I found this in a pamphlet from the orchard (about Maryland apple orchards) a few years ago when we were picking apples. It is one of the tastiest things I have ever made!

2 tablespoons butter
6 pork chops
4 apples
1/4 cup brown sugar
1/2 teaspoon cinnamon

Steps:

  • Peel, core, and slice the apples.
  • Preheat the oven to 350 degrees.
  • Melt the butter in a skillet.
  • Brown the pork chops on both sides in the butter.
  • Grease (or spray) a large baking dish.
  • Put the apple slices in the bottom of the dish.
  • Mix the brown sugar and cinnamon.
  • Sprinkle the cinnamon and sugar over the apples.
  • Place the pork chops on top of the apples.
  • Cover with foil and bake for 1 and 1/2 hours.

4 bone-in pork chops, each about 1 inch thick (about 2 1/2 pounds total)
Coarse salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
2 medium sweet potatoes, scrubbed and cut into 1/4-inch-thick rounds
1 large sweet onion, such as Vidalia, peeled and cut into 1/4-inch-thick rounds
1/3 cup apple-cider vinegar
1/2 cup apple cider
1 teaspoon caraway seeds
2 apples, preferably Honeycrisp, thinly sliced, seeds removed

Steps:

  • Preheat oven to 375 degrees. Season pork with salt and pepper. Heat a large ovenproof skillet over medium-high heat; swirl in oil. Cook chops until golden brown, turning once, about 8 minutes. Transfer to a plate. Remove all but 2 tablespoons fat from skillet.
  • Reduce heat to medium. Add potatoes and onion; season with salt. Cook until golden in spots, about 10 minutes. Add vinegar and cider. Cover and simmer, stirring a few times, until potatoes are tender, about 5 minutes. Sprinkle with caraway seeds. Return pork and juices to skillet; tuck apple slices between chops. Roast until a thermometer inserted into thickest part of chops (without touching bone) registers 138 degrees, about 10 minutes. Serve pork, vegetables, and apples with pan juices.

1 tablespoon oil, or as needed
½ cup chicken broth
3 small sweet potatoes, peeled and sliced
3 small apples - peeled, cored, and thinly sliced

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Season pork chops on all sides with salt and pepper. Heat oil in a large, ovenproof skillet over medium-high heat and cook pork chops until browned, about 5 minutes per side. Transfer chops to a plate and set aside.
  • Pour broth into the same skillet over medium heat and loosen brown bits that have stuck to the bottom. Add sweet potatoes to skillet. Layer apple slices on top. Place pork chops on top of apples and cover skillet. Remove from heat.

2 sweet potatoes, diced
2 cups broccoli florets
2 tbsp. homemade ketchup
2 tbsp. coconut aminos
1/4 cup chicken stock
2 garlic cloves, minced
2 tsp. apple cider vinegar
2 tbsp. avocado oil
Sea salt and freshly ground black pepper

Steps:

  • Preheat oven to 425 F. In a bowl, combine the ketchup, chicken stock, garlic, apple cider vinegar, and coconut aminos. Season the pork chops to taste with salt and pepper. Pour the mixture over the pork chops, making sure they are well covered. Drizzle the avocado oil over the sweet potatoes and broccoli, and season to taste. Place the pork chops in a baking dish and surround with the sweet potatoes and broccoli. Bake in the oven for about 20-25 minutes depending on the thickness, or until the pork is cooked through and sweet potatoes are soft. Pork is done when the temperature reaches 145 F.

3 pears, peeled, quartered, and cored
1/3 cup chopped pecans
1/3 cup brown sugar, packed
3 tablespoons plus 1/2 cup all-purpose flour
3 tablespoons butter, melted
Olive oil cooking spray
2 eggs, beaten
1 cup Italian seasoned bread crumbs
1 tablespoon herbs de Provence
4 (3/4-inch thick) bone-in pork loin chops

Steps:

  • Preheat oven to 350 degrees F.
  • In an 8-inch square baking dish, combine sweet potatoes and pears. In a small bowl, mix pecans, brown sugar, 3 tablespoons of flour, and the melted butter to make a paste. Crumble mixture over potatoes and pears. Bake for 20 to 30 minutes, or until potatoes and pears are tender.
  • Meanwhile, spray a roasting pan and rack with cooking spray. 2 TBS sunflower oil
250g sweet potatoes, peeled and sliced (1/2 pound)
fine sea salt and freshly ground black pepper
2 medium brown onions, peeled and sliced
the leaves from 3 - 4 sprigs of thyme
2 pork loin chops, fatty edge slashed
(this helps to prevent the chops from curling)
1 TBS pure Maple Syrup
75ml apple juice (1/3 cup)

Steps:

  • Preheat the oven to 180*C/350*F/ gas mark 4. Butter a shallow oven baking dish. Set aside.
  • Prepare your vegetables. Spread the sweet potatoes in the baking dish, sprinkling them with salt and pepper and a bit of thyme.
  • Heat the oil in a skillet. Add the onions and fry them until golden brown. Remove from the skillet and spread over the potatoes. Sprinkle wit a bit more thyme. Season the pork chops and brown them quickly on both sides in the skillet. Place them on top of the vegetables in the casserole dish and sprinkle with any remaining thyme. Whisk together the maple syrup and apple juice. Pour over all and then cover the dish tightly with foil.
  • Bake in the preheated oven for 40 minutes. Uncover. Reduce the oven temperature to 150*C/300*F/gas mark 2. Return the dish to the oven and cook for a further 10 minutes to let the chops and potatoes brown slightly. Spoon onto heated plates to serve. I like to serve a green vegetable with this.

  • 2. To cook the vegetables and apples: In a large bowl, toss the sweet potatoes, apples, fennel, and rosemary with the olive oil to coat. Season with salt and pepper. Carefully remove the baking sheet from the oven and spread the vegetables and apples on it.
