1 pound ground beef (I use 90% lean)
1 pound mild Italian sausage (casings removed)
1/2 cup onion (finely chopped)
2 teaspoons garlic (minced)
24 ounce jar marinara sauce
8 ounce can tomato sauce
salt and pepper to taste
16 ounces rigatoni pasta (cooked according to package directions)
2 cups mozzarella cheese (shredded)
2 tablespoons chopped parsley
cooking spray

Steps:

  • Preheat the oven to 350 degrees F. Coat a 9"x13" pan with cooking spray.

1 medium onion, chopped
1 small green pepper, diced
2 tablespoons canola oil
1 can (28 ounces) diced tomatoes, drained
1 can (8 ounces) tomato sauce
1 can (6 ounces) tomato paste
3/4 cup water
1 jar (4-1/2 ounces) sliced mushrooms, drained
1/4 cup minced fresh parsley
3 garlic cloves, minced
1 bay leaf
2 teaspoons sugar
1-1/2 teaspoons salt
1 teaspoon oregano
1/4 teaspoon pepper
1 package (16 ounces) rigatoni
2 tablespoons butter
2 large eggs, lightly beaten
1 carton (15 ounces) ricotta cheese
1/2 cup grated Parmesan cheese
Additional Parmesan cheese

Steps:

  • In a large skillet, saute onion and green pepper in oil until tender. Add the tomatoes, sauce, paste, water, mushrooms, parsley, garlic and seasonings. Simmer, uncovered, for 30 minutes. Discard bay leaf. , Meanwhile, cook pasta according to package directions; drain and toss with butter. In a small bowl, combine the eggs, ricotta and Parmesan cheese. Stir into rigatoni mixture. Transfer to a 3-qt. baking dish; top with tomato mixture., Bake, uncovered, at 350° for 30-40 minutes or until heated through. Sprinkle with additional Parmesan cheese.

This recipe is requested weekly at my house and thats fine by me! It is so cheap and quick to prepare, but it tastes like it was a lot of work and feeds a crowd. Adults and children both love this one. I serve it with rolls or garlic bread and am out of the kitchen in a flash.

1 (16 ounce) box rigatoni pasta
1 (14 ounce) jar pizza sauce
1 (8 ounce) package pepperoni
4 cups shredded colby-monterey jack cheese
2 (4 ounce) cans sliced mushrooms, drained

Steps:

  • Cook pasta according to package directions in 5 quart Dutch oven or pot (non-stick works best). Drain well and return to pot.
  • Add pizza sauce and mushrooms; stir well.
  • Separate pepperoni and add to pot.
  • Add cheese and stir until cheese is melted and is heated through.

1 tablespoon olive oil
1 large onion, chopped
2 pounds mild Italian sausage links, casings removed
2 (28 ounce) cans Italian-style crushed tomatoes, undrained
2 cups water
3 tablespoons chopped fresh basil
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh parsley
1 ½ (16 ounce) packages rigatoni pasta
1 pound mozzarella cheese, shredded
1 ½ cups freshly shredded Parmesan cheese, divided
aluminum foil

Steps:

  • Heat oil in a large saucepan over medium heat. Add onion and cook until soft, 3 to 4 minutes. Add sausage; stir to break up lumps and cook until lightly browned and crumbly, 6 to 8 minutes. Drain and discard grease.
  • Add undrained tomatoes, water, basil, oregano, and parsley to the pan; bring to a boil over medium heat. Reduce heat to low and cook, partially covered, for 25 minutes.
  • While the sauce is cooking, preheat the oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, 10 to 12 minutes. Drain, rinse under cool water, and drain again. Transfer to a large bowl and set aside.
  • Uncover the sauce and increase heat to medium. Cook, stirring occasionally, until sauce thickens, 6 to 8 minutes. Remove from the heat.
  • Add 2/3 of the sauce to the pasta; toss to combine. Stir in mozzarella cheese and 1 cup Parmesan cheese. Transfer to a 9x13-inch baking dish, pour remaining sauce over top, and cover with aluminum foil.
  • Bake in the preheated oven for 25 minutes. Uncover, sprinkle with remaining Parmesan, and bake until lightly browned, about 10 minutes longer.

2 pounds dry ziti or penne pasta
1 cup chopped onion (frozen is fine)
2 pounds lean ground beef
1 hot Italian sausage link, crumbled (optional)
4 (26-ounce) jars spaghetti sauce
3/4 pound (12 oz) sliced provolone (not smoked)
1 cup sour cream
1 egg, beaten
1 (16-oz) carton whole milk ricotta cheese
3/4 pound (4 cups) mozzarella cheese, shredded
1/2-1 cup freshly grated Parmesan cheese
1 TB Italian seasoning (optional)

Steps:

  • Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.
  • In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.
  • In medium bowl, stir together ricotta, sour cream, egg & Italian seasoning.
  • Spray one jumbo or two large aluminum foil pans with cooking spray.
  • Layer ingredients as follows:
  • Half of the sauce
  • Half of the ziti
  • Half of the Provolone cheese,
  • Half of the mozzarella
  • Layer remaining sauce, ziti, provolone & mozzarella.
  • Spread all of ricotta/sour cream mixture on top.
  • Sprinkle parmesan on top.
  • Bake at 350 degrees until bubbly.
  • IF FREEZING:
  • Assemble (but do not cook) ziti.
  • Wrap well, label, and freeze.
  • TO COOK FROM FROZEN:
  • Place in fridge to thaw a few days before serving.
  • Bake at 350 until bubbly.
  • Allow to rest at least a half hour before serving.
