- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain pasta as directed on package; return to pasta-cooking pot.
- Meanwhile, in 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain, and add to pot with pasta.
- Add pasta sauce and 1 cup of the mozzarella cheese to pot with pasta and beef; stir to combine, then pour into baking dish. Sprinkle with remaining 1 cup mozzarella cheese and the Parmesan cheese.
- Cover with foil; bake 25 to 30 minutes or until casserole is at least 165°F in center. Garnish with basil.

- Preheat oven to 350 degrees F. Butter a 9 x 13-inch baking dish; set aside.
- Boil pasta in salted water, 2 minutes shorter than package directions; drain, rinse to stop the cooking process and set aside.
- Meanwhile, heat oil in a deep sided skillet or large saucepan. Add onion and bell pepper; cook until softened about 3 minutes, add garlic and cook another minute.
- Add ground beef and sausage and cook until no longer pink, breaking up meat, but leaving in large chunks. Drain off any excess fat.
- Add seasonings, pasta sauce and canned tomatoes; bring to a boil, reduce to simmer and cook for 20 minutes.
- Remove bay leaves, taste and adjust seasonings, adding salt, only if needed. Add cooked pasta to meat sauce and mix together.
- Mix together cheeses in a separate bowl. Layer 1/2 of the pasta and meat sauce in prepared baking dish, dabbing 1/2 of the cream of mushroom on top. Smooth soup out. Sprinkle on half the cheese mix and repeat layers.
- Cover and bake at 350 degrees F for 25 minutes; uncover and bake another 5 minutes or until bubbly.

- Preheat oven to 400 degrees
- Cook the rotini pasta according to package directions. Remove from the boiling water when it reaches al dente (with a bite to it), drain.
- Meanwhile, brown the ground beef in a nice, deep skillet until it's just slightly pink in the middle. If the ground beef renders a lot of fat, drain the pan before adding the sauce.
- Add the marinara sauce to the same pan with the ground beef and cook until just heated through.
- In a small bowl, combine the ricotta cheese, parsley, black pepper and parmigiano-reggiano cheese.
- In a large baking dish, layer the sauce, pasta, ricotta mixture and mozzarella until the pan is almost full. The final layer should be the mozzarella cheese.
- Bake for 30-35 minutes.
- Let cool slightly and garnish with fresh basil.
- Serve w/ a tossed salad and warm bread.

BAKED BAKED TRI COLOR ROTINI WITH HOMEMADE MEAT SAUCE

- Start by making the sauce, use an 8 quart stockpot over medium heat and pour in olive oil, add red pepper flakes and whole garlic cloves and simmer until clove soften and start to turn light brown. Add onion and saute for about 5-7 minutes. Add the diced tomatoes stir together and add 1/2 of the seasonings. Bring to a steady simmer and let it reduce for about 20 minutes. Take an immursion blender and blend together all the ingredients into a nice thick sauce. Add the tomato sauce and the other half of the ingredients and stir. Let this simmer for a couple of hours stirring occasionally. Brown the ground beef; work in batches if necessary. Season the meat with plenty of kosher salt, freshly ground black pepper and oregano. Drain and divide meat in half. Cook the pasta in three pound batches in boiling salted water; drain and rinse with cold water. In a very large mixing bowl add half the pasta, sauce and meat and mix together. Divide into two half pans and repeat this step with the other half of pasta, meat and sauce. Lastly cover the pasta generously with shredded mozerella and put under broiler for 5 minutes.

- In a large pot cook rotini pasta in boiling salted water until al dente. Drain.
- Cook ground turkey or beef in medium skillet until brown. Add the diced onion, salt and pepper. Mix in half of the jar of spaghetti sauce.
