LOADED SCALLOPED POTATOES WITH BACON, CHEDDAR & CHIVES
Imagine a loaded baked potato topped with bacon, Cheddar and chives combined with the creamy goodness of scalloped potatoes, and you have the ultimate comfort food casserole. This scalloped potato recipe is made healthier than original versions by using low-fat milk in place of heavy cream, but it still tastes just as rich and creamy.

Steps:
- Position racks in upper and lower third of oven; preheat to 425 degrees F.
- Toss potatoes with oil in a large bowl until well coated. Divide between 2 large baking sheets and spread in an even layer. Roast, rotating the pans from top to bottom about halfway through, until tender and beginning to brown, 20 to 25 minutes.
- Meanwhile, cook bacon in a large saucepan over medium heat, stirring frequently, until just crisp, about 3 minutes. Remove the bacon with a slotted spoon to a paper towel-lined plate. Add onion to the pan; cook, stirring frequently, until very soft and golden brown, 5 to 8 minutes. Add flour, salt and pepper; cook, stirring, for 1 minute more. Add milk; cook, stirring and scraping up any brown bits at the bottom of the pan. Increase heat to medium-high; cook, stirring, until the sauce thickens and bubbles, 3 to 5 minutes. Remove from heat.
- When the potatoes are done, remove them from the oven. Preheat the broiler.
- Transfer half the potatoes to a 2-quart broiler-safe baking dish. Spread half the sauce over the potatoes and top with 1/4 cup cheese and 2 tablespoons chives. Add the remaining potatoes, sauce and cheese. Top with the bacon. Broil, watching carefully, until the sauce is bubbling and the cheese is beginning to brown, 1 to 5 minutes depending on your broiler. Let stand 10 minutes. Serve topped with the remaining 2 tablespoons chives.

CHEF'S CHEESE SAUCE FOR BAKED POTATOES
A "loaded" potato with just one sauce! I've been using this delightful sauce for years....it is soooo good. Any leftover sauce is good on most hot vegetables, too. The cook time is for softening the butter. If possible, don't use any substitutions for butter.

Steps:
- Preheat oven to 400 degrees F.
- Skewer the baking potatoes with metal skewers, so they cook through faster and place them directly on the middle oven baking rack for 1 hour and 15 minutes.
- Meantime add the sour cream to a bowl with the whole-grain mustard, salt, white pepper and chopped chives, leaving a teaspoon back to sprinkle on top. Stir all the ingredients together and scatter over the remaining chives. If you are not eating it straight away store it covered in plastic wrap in the refrigerator.
- When the potatoes are ready with a crisp skin and soft inside, remove them from the oven, take them off the skewers and cut a cross in the top of each of them and slightly squeeze them so they open out and place them into bowl. Serve the potatoes with the chive sour cream on the side and have people help themselves.

MAKE CHIVE BUTTER TO USE IN A VARIETY OF RECIPES
Steps:
- Gather the ingredients.
- In a large bowl, mash butter with a potato masher or just squish with hands. You can even cream butter using paddle attachment of a stand mixer-the goal is to get the butter soft enough to be able to incorporate chives.
- Add chopped chives and continue mashing/squishing/mixing butter until fully mixed.
- Spread out a large (1-foot or bigger) square of plastic wrap across work surface, then scoop mixed butter onto plastic. You are now going to roll the butter into a cylinder inside the plastic wrap
- Tie excess plastic wrap at ends of the cylinder into a knot, or just use little pieces of string to tie off the ends. You can even make a string out of a short section of plastic wrap and roll it into a little rope.
- Chill or freeze until needed.

- Place an oven rack in the center position and preheat the oven to 450 degrees F. Line a baking sheet with aluminum foil or parchment paper. Add a layer of cooking spray or olive oil to ensure the potatoes don’t stick.
- Pat the salmon dry with paper towels, then brush the tops with 2 teaspoons olive oil. Sprinkle with salt and pepper and set aside.
- Place the broccoli on one half of the sheet and the potatoes on the other half. Drizzle 2 tablespoons olive oil over the vegetables and toss to coat them evenly, keeping them on their respective sides of the pan. - Roast for 22-25 minutes until the broccoli is crisp and caramelized, stirring and tossing the vegetables midway through.
