4 skinless salmon fillets
1 tbsp olive oil or melted butter
chopped herbs, lemon slices and steamed long-stem broccoli, to serve (optional)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Brush each salmon fillet with the oil or butter and season well.
  • Put the salmon fillets in an ovenproof dish. Cover if you prefer your salmon to be tender, or leave uncovered if you want the flesh to roast slightly.
  • Roast for 10-15 mins (or about 4 mins per 1cm thickness) until just opaque and easily flaked with a fork. Serve with a sprinkling of chopped herbs, lemon slices and steamed long-stem broccoli, if you like.

Steps:

  • Preheat oven to 375. Mix together marinade of choice (with exception of mango salsa), then add to a large Ziploc bag along with salmon fillets and marinate for 20 minutes.
  • Add marinated salmon to a baking sheet lined with parchment paper, along with optional veggies of choice. Bake for 12 minutes until salmon is fully cooked and flaky. Serve and enjoy!
  • If making mango salsa, add 1 tbsp olive oil to salmon fillets and season with salt and pepper. Bake for 12 minutes until salmon is fully cooked and flaky. Remove salmon from oven and top with mango salsa - serve and enjoy!

1 pound salmon fillets, skin removed
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon dried dill weed

¼ cup diced red onion
1 tablespoon lemon juice

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Place asparagus and water in a covered, microwave-safe, and vented bowl; steam in the microwave for 5 minutes.
  • Rub salmon with olive oil, 1 tablespoon lemon juice, dill weed, salt, and black pepper; place in a foil oven bag. Toss spinach, capers, red onion, and asparagus with salt, black pepper, and 1 tablespoon lemon juice in the foil oven bag. Place vegetables on top of salmon. 2 tablespoons light brown sugar
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
1/4 cup panko breadcrumbs
1/2 cup parsley leaves, chopped
2 tablespoons unsalted butter, melted
1 1/2 pounds skin-on salmon fillet, preferably center-cut
1 tablespoon Dijon

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil. Mix the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon kosher salt and a generous amount of freshly ground black pepper in a small bowl. Mix the panko with the parsley, butter, 1/4 teaspoon kosher salt and a few grinds of black pepper in another small bowl.
  • Place the salmon skin-side down on the prepared baking sheet and spread the surface with the Dijon. Press the brown sugar mixture all over the salmon then top with the breadcrumb mixture. Crimp all four sides of the foil to create a border around the salmon, this will help collect the juices so they don't spread and burn. Bake until the breadcrumbs are golden brown, and the salmon is firm and flakes easily when pressed, 15 to 18 minutes. Cut into four equal portions for serving.

1 (8 ounce) salmon fillet
salt and ground black pepper to taste
¼ cup chopped basil leaves
olive oil cooking spray
1 lemon, thinly sliced

Steps:

  • Place an oven rack in the lowest position in oven and preheat oven to 400 degrees F (200 degrees C).
  • Place salmon fillet with skin side down in the middle of a large piece of parchment paper; season with salt and black pepper. Cut 2 3-inch slits into the fish with a sharp knife. Stuff chopped basil leaves into the slits. Spray fillet with cooking spray and arrange lemon slices on top.
  • Fold edges of parchment paper over the fish several times to seal into an airtight packet. Place sealed packet onto a baking sheet.
  • Bake fish on the bottom rack of oven until salmon flakes easily and meat is pink and opaque with an interior of slightly darker pink color, about 25 minutes. An instant-read meat thermometer inserted into the thickest part of the fillet should read at least 145 degrees F (65 degrees C). To serve, cut the parchment paper open and remove lemon slices before plating fish.

  • Heat oven to 350. Place 4-6 lemon slices on each sheet of foil. Lay Salmon on top of lemon. Place 3 pats of butter on top of the fish and season with salt and pepper. Fold foil into a bag (or pouch) and seal. Cook for about 10-15 minutes (longer for thicker fillets, less time for smaller ones), or until salmon flakes easily with a fork.

1/4 cup Dijon mustard
