This is good for my husband's lunches and something my 12-year-old can eat without much hassle. My family loves these. They are quick and easy to make for lunches on busy days.

cooking spray
1 pound ground turkey
1 small onion, diced
1 (15 ounce) can sloppy joe sauce
1 cup shredded Cheddar cheese
14 egg roll wrappers (such as Nasoya®), or as needed
⅓ cup olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a baking sheet with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir turkey and onion in the hot skillet until turkey is completely browned, 5 to 7 minutes.
  • Stir sloppy joe sauce into the turkey and onion mixture; simmer until slightly thickened, about 5 minutes. Remove skillet from heat and stir Cheddar cheese into the turkey mixture until melted.
  • Lay an egg roll wrapper onto a flat surface. Spoon about 2 tablespoons of the turkey mixture down the center of the wrapper making a line that reaches to within an inch of 2 opposing corners. Fold the near corners over the filling so the points overlap the filling. Fold one of the remaining corners over the filling and roll to form a log. Repeat filling and rolling with remaining filling and wrappers until all filling is used. Brush olive oil over the rolls to coat and arrange onto the prepared baking sheet.
  • Bake rolls in the preheated oven until lightly browned and crispy, 12 to 15 minutes.

Packed with a sloppy Joe beef mixture, melted cheese, and classic toppings, these crispy oven baked tacos are a great recipe for a quick and easy family dinner or a crowd!

1 tablespoon extra-virgin olive oil
1 pound lean ground beef
1 small sweet onion (, diced)
1/2 small green bell pepper (, diced)
2 cloves garlic (, minced)
1 tablespoon tomato paste
1/2 cup ketchup
1/3 cup water
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
2 teaspoons yellow mustard
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
10 Stand and Stuff Taco Shells
2 1/2 cups shredded Mexican Blend Cheese (, divided)
sour cream, salsa, jalapeños, lettuce, or any of your taco favorites (, for serving)

Steps:

  • Warm oil in a large nonstick skillet over medium-high heat. Add beef, onion, and bell pepper; breaking up the meat into crumbles with a wooden spoon. Cook for about 5 minutes until beef is cooked through and vegetables are tender. Stir in garlic and cook until fragrant, about 30 seconds. Drain off grease.
  • Stir in tomato paste until thoroughly combined.
  • Add in ketchup, water, brown sugar, Worcestershire, mustard, salt, pepper, and red pepper flakes. Stir well to combine.
  • Cook over medium heat for 10 minutes until mixture has thickened.
  • In the meantime, preheat oven to 375 degrees F. Coat a 9x13 baking dish with nonstick spray.
  • Place the taco shells in the baking dish, standing up. (I'm able to fit 10 taco shells in the dish by adding 2 on each side.)
  • Bake the taco shells for 5 minutes by themselves to allow them to crisp up. Remove from the oven.
  • Sprinkle a little cheese into the bottom of each taco shell (this helps create a barrier between the wet meat and shell, to keep them crispy.) Top with the sloppy Joe mixture.
  • Sprinkle each shell generously with the remaining shredded cheese.
  • Bake for about 5 minutes or until cheese is fully melted and the edges of the shells are browned.
  • Remove from the oven and top with your favorite items.
  • Eat right away and enjoy!

¾ cup ketchup

1 pack dinner roll
½ cup shredded cheddar cheese
2 tablespoons butter, melted
sesame seed

Steps:

  • Preheat oven to 350°F (180°C).
  • In a saucepan over medium heat, add the ground beef and sprinkle with salt and pepper.
  • Using a spoon, break up the meat and stir until browned.
  • Add the onion and garlic and continue to cook until the onions are translucent.
  • Add the ketchup, mustard, Worcestershire, and brown sugar.
  • Stir until the meat is fully cooked and sauce is evenly combined. Set aside.
  • Cut the dinner rolls in half and place the bottom half in a baking pan.

1/4 cup chopped green pepper
1 tablespoon chopped onion
1 can (8 ounces) tomato sauce
1/2 cup ketchup
2 tablespoons grated Parmesan cheese
3/4 teaspoon garlic powder, divided
1/2 teaspoon fennel seed, crushed
1/4 teaspoon dried oregano
3 tablespoons butter, melted
1/2 teaspoon paprika
4 kaiser rolls, split
4 slices mozzarella cheese

Steps:

  • In a skillet, cook beef, green pepper and onion over medium heat until meat is no longer pink; drain. 2 lb lean ground beef or ground turkey (or a combination of the two)
1 c chopped onion
4 Tbsp all-purpose flour
1 tsp Worcestershire sauce
1 1/2 c ketchup
2 tsp salt (or to taste)
1/4 tsp pepper (or to taste)
1 1/2 c water (more if needed)
1 pkg refrigerator biscuits (my preference is the large buttermilk variety)

Steps:

  • 1. Preheat a cast-iron Dutch oven over medium-high heat.
  • 2. Chop the onion.
  • 3. Place the ground meat and the onion in the Dutch oven.
  • 4. Brown the mixture until the meat is completely cooked and the onion is soft and translucent. Drain any fat off the meat before continuing.
  • 5. After the meat mixture has been browned and drained, add the flour, Worcestershire sauce, ketchup, salt, pepper, and water. If you have a favorite Sloppy Joe recipe, you can certainly use it as the meat mixture for this meal in place of the recipe described to this point. Whatever meat mixture you are using, stir well and bring the mixture to a boil. Be sure the mixture is very moist (but not watery) as it will be baked along with the biscuits.
  • 6. Take the meat mixture off the heat and arrange the refrigerator biscuits evenly over the top of the meat mixture.
  • 7. Bake, uncovered, according to the directions on the biscuit package until the biscuits are golden brown. If you are cooking outdoors with hot briquets and a 12" camp-style Dutch oven (one that has three legs and a lid that is concave and has a lip to hold the briquets in place), place 8 briquets under the cast-iron Dutch oven and 24 on the lid. Bake, covered, until the biscuits are golden brown. If you have never used your cast iron Dutch oven outdoors with briquets, this is a great recipe for starters. It is very easy to get wonderful results! This can also be made in a 12-inch cast iron skillet or an enamel coated Dutch oven.
