BAKED GREEK SHRIMP WITH TOMATOES AND FETA
This traditional Greek recipe disregards the notion that seafood and cheese don't mix, and it works beautifully, resulting in a harmonious balance of flavors. Though it can be made year round with canned tomatoes, it is sensational with fresh sweet ripe ones, so best prepared in summer. Serve it as a main course with rice or potatoes, or in small portions as an appetizer, taverna-style.

Steps:
- Put 4 tablespoons olive oil in a wide skillet over medium heat. Add shallots and garlic, season with salt and pepper and cook, stirring, until softened, about 5 to 8 minutes. Lower heat as necessary to keep mixture from browning. Remove from heat while preparing tomatoes.
- Fill a saucepan with water and bring to a boil. Add whole tomatoes and cook for about 2 minutes, until skins loosen. Immediately plunge tomatoes in a bowl of cold water to cool, then drain. With a paring knife, core tomatoes and slip off skins. Cut tomatoes into thick wedges.
- Heat oven to 400 degrees. Return skillet to stove over medium-high heat. Add tomato wedges and season with salt, pepper and red pepper flakes. Cook, stirring, until mixture is juicy and tomatoes have softened, about 10 minutes. Transfer mixture to a shallow earthenware baking dish.
- Put shrimp in a mixing bowl. Add 1 tablespoon olive oil, season shrimp with salt and pepper and stir to coat. Arrange shrimp over tomato mixture in one layer. Crumble cheese over surface and sprinkle with oregano.
- Bake for 10 to 12 minutes, until tomatoes are bubbling and cheese has browned slightly. Remove from oven and let dish rest for 5 minutes. Sprinkle with mint and serve.

SHRIMP SAGANAKI (GREEK SHRIMP WITH TOMATOES & FETA)
Greek-style shrimp saganaki makes a quick and easy weeknight dinner.

Steps:
- Preheat oven to 400°F; set one oven rack in the middle position and another about 5 inches underneath the broiler.
- Heat the olive oil in a wide oven-proof skillet (see note) over medium-low heat. Add the shallots and garlic and cook, stirring occasionally, until softened, 5 to 7 minutes. Do not brown.
- Add the tomatoes with their juices, salt, pepper, cumin, red pepper flakes, and honey. Bring to a boil, then reduce the heat to medium-low and cook, uncovered, stirring occasionally, until the sauce is thickened, 15 to 20 minutes.
- Off the heat, arrange the shrimp over the tomato sauce in an even layer. Crumble the feta over the shrimp, and then sprinkle with the oregano. Bake for 12 to 15 minutes, until the shrimp are pink and just cooked (the cooking time will depend on the size of the shrimp). Turn on the broiler. Using an oven mitt, carefully transfer the pan to the higher oven rack and broil for 1 to 2 minutes, or until the feta is golden brown in spots. Using an oven mitt, remove the pan from the oven (and immediately place the oven mitt or a dishtowel over the handle of the pan because it's very easy to forget that it is burning hot). Let the shrimp rest for 5 minutes, then sprinkle with mint and serve.
- Note: If you do not have an oven-proof skillet, simply transfer the tomato sauce to a 9-by-13-inch or equivalent broiler-safe baking dish and proceed from there.

Steps:
- Preheat the oven to 400 degrees.
- Heat 2 tablespoons of the olive oil in a 10-or 12-inch heavy ovenproof skillet over medium-low heat. Add the fennel and saute for 8 to 10 minutes, until the fennel is tender. Add the garlic and cook for 1 minute. Add the wine and bring to a boil, scraping up any browned bits. Cook for 2 to 3 minutes, until the liquid is reduced by half. Add the tomatoes with the liquid, tomato paste, oregano, Pernod, salt, and pepper to the skillet. Simmer over medium-low heat, stirring occasionally, for 10 to 15 minutes.
- Arrange the shrimp, tails up, in one layer over the tomato-mixture in the skillet. Scatter the feta evenly over the shrimp. In a small bowl, combine the bread crumbs, parsley, and lemon zest with the remaining 2 tablespoons of olive oil and sprinkle over the shrimp.
- Bake for 15 minutes, until the shrimp are cooked and the bread crumbs are golden brown. Squeeze the juice of 1 lemon over the shrimp. Serve hot with the remaining lemon cut into wedges.

BAKED FETA TOMATO PASTA RECIPE WITH SHRIMP
As much as we try not to be susceptible to hype, for the most part Tik Tok trends have turned out to be legit time and again (we're looking at you, Tik Tok tortilla hack!). The most recent example is the baked feta pasta recipe that originated with Finnish blogger and artist Jenni Häyrinen. Like many of the best recipes, the premise is simple: bake cherry tomatoes, feta and oil until everything is bubbling, then mix with your favorite pasta. It creates a delicious sauce in absolutely no time. We decided to put our own spin on the viral recipe by using more tomatoes, chili flakes instead of chili peppers and lots of garlic, plus cooking shrimp directly from frozen at the same time for some added protein to be mixed in with the pasta. It is quick, easy, delicious, and definitely worth the hype.

Steps:
- Step 1: Preheat oven to 400F. Bring a salted pot of water to a boil.
- Step 2: Rinse the frozen shrimp and place on a baking sheet. Toss with 1 tablespoon olive oil and 1/2 teaspoon salt. Set aside.
- Step 3: Drizzle 1/2 cup olive oil on a second baking sheet. Put the block of feta on the sheet along with 2 pints of cherry or grape tomatoes and 6 to 8 cloves garlic. Sprinkle 1 tablespoon red chili flakes and remaining 1/2 teaspoon salt over feta and tomatoes. Gently toss the tomatoes so they are coated in oil.
- Step 4: Put both baking sheets in the oven. Roast the shrimp for 6 minutes, or until just cooked through. Remove and set aside. Cook the feta and tomatoes for 10 minutes then rotate the pan 180 degrees, turn the heat up to 450, and bake for another 15 to 20 minutes, until the tomatoes are bursting and the feta is slightly browned around the edges and very soft, even a little oozy.
- Step 5: Meanwhile, cook the pasta until al dente. Reserve 1 cup or so of the pasta cooking water then drain the noodles.
- Step 6: Remove the feta and tomatoes from the oven and stir to break up the feta. Add everything on the baking sheet (oil and all) to a large pan or bowl along with the cooked spaghetti and shrimp. Toss to combine. Divide among bowls and top with parsley or basil. Serve.

- Heat the olive oil in a large oven-safe skillet over medium high heat (I like to use a wide, shallow Dutch oven). Add the shallot and bell pepper; sauté until softened, about 5 minutes.
- Turn the heat down. Add the tomatoes, garlic, salt, red pepper flakes, and broth; simmer until the sauce reduces and gets a little darker in color, about 10 minutes.
- While the sauce simmers, grill your sourdough. Melt the butter, brush it on the bread, and grill in a pan (ideally a grill pan) until crispy and golden brown. Wrap in foil and keep warm in the oven.
- Add the shrimp into the tomato sauce in a single layer. The shrimp will cook right in the sauce – keep on the heat for about 5 minutes, flipping the shrimp once, until the shrimp are no longer translucent.
