POTATO AND ONION BAKE RECIPE



Potato and Onion Bake Recipe image

This French Layered Potato and Onion bake is a simple potato dish called Pommes Boulangère or Boulangere Potatoes. It is so easy to make and makes a great alternative to creamy scalloped potatoes or cheesy potatoes au gratin. The thin slices of potatoes and onions are cooked in broth with rosemary until they are soft and tender with a golden crust. A great side dish.

3 tbsp butter (- see note 1)
3 onions (- see note 2)
2.6 lb washed potatoes (about 6 potatoes) (- see note 3)
2 tbsp fresh rosemary, finely chopped (- see note 4)
2 tsp salt
1 tsp black pepper
2 cups vegetable broth/stock

Steps:

  • Preheat the oven to 350°F /180°C. (see note 5)
  • Use some of the butter (about 1 tbsp) to grease the bottom and sides of a 8 cup/2litre baking dish. Place this on a baking tray for easy.
  • Peel and finely slice the onions.
  • Use a mandolin, food processor or sharp knife to cut the potatoes into 1/8 inch (3-4mm) thick disks.
  • Arrange a layer of potatoes in your prepared baking dish, then top with onions, some of the chopped rosemary, salt, and pepper. Repeat the layers finishing with a top layer of potatoes and rosemary.
  • Add any remaining herbs and seasonings to your broth and then pour it carefully over the potatoes, ensuring that it just covers the top layer.
  • Dot the remaining 2 tbsp of butter over the top of the dish, cover the dish with foil and then transfer the baking dish and tray to the oven.
  • Cook for 60 minutes then remove the foil and cook for a further 15-20 minutes until the potatoes are tender and the top is golden and crisp. (see note 5&6)

1 medium baking potato
1 teaspoon olive oil
½ teaspoon salt
2 teaspoons butter
1 pinch freshly ground black pepper
¼ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Scrub the potato, and pierce the skin several times with a knife or fork. Rub the skin with olive oil, then with salt.
  • Place the potato in the preheated oven, and bake for 90 minutes, or until slightly soft and golden brown. Slice the potato down the center, and serve with butter and black pepper. Sprinkle shredded Cheddar cheese over the top, if desired.

My Prize Winning Recipe! We make this on a Friday to use up left overs, something our family has made for many years, it is a good way to use leftovers or create from things on hand. Put out all the bowls of toppings... and let the creative fun begin! This recipe is using giant potatoes, but you can use any size. We divided our creations into 2-3 portions... I loved the looks on the kids faces when they saw the size of the potatoes! We created more memories... had fun... and ate a wonderful meal.. Awesome! Please remember to have fun... POLISH BAKED POTATO TOPPINGS
6 large (or huge) potatoes (baked)
- butter
1 quart(s) sauerkraut (heated)
1 pound(s) polish sausage (peeled, cut into "coins")
1 pound(s) ham (cubed)
1 pound(s) cheddar cheese, shredded
- bell pepper, cut up and cooked
1 large sour cream
OPTIONAL INGREDIENTS FOR OTHER TYPES OF POTATOES
- pasta sauce (heated)
- italian cheese, (shaved or shredded)
- italian sausge (cooked)
- pepperoni
- onion (saut'eed)
- olives
- cheddar cheese, shredded
- taco chips
- taco sauce
- chili beans
- ground beef (cooked and crumbled)
- guacamole
1 - (14 ounce) sriracha ranch veggie dip (by marzetti) (hot)
- beef tips and sauce
- anything you desire!
- bacon, cooked and crumbled
- spam, cubed

Steps:

  • *** Invite family and friends to your home, or do a "Potato Pot Luck" at church! Easy and fun! We did this years ago at a different church, we made a sign up sheet for all who wanted to attend, we had certain ingredients listed and left "Surprise Us" spots on the sheets... we had an amazing assortment of ingredients! The ingredients in this recipe are left overs and what we had on hand.
  • Pick out desired potatoes, amount and size. In this recipe we used HUGE potatoes.
  • Wash potatoes, trim off any ugly spots. Poke fork into potatoes several times. Put in 375 degree oven and bake for 1 hour (more if needed).
  • Remove from oven to plates.
  • Cut potatoes open and flatten out a bit.
  • Add butter on top. *** I do not salt the potatoes as there should be enough flavor from toppings.
  • For the Polish Potato: Add sour cream, sauerkraut, ham, Polish sausage and cheese.
  • Add more sauerkraut (optional), shredded cheddar cheese, bell pepper. Actually, all ingredients are optional, this is just a guideline.
  • Sour cream on top and it is ready to serve!
  • *** Get creative with what ever toppings you have!
  • Put as many or as few toppings on the serving table as you like... our table was crowded!
  • Little Evie did not eat this whole plate... she divided it onto plates and shared with two other people! We all like different foods... create memories! Play With Your Food! xo
