6 large baking potatoes
1/3 cup butter, softened
6 green onions, sliced
1/4 cup mayonnaise
2 tablespoons crumbled cooked bacon
1-1/2 cups shredded cheddar cheese

Steps:

  • Scrub and pierce potatoes; place on a microwave-safe plate. Microwave, uncovered, on high for 20-23 minutes or until tender, turning once. , Meanwhile, in a small bowl, combine the butter, onions, mayonnaise and bacon; set aside. Cut an X in the top of each potato; fluff pulp with a fork. Top each with 3 tablespoons of butter mixture. Sprinkle with cheese.

1 medium baking potato
1 teaspoon olive oil
½ teaspoon salt
2 teaspoons butter
1 pinch freshly ground black pepper
¼ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Scrub the potato, and pierce the skin several times with a knife or fork. Rub the skin with olive oil, then with salt.
  • Place the potato in the preheated oven, and bake for 90 minutes, or until slightly soft and golden brown. Slice the potato down the center, and serve with butter and black pepper. Sprinkle shredded Cheddar cheese over the top, if desired.

4 russet potatoes, scrubbed
Extra-virgin olive oil
Unsalted butter, for serving (optional)
Coarse salt and freshly ground pepper
Thawed frozen broccoli, shredded cheddar, and crumbled cooked bacon
Thawed frozen edamame and corn, thinly sliced red onion, and soy sauce
Black beans, crumbled cooked bacon, plain yogurt, and thinly sliced scallions

Steps:

4 small russet potatoes (about 1 1/4 pound total)
1/2 cup nonfat Greek-style yogurt or 2/3 cup regular, plain nonfat yogurt
1 tablespoon olive oil
1 tablespoon finely chopped parsley leaves
1 tablespoon finely chopped chives

Steps:

  • Preheat the oven to 450 degrees F.
  • Poke each potato with a fork a few times. Place on a baking sheet lined with foil and bake for 45 to 50 minutes, until they are easily pierced with a knife. Wrap them loosely in the foil for 5 minutes or until ready to serve.
  • If using regular yogurt, place it in a strainer lined with paper towel and set the strainer over a bowl. Let the yogurt drain and thicken for 20 minutes.
  • Combine the Greek-style yogurt or regular thickened yogurt, the oil, parsley and chives of the in a small bowl.
  • Slice the potatoes in half lengthwise and dollop a tablespoon of the creamy herb topping on each half.

The "fat-ness" of the sour cream, butter/margarine & cheese can vary according to my whim. Use herbed sour cream dips to suit your fancy. This is my one-handed response to "please pass me the sour cream, butter, cheese, chives and bacon bits" while I continue eating with the other hand. ;-)

1/2 cup melted butter (or margaine)
1 cup grated cheddar cheese (or your favorite)
3 green onions, minced (or 4 tablespoons minced chives)
8 slices bacon, fried crisp & crumbled (or real bacon bits from a package or jar)

Steps:

  • Mix sour cream, melted butter & cheddar cheese together and refrigerate. (This will keep at least a week - I've tried it.).
  • When ready to serve, let the mixture warm up on the counter for an hour or so (while you bake the spuds)then add green onions & crisp crumbled bacon.
  • Spoon over hot, baked potatoes.

Steps:

  • Preheat the oven to 400 F.
  • Rub the potatoes with olive oil and sprinkle with sea salt, then place on a rimmed baking sheet and bake for 50-60 minutes, until the potatoes are pierced easily with a fork.
  • Cut a slit in the potatoes, lengthwise, then set out alongside the toppings. If you want to keep the potatoes warm, you can place them in a slow cooker on the warm setting. Let everyone serve their own potatoes and enjoy!

Bake 20 minutes and flip with tongs. Bake additional 25 minutes and check for tenderness with a fork. The fork should easily pierce the potato to the center. If not tender, continue baking, up to 15 minutes more depending on size of the potato.
