bacon
4 slices sourdough bread
8 thin slices smoked turkey (about 4 ounces)
4 large tomato slices
1/2 avocado, pitted, peeled, sliced
Romaine lettuce leaves

Steps:

  • Mix first 5 ingredients in small bowl. Cover and refrigerate until ready to use. Cook bacon in heavy large skillet over medium heat until crisp. Transfer to paper towels and drain. Toast bread. Spread mayonnaise mixture evenly over bread slices. Cover 2 bread slices with turkey, then tomato, avocado and bacon. Season generously with salt and pepper. Top with lettuce and remaining bread slices. Cut diagonally into quarters. Skewer each with frilly toothpick if desired and serve.

I saw Sara Moulton make this sandwich on Food Network. My friend Dan loves it and is always thrilled when I make it for him. It is a great sandwich to serve while watching football on TV. It's pretty spicy, so adjust accordingly.

1 loaf ciabatta
1 cup mayonnaise
2 chipotle chiles in adobo
2 large grilled chicken breasts, sliced
1 Hass avocado, sliced
1 -2 tomatoes, sliced
1 -2 cup monterey jack pepper cheese, grated

Steps:

  • Preheat oven to 350°F.
  • Split loaf in half lengthwise.
  • Blend mayo and chipotle in a food processor until smooth. Spread on both halves of ciabatta.
  • Layer sliced chicken, avocado, tomatoes and jack cheese on bottom half of ciabatta.
  • Cover with top half of loaf and wrap in foil.
  • Bake for 10-15 minutes or until cheese is melted.
  • Slice into four pieces.

1 teaspoon fresh cilantro, finely chopped

2 garlic cloves, minced
4 cups cooked chicken, shredded
1/4 cup red bell pepper, chopped
1/4 cup avocado, chopped
8 slices sourdough bread, toasted
8 slices tomatoes
4 romaine lettuce leaves

Steps:

  • Combine first 6 ingredients in a large bowl.
  • Stir in chicken, pepper and avocado.
  • Divide chicken mixture evenly among 4 bread slices. Top each with 2 tomato slices and 1 lettuce leaf.

A delicious southwestern recipe that includes black beans. I use mild salsa, but if you like it spicy, use hot salsa. This is one of my favorite recipes.

1 pound lean ground beef
2 cloves garlic, minced
1 onion, chopped
2 teaspoons chili powder
2 (15 ounce) cans black beans, rinsed and drained
2 (8.75 ounce) cans whole kernel corn, drained
1 (16 ounce) container sour cream
2 cups fresh salsa
5 cups crushed plain tortilla chips
3 cups shredded Cheddar cheese
1 large fresh tomato, finely chopped
3 green onions, chopped

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium skillet over medium heat, brown the ground beef with the garlic and onion; drain.
  • In a large mixing bowl, combine the meat mixture, chili powder, black beans, corn, sour cream and salsa. Stir until well blended.
  • Into a 9x13 inch baking dish, spoon enough of the beef mixture to cover the bottom. Arrange half of the crushed tortilla chips on top of the meat mixture and layer with 1 cup of Cheddar cheese. Spoon another layer of the meat mixture on top of the cheese layer, cover with remaining chips and layer with 1 cup of cheese. Spread final layer of meat mixture on top and sprinkle the remaining 1 cup of cheese on top. Top with diced tomato and green onions.
  • Bake in the preheated oven for 40 minutes. Let cool for 10 minutes before serving.

8 large egg whites
1/4 cup shredded reduced-fat Mexican cheese blend

  • In a large nonstick skillet, heat oil over medium-high heat. Add onion, mushrooms, peppers, chilies and garlic; cook and stir until peppers are crisp-tender. Remove from pan and keep warm., In a small bowl, whisk egg whites and cheese until blended. Add egg white mixture to pan; cook and stir over medium heat until egg whites begin to set and no liquid egg remains. , Spoon egg white mixture across center of each tortilla; top with vegetable mixture. 1/2 teaspoon chili powder
1/2 teaspoon ground cumin

8 slices Italian bread
3/4-1 lb thinly sliced cooked turkey
2 medium tomatoes, thinly sliced
