BAKED QUINOA WITH SPINACH AND CHEESE

Baked Quinoa with Spinach and Cheese image

This is an easy gratin, a comforting casserole that you can serve as a main dish or a side.

Provided by Martha Rose Shulman

Time 45m

Yield Serves 4 to 6

Number Of Ingredients 9

1 6-ounce bag baby spinach
2 tablespoons extra virgin olive oil
1 medium onion, chopped
2 plump garlic cloves
4 cups cooked quinoa, (1 cup uncooked)
2 large eggs
3 ounces Gruyère cheese, grated (3/4 cup)
1 1/2 teaspoons chopped fresh sage
1 ounce Parmesan, grated (1/4 cup)

Steps:

  • Preheat the oven to 400ºF. Oil a 2-quart gratin or baking dish.
  • Heat a medium frying pan or a wide saucepan over medium-high heat. Wash the spinach and without spinning dry, add to the pan and wilt in the liquid left on the leaves after washing. You may have to do this in 2 batches. As soon as the spinach wilts, remove from the heat and rinse with cold water. Squeeze dry and chop. Set aside.
  • Wipe the pan dry and heat 1 tablespoon of the olive oil in it over medium heat. Add the onion and cook, stirring often, until tender, about 5 minutes. Add the garlic and stir with the onion until fragrant, about 1 minute. Stir in the spinach and season with salt and pepper. Remove from the heat.
  • Beat the eggs in a large bowl and add 1/2 teaspoon salt. Stir in the quinoa, the onion and spinach mixture, the Gruyère, and the sage. Add freshly ground pepper and stir the mixture together. Scrape into the gratin dish. Sprinkle the Parmesan over the top and drizzle on the remaining tablespoon of olive oil. Place in the oven and bake until nicely browned on top, about 25 minutes. Remove from the heat, allow to sit for about 5 minutes, and serve.

BUTTERNUT SQUASH QUINOA CASSEROLE

Butternut Squash Quinoa Casserole image

Quinoa with butternut squash; baked with gruyere cheese. I used spinach (because that's what I had), but my sister used kale the other day.

Provided by lrn2trvl

Categories     Low Cholesterol

Time 1h30m

Yield 5 , 5 serving(s)

Number Of Ingredients 15

1 butternut squash
1 cup quinoa
1 1/2 cups water
1 teaspoon salt
1 tablespoon olive oil, divided
4 garlic cloves, minced
4 shallots, diced
1 cup mushroom, sliced
1 red onion, sliced
2 eggs
2 cups frozen spinach, drained
1 cup gruyere cheese, shredded
1 (16 ounce) can black beans, mashed or pureed
salt and pepper
herbs

Steps:

  • Preheat oven to 400 degrees. Grease 2 quart baking dish.
  • Cut squash length-wise and bake about 20 mins, until tender.
  • Rinse quinoa in a fine sieve. Put in pot with water, bring to boil, then simmer about 15mins until water is absorbed. Don't stir until the end.
  • In a pan cook shallots and onions until tender and browned.
  • Add garlic and cook 2-3 mins, careful not to burn shallots.
  • Add onion mixture to cooked quinoa.
  • Cook mushrooms. I added some herbs de Provence to them.
  • Add mushrooms to quinoa.
  • Add salt and pepper to taste.
  • Beat eggs with a fork then mix with quinoa mixture. Add cheese and spinach.
  • When squash is done, remove from oven and scrape out of the skin. Mash a little with a fork then mix with beans then mix into quinoa.
  • Pour into baking dish and bake for 35-45 minutes.

CREAMY CHICKEN QUINOA AND BROCCOLI CASSEROLE

Creamy Chicken Quinoa and Broccoli Casserole image

Creamy Chicken Quinoa and Broccoli Casserole is real food meets comfort food. From scratch, quick and easy, and a big gentle hug loaded with good-for-you ingredients.

Provided by Pinch of Yum

Categories     Dinner

Time 1h15m

Number Of Ingredients 11

2 cups reduced-sodium chicken broth
1 cup 2% milk
1 teaspoon poultry seasoning
1/2 cup flour
2 cups water, divided
1 cup uncooked quinoa, rinsed
1/4 cup cooked, crumbled bacon (optional... sort of)
1 pound boneless skinless chicken breasts
2 teaspoons seasoning (like Emeril's Essence or any basic blend you like)
1/4 cup shredded Gruyere cheese (any kind will work)
3 cups fresh broccoli florets

Steps:

  • Preheat the oven to 400 degrees and generously grease a 9×13 baking dish (seriously, be generous because it really, really sticks to the sides). Bring the chicken broth and 1/2 cup milk to a low boil in a saucepan. Whisk the other 1/2 cup milk with the poultry seasoning and flour; add the mixture to the boiling liquid and whisk until a smooth creamy sauce forms.
  • In a large bowl, mix the sauce from step one, one cup water, quinoa, and bacon and stir to combine. Pour the mixture into the prepared baking dish. Slice the chicken breasts into thin strips and lay the chicken breasts strips over the top of the quinoa mixture. Sprinkle with the seasoning. Bake uncovered for 30 minutes.
  • While the casserole is in the oven, place the broccoli in boiling water for 1 minute until it turns bright green and then run under cold water. Set aside.
  • Remove the casserole from the oven, check the mixture by stirring it around in the pan, and if needed, bake for an additional 10-15 minutes to get the right consistency. When the quinoa and chicken are cooked and the sauce is thickened, add the broccoli and a little bit of water (up to one cup) until the consistency is creamy and smooth and you can stir it up easily in the pan. Top with the cheese and bake for 5 minutes, or just long enough to melt the cheese.
