Loaded Scalloped Potatoes with Bacon, Cheddar & Chives image

Imagine a loaded baked potato topped with bacon, Cheddar and chives combined with the creamy goodness of scalloped potatoes, and you have the ultimate comfort food casserole. This scalloped potato recipe is made healthier than original versions by using low-fat milk in place of heavy cream, but it still tastes just as rich and creamy.

2 ½ pounds Yukon Gold potatoes, cut into 1/4-inch slices (about 8 cups)
1 tablespoon extra-virgin olive oil
3 strips center-cut bacon (about 2 ounces), chopped
1 small onion, finely chopped (about 1 cup)
3 tablespoons all-purpose flour
½ teaspoon salt
¼ teaspoon white or black pepper
2 ½ cups low-fat milk
½ cup shredded extra-sharp Cheddar cheese, divided
¼ cup chopped fresh chives, divided

Steps:

  • Position racks in upper and lower third of oven; preheat to 425 degrees F.
  • Toss potatoes with oil in a large bowl until well coated. Divide between 2 large baking sheets and spread in an even layer. Roast, rotating the pans from top to bottom about halfway through, until tender and beginning to brown, 20 to 25 minutes.
  • Meanwhile, cook bacon in a large saucepan over medium heat, stirring frequently, until just crisp, about 3 minutes. Remove the bacon with a slotted spoon to a paper towel-lined plate. Add onion to the pan; cook, stirring frequently, until very soft and golden brown, 5 to 8 minutes. Add flour, salt and pepper; cook, stirring, for 1 minute more. Add milk; cook, stirring and scraping up any brown bits at the bottom of the pan. Increase heat to medium-high; cook, stirring, until the sauce thickens and bubbles, 3 to 5 minutes. Remove from heat.
  • When the potatoes are done, remove them from the oven. Preheat the broiler.
  • Transfer half the potatoes to a 2-quart broiler-safe baking dish. Spread half the sauce over the potatoes and top with 1/4 cup cheese and 2 tablespoons chives. Add the remaining potatoes, sauce and cheese. Top with the bacon. Broil, watching carefully, until the sauce is bubbling and the cheese is beginning to brown, 1 to 5 minutes depending on your broiler. Let stand 10 minutes. Serve topped with the remaining 2 tablespoons chives.

6 large baking potatoes
4 tablespoons sour cream
3 to 4 tablespoons milk, or half-and-half
1/4 cup butter, room temperature
2 tablespoons fresh chives , chopped

Steps:

  • Gather the ingredients.
  • Preheat the oven to 425 F. Scrub potatoes; pat dry.
  • Pierce the top of the potatoes with a fork. Bake for about 50 minutes, or until potatoes ​are tender. Remove a thin slice from the top of each potato and scoop out most of the potato into a bowl, leaving the shells intact. If baking the same day, reduce the oven temperature to 375 F before preparing the potato mixture.
  • In a bowl, combine the potato with the sour cream, 3 tablespoons milk, and the butter and beat until well blended. Add more milk or half-and-half if needed. Beat in salt and pepper, then spoon the mixture into the potato skins. Sprinkle with the chives.
  • Cover and refrigerate until the next day, or bake at 375 F for about 10 to 15 minutes, or until lightly browned.
  • If the potatoes have been refrigerated, preheat the oven to 375 F and bake for 20 to 25 minutes, until hot and lightly browned.

Bell pepper (1 red, yellow and green)
2 red chili peppers
1 Tbsp Walnut oil
1 onion
2 ripe Avocados
2 Tbsps White vinegar
250 grams Greek Yogurt (0.1% fat)
salt

1 bunch Chives
mint leaves or Chives (for garnish)

Steps:

  • Preheat the oven to 225°C (approximately 425°F). Rinse the potatoes and pat dry. iIndividually wrap potatoes in foil and cook on a baking sheet in the oven for 60-70 minutes.
  • Meanwhile, halve, core and rinse bell peppers. Cut bell pepper halves into small cubes. Cut chile peppers lengthwise, remove the seeds, rinse and dice finely. Mix with vegetable oil.
  • Peel the onion and chop. Halve avocados, remove pits, and puree the pulp with the finely diced onion, vinegar and yogurt. Season with salt and pepper. Rinse chives, shake dry and cut into thin rings.
  • Mix chives and vegetables with avocado sauce. Unwrap potatoes from foil, cut crosswise and squeeze until they open up slightly. Sprinkle with salt. Serve baked potatoes with avocado sauce and mint or chives.

1/2 cup sour cream
1/4 cup softened butter
1 cup shredded sharp cheddar cheese
6 slices bacon, cooked crisp and crumbled
2 tablespoons minced green onion tops or 2 tablespoons chives

Steps:

  • Scrub potatoes with vegetable brush; dry well.
  • For crunchy skins, sprinkle each potato with 1 tablespoon garlic flavored olive oil (or substitute plain olive oil), rubbing oil all over potato.
  • Sprinkle with coarse salt and coarsely ground black pepper.
  • Pierce potato several times with tip of sharp knife in order to allow steam to escape.
  • Do NOT wrap in foil.
  • For soft potato skins, DO wrap in foil.

1 1/4 cups sour cream
1/2 teaspoon whole-grain mustard
1 teaspoon coarse salt
A good grinding white pepper
1/3 cup freshly chopped chives
Special equipment: 4 metal skewers

Steps:

  • Preheat oven to 400 degrees F.
  • Skewer the baking potatoes with metal skewers, so they cook through faster and place them directly on the middle oven baking rack for 1 hour and 15 minutes.
  • Meantime add the sour cream to a bowl with the whole-grain mustard, salt, white pepper and chopped chives, leaving a teaspoon back to sprinkle on top. Stir all the ingredients together and scatter over the remaining chives. If you are not eating it straight away store it covered in plastic wrap in the refrigerator.

Boil potatoes until tender. Heat cream or milk. In mixer, blend potatoes the butter, cream or milk, salt and white pepper. Add chives to potato puree before serving to retain color. Reserve. For sauce: In sauce pan over medium-high heat add olive oil. Add shallot, garlic, and plum tomatoes. Saute for two minutes and then add white wine.
