3 tbsp butter
1 1/2 lb red potatoes (chopped)
1/4 cup minced parsley (fresh)
2 tsp minced garlic
1 - 1 1/2 tsp garlic salt (with parsley flakes)
1/8 tsp pepper
8 large eggs
3/4 cup shredded extra-sharp cheddar cheese

Steps:

  • Preheat oven to 400.
  • In a 10-in. ovenproof skillet, heat butter over medium heat. Add potatoes and cook until tender.
  • Stir in parsley, garlic, garlic salt and pepper.
  • With the back of a spoon, make four wells in the potato mixture. Break two eggs and pour into each well within the potatoes.
  • Bake 10-12 minutes and sprinkle with cheese. Bake and additional 1-2 minutes to melt cheese. Serve right away and ENJOY!

2 pounds Yukon Gold potatoes (about 6 medium), peeled and diced
1/2 cup water
1 cup frozen chopped broccoli, thawed
6 green onions, thinly sliced
1 small sweet red pepper, chopped
6 large eggs
8 large egg whites
1 cup 1% cottage cheese
1 cup shredded reduced-fat cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup fat-free milk
2 tablespoons dried parsley flakes
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350°. Place potatoes and water in a microwave-safe dish. Cover and microwave on high for 7 minutes or until tender; drain., Spread potatoes in a greased 13x9-in. baking dish. Top with the broccoli, onions and red pepper. , In a large bowl, whisk the remaining ingredients until blended. Pour over vegetables. Bake, uncovered, until center is set, 35-40 minutes.

4 large potatoes
1/4 cup sour cream
1/4 teaspoon chopped dill (or herb of choice)
salt and pepper
4 small eggs
1/2 cup cheddar cheese (or other sharp variety)

Steps:

  • Oven bake potatoes until tender.
  • Cut top off potato (to form a lid).
  • Scoop out flesh of potato leaving about 1 cm (just under 1/2 inch) of the flesh under the skin.
  • Mix the flesh with sour cream, dill, and salt and pepper.
  • Line each potato shell with some of the filling.
  • Break an egg into each potato and sprinkle with cheese.
  • Bake in a 200 degree Celsius (400 degree Fahrenheit) oven until the egg is set, about 10 minutes suited us.
  • I popped the lid in the oven for a couple of minutes to warm it through then served it on top the browned cheese.

I'm forever looking for inventive and savory ways to incorporate my leftovers into the simplest preparations. This recipe is an inspired short version of the irresistible original, "lifted" from my very favorite egg cookbook, "Country Egg, City Egg," by Gayle Pirie and John Clark. Served with a simple salad, this is a great midweek meal.

3 cups mashed potatoes, heated through
4 eggs
Coarse salt and cracked black pepper
1/4 cup freshly grated Parmesan
1/4 cup chopped fresh herbs such as parsley, chives, oregano, or thyme

Steps:

  • Preheat oven to 450 degrees F.
  • Divide the mashed potatoes into four individual baking dishes. Make a deep well in the center of the mashed potatoes. Crack an egg directly into each well. Season with salt and pepper, to taste. Sprinkle 1/4 of the cheese over each egg. Bake for 12 to 15 minutes or until eggs are done to your likeness.
  • Remove from oven, garnish with fresh herbs. Serve immediately.

1 cup extra-sharp farmhouse cheddar, shredded (about 4 ounces)

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt the butter in a large, well-seasoned cast iron skillet over medium heat. Add the potatoes and cook, stirring occasionally until tender and brown, about 15 minutes. Stir in the parsley, garlic, salt, and pepper, and remove from the heat.
  • Push the potatoes aside to make 4 evenly spaced shallow nests and break 2 eggs into each. Bake until the egg whites are cooked and the yolks are still runny, about 10 minutes. Sprinkle the cheese over the eggs and continue baking until it just melts, about 1 minute more. Serve immediately.

1/4 cup milk, hot
1/4 teaspoon salt
1/4 teaspoon pepper

1/2 cup cheese, shredded

Steps:

  • Bake the potatoes.
  • Scoop out the pulp, after cutting a thin slice from the length of the potato.
  • Mash pulp to a creamy fluff with butter, hot milk, salt and pepper.
  • Fill potato shells, leaving a dent in the middle of each to hold a raw egg.
  • Break 1 or 2 eggs into each potato.
  • Cover with cheese.
  • Bake at 400°F for 10 minutes until the egg is firm and cheese is browned.
