Always cook up a package of potatoes and onions with the rest of your grilled meal! Start early, because it takes about a half an hour to cook. These cook over indirect heat (off to the side), so you can grill other things at the same time.

4 medium (2-1/4" to 3" dia, raw)s potatoes, sliced
1 red onion, sliced
1 teaspoon salt
1 teaspoon ground black pepper
4 tablespoons butter

Steps:

  • Preheat grill for medium heat.
  • For each packet, measure out 2 or 3 squares of aluminum foil large enough to easily wrap the vegetables, and layer one on top of the other. Place some of the potatoes and onion in the center, sprinkle with salt and pepper, and dot with butter. Wrap into a flattened square, and seal the edges. Repeat with remaining potatoes and onion.
  • Place aluminum wrapped package over indirect heat, and cover. Cook for approximately 30 minutes, turning once. Serve hot off the grill.

Just 3 ingredients and less than 30 minutes for until these Hasselback Italian-style Grilled Baked Potatoes with onions are on your picnic table.

5 Green Giant red potatoes
1 RealSweet vidalia onion (halved and sliced)
3/4 cup Marzetti Roasted Garlic Italian Vinaigrette dressing

Steps:

  • Wash and dry the potatoes.
  • Use a fork to prick a few holes in the potato.
  • Microwave the potatoes for 5-10 minutes (depending on your microwave strength) until they are soft, but not too soft. (About 80% baked.)
  • Allow the potatoes to cool slightly.
  • Using a sharp knife cut the potato (the short way) about 1/4-1/2", making sure to not cut all the way through to the bottom.
  • Place the potato on a piece of aluminum foil big enough to wrap the entire potato.
  • Stuff the slices carefully with slices of onion.
  • Drizzle several tablespoons of dressing over the potato.
  • Fold the aluminum foil around the potato tightly.
  • Repeat with the remaining potatoes.
  • Heat a grill to 400 degrees.
  • Place the potatoes on the grill and allow them to finish baking for 15-20 minutes. Because grills can vary in heating, move/adjust the potatoes to a different spot on the grill every 5 minutes so that they cook evenly.
  • The bottoms of the potato should get slightly crispy because of the oil in the dressing.
  • Unwrap the potatoes and serve warm.

This is a recipe I use to throw a potato on the grill while I am grilling. I like how it makes the skin crispy and the center soft. Use whatever toppings you like, as in butter, sour cream, cheese, and bacon bits.

2 russet potatoes
¼ teaspoon olive oil
salt to taste
2 sheets aluminum foil

Steps:

  • Warm up the grill to medium heat.
  • Wash and dry potatoes. Poke potatoes all over with a fork. Rub with olive oil and sprinkle with salt. Roll each potato up in aluminum foil and fold the ends in. Place potatoes on the grill and close the lid. Grill until fork-tender, rotating every 15 minutes or so, about 1 hour.

Check foil packets at 15 and 30 minutes to ensure they are not burning. May require a few more minutes to ensure all is cooked through.

1 cup mayonnaise
¼ cup shredded Parmesan cheese
3 cloves garlic, minced
¼ teaspoon red pepper flakes
½ teaspoon paprika
¼ teaspoon salt
¼ teaspoon ground black pepper
3 large baking potatoes, cut into 1/4-inch slices
1 large sweet onion, sliced
4 12x12-inch squares aluminum foil
cooking spray

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Stir mayonnaise, Parmesan cheese, garlic, red pepper flakes, paprika, salt, and pepper together in a large bowl. Add potatoes and onion; stir to coat completely.
  • Arrange aluminum foil squares on a work surface and spray each with cooking spray. Divide potato mixture between the four squares. Fold aluminum foil over potato mixture and crimp edges together to form a secure pouch.
  • Cook on the preheated grill until potatoes are tender, about 30 minutes.

Since the potatoes are cooked over direct heat, it's important to use heavy-duty aluminum foil. (In a pinch, you can use two layers of regular foil.)
