PANKO-BREADED FRIED RAZOR CLAMS



Panko-Breaded Fried Razor Clams image

I grew up on the West Coast where these tasty little treats are found. You can vary the amount of ingredients used in the recipe according to the number of clams you have, but be sure to use real Parmesan cheese and only panko crumbs, not regular bread crumbs. Pound the necks with a meat tenderizer, or deep fry them, if desired. These are delicious!!!

6 razor clams, cleaned and dried
2 eggs
1 cup all-purpose flour
salt to taste
black pepper to taste
garlic powder to taste
1 cup panko (Japanese bread crumbs)
¼ cup shredded Parmesan cheese
⅓ cup vegetable oil for frying

Steps:

  • Place a sheet of wax paper on a flat baking sheet sized to fit in your freezer; set aside.
  • Beat eggs together in a bowl. Stir together the four, salt, pepper, and garlic powder in a second bowl. Mix together the panko and Parmesan cheese in a third bowl. Flour the clams well, shaking off any excess. Dip clams into the eggs, then into the panko mixture, pressing it evenly onto the clams. Place on prepared baking sheet, cover with wax paper; freeze until firm.
  • Heat oil in a skillet over medium-high heat. Fry clams until lightly browned, about 1 minute on each side. Do not overcook or they will become tough. Place on paper towels to drain.

½ cup oil for frying, or as needed
1 (4 ounce) packet saltine crackers, finely crushed
½ teaspoon ground black pepper
¼ teaspoon ground cayenne pepper
¼ teaspoon paprika
¼ teaspoon garlic powder
2 eggs, beaten
4 large razor clams, cleaned and dried

Steps:

  • Heat the oil in a large skillet over medium heat.
  • In a bowl, mix crushed crackers with black pepper, cayenne pepper, paprika, and garlic powder. Place eggs in a separate bowl. Dip clams into eggs, then into cracker mixture to evenly coat.
  • Fry clams in the hot oil until golden brown. Do not over cook.

12 razor clams, about 1 pound, rinsed and scrubbed
5 tablespoons extra virgin olive oil
2 cloves garlic, minced
1 inch long piece of ginger, peeled and minced
3 tablespoons minced flat-leaf parsley leaves
1/2 cup dry bread crumbs
Black pepper
1/2 lemon cut in 4 wedges

Steps:

  • Heat oven to 450 degrees. Line a baking sheet large enough to hold clams in a single layer with foil. Use a paring knife to gently pry apart the clamshells and then cut the meat away, discarding any gritty dark parts and a half-inch of the dark, hard siphon. Place clam meat in the better-looking shell half.
  • Pour oil into 10-inch skillet over medium heat. Add garlic and ginger, sauté until softened. Add parsley, sauté briefly, then stir in bread crumbs. Sauté, stirring, until bread crumbs are uniformly moistened with oil and starting to color. Season generously with pepper. Remove from heat.
  • Using a teaspoon, cover each clam with bread crumb mixture, patting it on with the back of the spoon. Do this over the skillet so that any crumbs that fall go back into the pan and are used. Place clams on baking sheet and bake 8 minutes. Transfer to serving platter and garnish with lemon wedges.

Among the world's sweetest, most flavorful clams, razors shine in just about any preparation, and deep-frying in beer batter remains a Northwest tradition. Add zing with spices and lemon zest-and make sure to use a simple lager, since more complex microbrews can overwhelm the flavor. Unlike littleneck clams or mussels, razors require quite a bit of cleaning, but it's worth it. Vegetable oil for frying
1 large egg
1 1/2 cups flour
Zest of 1 lemon
1/2 teaspoon paprika
1/2 teaspoon cayenne
About 1 tsp. salt
1/2 teaspoon pepper
1 bottle (12 oz.) lager beer such as Rainier or Heineken, at room temperature
3 pounds razor clams in the shell*, cleaned; or use 1 1/2 lbs. cleaned razor clam meat or other clam meat, or calamari tubes (cut into rings) and tentacles

Steps:

