HOMEMADE CRISPY SEASONED FRENCH FRIES

Homemade Crispy Seasoned French Fries image

My family loves French fries and with 4 children the bag fries from the store just weren't enough and became too expensive. So I tried batter - after all it makes chicken, shrimp, and onion rings crispy so why not potatoes. Now even my husband can't get enough of these French fries. They even stay crispy when you reheat in the microwave.

Provided by Cassie

Categories     Side Dish     Potato Side Dish Recipes

Time 25m

Yield 8

Number Of Ingredients 8

2 ½ pounds russet potatoes, peeled
1 cup all-purpose flour
1 teaspoon garlic salt
1 teaspoon onion salt
1 teaspoon salt
1 teaspoon paprika
½ cup water, or as needed
1 cup vegetable oil for frying

Steps:

  • Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
  • Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
  • Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.

MONTREAL SEASONED OVEN FRIES

Montreal Seasoned Oven Fries image

This is a recipe I litally threw together in a pinch to accompany burgers flavored with montreal steak seasoning. The fries turn out tender on the inside and crispy on the outside with the flavors of montreal steak seasoning. Please be warned, though, that these are lightly salty. DH and I enjoy a bit of saltiness, so that wasn't a problem for us.

  • First, prepare the potatoes. You can peel them if you desire, but it isn't necessary. Just wash them well and slice them into thin French fries.
  • Once you have your fries ready, soak them in cold water for about one hour. You can skip this step if you're crunched for time.
  • After you've soaked your fries (or if you skipped this step) drain them. Be sure to dry your potatoes really well whether you've soaked them or not.
  • Preheat your oven to 425 and lining a cookie sheet with foil. Spread just a bit of olive oil onto the foil to keep your fries from sticking.

  • Cut potatoes in half lengthwise and then slice into steak fry wedges, about 1/4-1/2 inch wide each. (Just make sure they are all about the same size to ensure even cooking.)
  • Soak the fries in a large bowl of water for about 30 minutes or until you’re ready to bake them. (This helps remove some of the starch and makes them crispier in the end.)
  • Drain the potatoes in a colander and then pat them very dry with a dish towel. (This is a VERY important step! They must be really dry.)

  • To prepare the potatoes: wash and peel the potatoes. Cut them into thick wedges. (See Note 1 for cutting instructions). In a large bowl, soak the potatoes in cold water for at least 1 hour, or up to overnight! (Refrigerate, if soaking for more than 4 hours.)
  • To make the secret mixture: combine water and cornstarch in 1-cup measuring cup. Microwave for 1 minute or so, then mix it well until smooth, thick, opaque and gelatinous. Then stir in paprika and garlic powder. (I know, this sounds SO weird, but this's what really make these steak fries the best! I learned this trick from this America's Test Kitchen video and it was a game-changer!!!)
  • To cook the potato wedges: preheat the oven to 425°F. Spray 2 baking sheets with non-stick cooking spray and divide the oil between 2 baking sheets. Spread the oil evenly all over. (I use this pastry brush for this step.)
  • Drain the potato wedges and dry them well with paper towels. Coat the potatoes with the cornstarch mixture.

EASY STEAK FRIES – A COUPLE COOKS
2021-10-02 Steak fries are thick wedge-cut fries that are baked or fried with the skin on. In contrast to French fries, steak fries have a larger, fluffier potato filling and are shaped like a wedge. They can baked or fried, and made with russet or Yukon gold potatoes. Our preference is russet because it makes for a fluffy interior (versus Yukon gold which is more creamy).
