3 Tbsp butter
2 4-oz fresh salmon fillets

1/2 lb fresh asparagus spears
trimmed
1/4 tsp salt
1/8 tsp black pepper
1/3 cup mayonnaise
1 Tbsp chopped green onion
2 tsp chopped fresh flat-leaf parsley
1/4 tsp finely shredded lemon peel
1 tsp lemon juice

Steps:

  • Melt the butter. Preheat oven to 400°F. In a saucepan, melt butter over medium. Prep the salmon. Place salmon, skin side down, on one side of a baking sheet. Add asparagus to the other side of the baking sheet. Drizzle melted butter over salmon and asparagus; sprinkle with salt and pepper. Bake 12 to 15 minutes or until salmon is cooked through and flakes easily with a fork, and asparagus is tender. Make the topping. In a small bowl, combine mayonnaise, green onion, parsley, lemon peel, and lemon juice. Serve with roasted salmon and asparagus. If desired, top with additional parsley.

2 garlic cloves, minced
Juice and zest from 1 lemon
1/4 cup ghee
2 tbsp. fresh parsley, minced
1 lemon, sliced
Sea salt and freshly ground black pepper
2 lbs. fresh asparagus, trimmed
1/4 cup sun-dried tomatoes
2 garlic cloves, minced
1/4 cup olive oil
2 tbsp. fresh parsley, minced
Sea salt and freshly ground black pepper

Steps:

  • Preheat oven to 375 F. In a large bowl combine the asparagus, sun dried tomatoes, garlic, olive oil and season to taste. Melt ghee in a saucepan over medium heat, add garlic, lemon zest and lemon juice. Whisk everything until well blended, and simmer 10 to 12 minutes. Season the salmon to taste, and place on a baking sheet. Drizzle the salmon filets with the ghee sauce, and top each filet with lemon slices. Lay the asparagus around the salmon filets on the baking sheet and place in the oven. Bake everything in the oven for 15 to 20 minutes. Top with fresh parsley and serve.

1 tablespoon lemon juice

16 ounces salmon fillets
36 asparagus spears

Steps:

  • In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley.
  • Line medium glass baking dish with aluminum foil (needs to be twice the size of dish - see below).
  • Line bottom of dish with asparagus spears.
  • Place salmon fillets on top of asparagus.
  • Cover with the marinade.
  • Marinate in the refrigerator about 1 hour, turning salmon occasionally.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Pull the foil over the top of the contents and crimp to completely seal it.
  • Bake 35 to 40 minutes.

2 (10 ounce) packages frozen cut asparagus, thawed and well drained
8 medium green onions, sliced (1/2 cup)
3 cups shredded swiss cheese (12 ounces)
2 (7 ounce) cans salmon or 2 (7 ounce) cans tuna, drained and flaked
1 1/2 cups original Bisquick baking mix
1 1/2 cups milk
1 tablespoon chopped fresh basil or 1 teaspoon dried basil leaves
1/4 teaspoon pepper
4 eggs

Steps:

  • Heat oven to 400º. Spray rectangular baking dish, 13x9x2 inches, with cooking spray. Sprinkle asparagus, onions, 1 1/2 cups of the cheese and the salmon in baking dish.
  • Stir remaining ingredients except cheese until blended. Pour into baking dish.
  • Bake 40 to 45 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1 1/2 cups cheese. Bake about 2 minutes or until cheese is melted. Cool 5 minutes before cutting.
