Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Arrange the halibut, scallops, and shrimp in an oven-safe, glass baking dish. Drizzle with wine, butter, and lemon juice. Sprinkle with the seasoning and garlic. Season to taste with salt and pepper.
- Bake in preheated oven until the halibut has turned white, and is flaky, 10 to 12 minutes. Sprinkle with parsley just before serving.

- In a shallow bowl, lightly beat egg. In another bowl, toss potato flakes and bread crumbs with salt and pepper. In a third bowl, toss scallops with flour to coat lightly. Dip in egg, then in potato mixture, patting to adhere. , In a large skillet, heat butter and oil over medium heat. Add scallops; cook until golden brown and scallops are firm and opaque, 2-3 minutes per side.

- Pour melted butter into a 2 quart oval casserole dish. Distribute butter and scallops evenly inside the dish.

- DIRECTIONS 1. Preheat oven to 425 degrees F (220 degrees C). 2. Place scallops, melted butter, garlic, and shallots in a bowl. Season with nutmeg, salt, and pepper. Stir gently to combine. Transfer to a casserole dish. 3. In a separate bowl, combine bread crumbs and olive oil. Sprinkle on top of scallops. 4. Bake in preheated oven until crumbs are brown and scallops are done, about 11 to 14 minutes. Top with parsley, and serve with lemon wedges on the side.

- 1. If you want a great sauce that fits this recipe to a tea, then check out my Hearts of Palm sauce recipe... I got it from a German chef who lived on Grand Cayman Island.
- 2. Preheat oven to 400 degrees F (200 degrees C), and place the rack in the middle position.
- 3. Melt the butter in a small butter warmer, small saucepan, or you could always nuke it in the microwave. Chef's Note: We all use the microwave for a variety of purposes; however, when you use it to melt butter, slow is the way to go... a low setting for about 3 minutes.
- 4. Pour the melted butter into a casserole dish; something around two quarts is perfect. Chef's Note: Since you will be using this dish for presentation, if you have something nice... use it.
- 5. Place the scallops in the dish, and evenly distribute them in rows and columns over the butter.
- 6. Take the breadcrumbs, onion powder, paprika, oregano, minced garlic and parmesan cheese, and combine in a small mixing bowl. Chef's Note: You best tools for doing this are your hands... that way you can break up any lumps.
- 7. Sprinkle the mixture evenly over the scallops.
- 8. Bake until scallops are firm; or until an instant-read thermometer reads 146f (64c) this will take about twenty minutes.
- 9. How to Tell if a Scallop is Fresh Look: A good scallop will be cream colored or light beige. Scallops that are tinged with pink are too old and should be avoided. Moisture: Good scallops will be relatively dry. Scallops sitting in liquid are past their prime. Avoid Scallops that are sitting in a milky liquid. Smell: Fresh scallops have a slightly sweet aroma. Bad scallops smell like sulfur or ammonia. Touch: A fresh scallop will be firm to the touch. Scallops too old to eat are soft and slimy.
- 10. Chef's Note: Microwaving a scallop can cause it to explode... I HATE it when that happens.

- Gather the ingredients. Preheat the oven to 425 F.
- In a large bowl, toss the scallops with the melted butter , garlic, and lemon zest. Season with salt and pepper to taste.
- Spread out in a 2-quart baking dish in an even layer.
- In a small bowl, mix the panko with the olive oil. Sprinkle over the top of the scallops.
- Bake the scallops 10 to 14 minutes, or until just cooked through. The scallops should be opaque throughout.

- Preheat the oven to 400°F and lightly spray an 8 x 10-inch oval baking dish or 2-quart gratin dish with olive oil or nonstick cooking spray.
- Pat the scallops dry then spritz them with a little oil, season with 1/8 teaspoon salt.
- In a small bowl combine the panko, Parmesan, parsley, oregano, 1/8 teaspoon salt and black pepper, to taste.
- Arrange the scallops in a single layer in the prepared dish. Top with the crumb mixture.
- Whisk half of the lemon juice, melted butter, and white wine together and pour over the scallops.
- Bake for 15 minutes, or until the scallops are opaque.
- Set the oven to broil on high and broil second rack from the top until the topping is golden, about 2 to 3 minutes.
- Squeeze the remaining lemon over the scallops and eat right away.

- Preheat the oven to 425°.
- Mix melted butter, salt, and pressed garlic in a small bowl and set it aside.
- Mix Panko bread crumbs and grated Parmesan cheese in another shallow bowl and set it aside.
- Take scallops out of the package and pat each one dry with a paper towel.
- Toss scallops in the melted butter mixture and then coat each one in Panko/Parmesan mixture on all sides.
- Place coated scallops in a baking dish that's large enough to hold them with some space in between each one.
- Carefully pour in remaining melted butter in between and around the scallops. (Don't pour on top.)
- Sprinkle each scallop with some Parmesan cheese and bake for 10-14 minutes, depending on the size.