  • Fill a large, deep pot with 1 1/2 in. oil, insert a deep-fry thermometer, and bring to 375° over medium-high heat. Preheat oven to 200°.
  • Whisk egg in a large bowl to blend. Add flour and seasonings, but don't mix. Add beer just before using (so batter keeps some bubbles; this will make the coating light and crisp) and whisk until smooth.
  • Add clams to batter and stir to coat well. Using a slotted spoon or tongs, lift out a spoonful of clams, draining excess batter; lower into oil, shaking spoon a bit to separate clumps. Stand back (clams may spatter) and cook until golden all over, turning once, 1 1/2 to 2 minutes; adjust heat as needed to keep oil at 375°.
  • Transfer clams to a baking sheet lined with paper towels. Sprinkle lightly with salt and keep warm in oven while you cook remaining clams. Serve immediately with lemon wedges and more salt to taste.
  • How to clean razor clams:
  • Put clams in a colander and pour boiling water over them just until shells open. Rinse with cold water until cool. Gently pull clams from shells, slicing the muscle that attaches to the shell to free the meat.
  • Snip off dark tip of the skinny siphon. With scissors, cut clam lengthwise from siphon to base of the digger (foot) and open.
  • Lay clam flat and cut around slippery tan gills, mouth, and digger to separate them from the rest of the white meat.
  • Squeeze digger so the dark stomach shows through the meat, then snip around it and gills and remove. If a clear rod pops out, discard it as well.
  • Slice digger open lengthwise, open up, and pull out the dark sand vein. The white meat comes out in two neat pieces once you have a little practice. Rinse clam meat.

These turn out perfect without the mess of frying on top of the stove. Our family loves razor clams and I love this method of cooking them without all the mess. Plus they are all done at the same time and nobody has to wait for next batch out of frying pan.

1 1 limit (15)of razor clams
2 c crushed cracker ritz crackers
1 c plain panko crumbs
2 tsp lemon pepper
1/2 tsp garlic powder
2 large eggs
1/4 c cold water
1/2 c butter, melted

Steps:

  • 1. Combine crackers, panko, lemon pepper and garlic in a breading pan.
  • 2. Beat the eggs and water to make the eggs wash and place in another breading pan.
  • 3. Place a wire rack that has been spray with cooking spray on large cookie sheet.
  • 4. Dip clams in egg wash and then in the breading and place on rack close together but not touching until the sheet if full. May have to do two rack depending of the size of the razor clams. Set in the fridge for 30 minutes so the breading has a chance to set.
  • 5. Start broiler .
  • 6. Melt the butter and bring clams out of the fridge and bush liberally with the melted butter.
  • 7. Place under broiler for 2-3 minutes until lightly browned. Turn, repeat and ENJOY !

1 lb razor clams / 15 clams
2 c crushed ritz crackers
1/2 c melted butter/margarine
2 large beaten eggs

Steps:

  • 1. Preheat broiler. Take one limit (15) cleaned razor clams,bodies and diggers. Dip in egg wash, dredge through fine Ritz cracker crumbs and place in single layer on cookie sheet. Drizzle melted butter generously on clams. Broil 1 1/2 minute and turn, broil 1 1/2 minute on other side. Cook bodies and diggers in serparate batches for even cooking. Serve with your favorite tartar or seafood sauce.

Razor clams, cleaned. (The fresher the better)
Eggs, beaten (however many you need for your egg wash).
Ritz Crackers, regular kind (not the low-fat or low-sodium varieties), crushed. Enough to coat the clams.
Butter, melted. (Margarine works)
Dip the cleaned clams in the egg wash.
Coat well with crushed Ritz crackers.
Lay the clams out, single layer, on a greased baking sheet. (Lining the sheet with foil first makes easier clean up)
Drizzle the clams with melted butter, more or less to taste. (Without it you'll get dry clams)

Steps:

  • 1. Put the pan on the top oven rack under the HOT broiler. 2. Broil 3 minutes. Turn over. Broil 3 more minutes, and they're done. Avoid over-cooking or the clams get rubbery. The key is a HOT broiler or oven. You can do this in a HOT (500-degree) oven, without having to turn the clams over, but I'm not sure of the time. I prefer the broiler, thank you. Done right, the clams are fork tender. And with no grease or oil spatter and mess from a frying pan, you'll probably never want to fry a clam again!

  • You'll want to set out a shallow dish/plate with the flour, another dish with the beaten eggs, and another with the Panko. Have a large sheet pan nearby. Begin by coating the clams in the flour, then the egg, followed by a coating of Panko. Place breaded clams onto the large sheet pan.   • Place the sheet pan into the freezer for 30-60 minutes to adhere the coating and prevent the clams for overcooking when frying.

Test the oil to make sure it's hot enough by dropping a small bit of leftover breading into the pot. If the oil rapidly bubbles around the edges, it's ready. If it splatters and pops severely, turn it down a smidge.
  • Set a plate with paper towels on it beside your stove and have a slotted spoon ready. Drop 4-5 clams into the pot at a time, removing when golden brown, after about 60 seconds, being careful not to overcook (or they will become very chewy). Place the clams on paper towels to drain and season with sea salt. Repeat with the remaining clams.
