GRILLED POTATOES AND ONION
Always cook up a package of potatoes and onions with the rest of your grilled meal! Start early, because it takes about a half an hour to cook. These cook over indirect heat (off to the side), so you can grill other things at the same time.

Steps:
- Preheat grill for medium heat.
- For each packet, measure out 2 or 3 squares of aluminum foil large enough to easily wrap the vegetables, and layer one on top of the other. Place some of the potatoes and onion in the center, sprinkle with salt and pepper, and dot with butter. Wrap into a flattened square, and seal the edges. Repeat with remaining potatoes and onion.
- Place aluminum wrapped package over indirect heat, and cover. Cook for approximately 30 minutes, turning once. Serve hot off the grill.

GRILLED POTATOES WITH ONIONS
Just 3 ingredients and less than 30 minutes for until these Hasselback Italian-style Grilled Baked Potatoes with onions are on your picnic table.

Steps:
- Wash and dry the potatoes.
- Use a fork to prick a few holes in the potato.
- Microwave the potatoes for 5-10 minutes (depending on your microwave strength) until they are soft, but not too soft. (About 80% baked.)
- Allow the potatoes to cool slightly.
- Using a sharp knife cut the potato (the short way) about 1/4-1/2", making sure to not cut all the way through to the bottom.
- Place the potato on a piece of aluminum foil big enough to wrap the entire potato.
- Stuff the slices carefully with slices of onion.
- Drizzle several tablespoons of dressing over the potato.
- Fold the aluminum foil around the potato tightly.
- Repeat with the remaining potatoes.
- Heat a grill to 400 degrees.
- Place the potatoes on the grill and allow them to finish baking for 15-20 minutes. Because grills can vary in heating, move/adjust the potatoes to a different spot on the grill every 5 minutes so that they cook evenly.
- The bottoms of the potato should get slightly crispy because of the oil in the dressing.
- Unwrap the potatoes and serve warm.

BAKED POTATOES ON THE GRILL
This is a recipe I use to throw a potato on the grill while I am grilling. I like how it makes the skin crispy and the center soft. Use whatever toppings you like, as in butter, sour cream, cheese, and bacon bits.

- Warm up the grill to medium heat.
- Wash and dry potatoes. Poke potatoes all over with a fork. Rub with olive oil and sprinkle with salt. Roll each potato up in aluminum foil and fold the ends in. Place potatoes on the grill and close the lid. Grill until fork-tender, rotating every 15 minutes or so, about 1 hour.

My family loves these tasty potatoes. There are never leftovers. Once the potatoes are all tucked in their foil packets, they can wait overnight to be grilled the next day. Great for camping. Check foil packets at 15 and 30 minutes to ensure they are not burning. May require a few more minutes to ensure all is cooked through.

- Preheat grill for medium heat and lightly oil the grate.
- Stir mayonnaise, Parmesan cheese, garlic, red pepper flakes, paprika, salt, and pepper together in a large bowl. Add potatoes and onion; stir to coat completely.

Turns out the best way to make a baked potato might be to not bake it at all. Grilling it yields the same fluffy interior with the bonus of an underlying hint of smoky flavor. - Preheat a grill to medium heat. Use a paring knife to poke each potato 4 to 6 times. Rub the potatoes with the olive oil, then generously season with salt and pepper.
- Wrap each potato in a 12-by-12-inch piece of heavy-duty aluminum foil, then place on the grill. (If using a charcoal grill, place over the area with coals.) Grill with the lid closed until a paring knife slides easily into each potato, 50 to 60 minutes.
