3 large baking potatoes
2 egg whites
2 tablespoons grated Parmesan cheese
1 teaspoon garlic powder

Steps:

  • Cut potatoes lengthwise into thin 1/4-in. strips. Pat dry with paper towels. In a bowl, combine the egg whites, Parmesan cheese and garlic powder. Add the potatoes; toss to coat. , Place in a single layer in a 15x10x1-in. baking pan coated with cooking spray. bake, uncovered, at 375° for 35-40 minutes or until potatoes are golden brown and tender, turning several times.

  • In a large bowl, mix olive oil and paprika. Add potato sticks, and stir by hand to coat. Place on the prepared baking sheet.
  • Bake 40 minutes in the preheated oven.

1/2 cup milk
1 tablespoon butter
Salt and pepper to taste
1/2 cup shredded cheddar cheese

Steps:

  • In a greased 13-in. x 9-in. baking dish, arrange potatoes in a single layer. Pour milk over potatoes. Dot with butter; sprinkle with salt and pepper. 1/8 teaspoon garlic salt
1/8 teaspoon onion salt
1/8 teaspoon paprika
1 package (12 ounces) potato chips, crushed
2 pounds boneless skinless chicken breasts, cut into 1-inch strips
1/4 cup butter, melted
Salsa, barbecue sauce or sweet-and-sour sauce

Steps:

  • In a shallow bowl, combine sour cream and seasonings. Place crushed potato chips in another shallow bowl. Dip chicken strips in sour cream mixture, then coat with potato chips. Place in a greased 15x10x1-in. baking pan. Drizzle with butter. , Bake at 400° for 20-22 minutes or until chicken is no longer pink. Serve with salsa or sauce. Freeze option: Transfer cooled chicken strips to an airtight container; freeze. To use, reheat chicken strips in a greased 15x10x1-in. baking pan in a preheated 400° oven until crisp and heated through.

8 large baking potatoes
1/2 cup butter, melted
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 cup finely chopped green onions
1/2 cup crumbled cooked bacon
1/2 cup chopped cooked shrimp or fully cooked ham, optional
1/2 cup chopped green peppers
1 cup shredded cheddar cheese
1 cup sour cream

Steps:

  • Bake potatoes at 400° for 1 hour or until tender. Cool slightly; cut in half lengthwise and scoop out pulp, leaving 1/4 in. shell. (Save removed potato pulp for another use.) , Cut skins into strips or halves; brush skin sides with butter and place on a baking sheet.
