Easy One-Skillet Sausage and Peppers with Rice image

This easy one-skillet recipe combines Italian sausage and peppers with sweet Vidalia onions and rice to make a quick dinner that's ready in 30 minutes!

3 tablespoons olive oil
1 pound Johnsonville Fresh Italian Hot Sausage Links, de-cased (Johnsonville Fresh Italian Hot Ground Sausage or mild sausage may be substituted)
2 cups sweet Vidalia or yellow onion, peeled and diced small (about 1 large onion)
2/3 cup red bell pepper, seeded and diced small
2/3 cup yellow bell pepper, seeded and diced small
3 to 4 garlic cloves, peeled and finely minced
2 cups dry/uncooked minute or instant rice
2 cups low-sodium chicken broth
1/3 to 1/2 cup fresh Italian flat-leaf parsley leaves, finely minced (stems discarded)
1/2 teaspoon salt, or to taste
1/2 teaspoon pepper, or to taste

Steps:

  • To a large skillet, add the olive oil, sausage, onion, and sauté for about 8 minutes over medium-high heat, or until sausage is cooked through and onions are lightly golden browned. Stir and flip intermittently.
  • Add the peppers, garlic, and sauté for 1 to 2 minutes. Stir intermittently.
  • Turn the heat to medium-low, and add the rice, chicken broth, and cook covered for about 5 to 10 minutes or until rice is tender, done, and all liquid has been absorbed.
  • Turn off the heat, add the parsley, and stir to combine.
  • Taste dish and add salt and pepper, to taste. Serve immediately. Dish will keep airtight in the fridge for 5 days. Reheat gently as necessary.

4 celery ribs, thinly sliced
1 large onion, chopped
1 large green pepper, chopped
4-1/2 cups water
3/4 cup dry chicken noodle soup mix
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup uncooked long grain rice
1/4 cup dry bread crumbs
2 tablespoons butter, melted

Steps:

  • In a large skillet, cook the sausage, celery, onion and green pepper over medium heat until meat is no longer pink and vegetables are tender; drain. In a large saucepan, bring water to a boil; add dry soup mix. Reduce heat; simmer, uncovered, for 5 minutes or until the noodles are tender. Stir in canned soup, rice and sausage mixture; mix well. , Transfer to a greased 13-in. x 9-in. baking dish. Cover and bake at 350° for 40 minutes. Toss bread crumbs and butter; sprinkle over rice mixture. Bake, uncovered, for 10-15 minutes or until rice is tender. Let stand for 10 minutes before serving.

1 (10.5 ounce) can condensed cream of mushroom soup, NOT diluted
¾ cup water
1 cup uncooked long grain white rice
14.5 ounces diced tomatoes with basil, garlic and oregano, drained
1 sweet bell pepper (any color), diced
1 sweet onion, diced
12 ounces fully-cooked Italian sausage, sliced into rounds (I used Aidell's Italian Style Smoked Chicken Sausage)*
Salt and pepper

Steps:

  • Preheat oven to 375 degrees F. Spray a 3 quart baking dish with cooking spray.
  • Add cream of mushroom soup and water to the prepared dish. Whisk together until completely combined.
  • Stir in uncooked rice, tomatoes, bell pepper, and onion. Season with about ½ teaspoon salt and ¼ teaspoon pepper. Stir again.
  • Cover tightly with foil and bake for 30 minutes. Remove from oven and stir in sausage. Cover again, return to oven, and bake for 30 more minutes.
  • At this point, give the casserole a stir and check the rice for doneness. If the rice isn't completely tender, cover the dish and continue baking for 10-15 more minutes, or until most of the liquid is absorbed and rice is cooked.

1 pound spicy or sweet Italian sausage
3 tablespoons extra-virgin olive oil
1 small onion, thinly sliced
1 tablespoon minced garlic (from 3 cloves)
1 large orange or red bell pepper, ribs and seeds removed, cut into 1/4-inch slices
1 1/2 cups Arborio rice
3 cups low-sodium chicken broth
Coarse salt and freshly ground pepper
2 small ears fresh corn, husks and silks removed, cut into 1-inch rounds
Cilantro leaves, for serving

Steps:

  • Preheat oven to 375 degrees. Pierce sausage all over with the tip of a paring knife. In a large straight-sided ovenproof skillet, heat 1 tablespoon oil over medium-high. Add sausage and cook, turning occasionally, until browned, about 3 minutes. Transfer to a plate.
  • Add remaining 2 tablespoons oil to skillet along with onion, garlic, and bell pepper. Cook, stirring occasionally, until onion is translucent, about 3 minutes. Stir in rice, then broth; season with salt and pepper. Return sausage to pan and bring liquid to a boil. Add corn, cover, and bake until rice is tender and has absorbed all liquid, about 25 minutes. Steps:

  • Preheat oven to 325°. In a large skillet, cook the sausage, green pepper and onion over medium heat until sausage is no longer pink; drain and set aside. , In a large saucepan, melt 3 tablespoons butter over medium heat. 2 3/4 c Chicken broth
3 c White rice
1 cn Mushroom thinly sliced
12 oz Italian sausage cut 1/2
1 md Onion finely chopped
1 md Sweet red pepper cut 1/2
1 sm Zucchini halved and sliced

Steps:

  • 1. Heat the oil in a heavy 12 inch skillet over moderately high heat. 2. Add the sausage, and saute for 5 minutes or until browned. 3. Transfer with a slotted spoon to a bowl. 4. Pour off all but 1 tablespoon of the fat from the skillet and discard. 5. Preheat the oven to 350. 6. Add the onion to the skillet and saute stirring for 5 minutes. 7. Add the red pepper, mushrooms and zucchini and saute, stirring occasionally, 5 minutes longer. 8. Stir in the rice tossing to coat. 9. Add the stock, bring to a boil and stir in the Parmesan cheese, basil, pepper and sausage. 10. Transfer the mixture to a lightly oiled, 2 quart casserole. AT this point the casserole can be coled to room temperature and stored in the refrigerator tightly covered for up to 24 hours. 11. Bake covered for 25 minutes. 12. Uncover and bake 10 minutes longer or until almost all the liquid has been absorbed and the rice is tender and the top is slightly crusty. Steps:

  • Place sausages in a dry pan over medium heat until they start to sizzle. Use a spoon or flat wooden spatula to break them up as they cook. Continue to cook until browned and crumbly, 10 to 12 minutes. Remove from the heat. Drain grease if desired.
