BAKED PLANTAINS - SIERRA LEONE FLAVOURS

2 plantains
Vegetable oil for brushing
Salt to taste

Steps:

  • Preheat oven to fan assisted 180C / 200C / 400F / gas 6.
  • Peel the plantains and cut into slices on the diagonal.
  • Brush both sides of the slices with oil and put on a lightly oiled, lined baking tray and sprinkle on some salt
  • Bake for about 25 mins or until golden and the edges start turning brown. Make sure to turn the plantains at least once during baking.
  • Serve whilst warm.

4 very ripe plantains (when the skin is yellow with spots of black they're perfect)
cooking spray

Steps:

  • Preheat oven to 450°F.
  • Coat a nonstick cookie sheet with cooking spray.
  • Cut the ends off of the plantains and peel.
  • Cut each plantain on the diagonal into 1/2 inch slices.
  • Arrange in single layer and coat tops with cooking spray.
  • Bake, turning occasionally, for 10-15 minutes, until plantains are golden brown and very tender.

  • Preheat the oven to fan-assisted 160C / 180C / 350F / gas 4 and grease and line two 20cm / 8 inch cake tins.
  • In a separate bowl, mix together the flour, sugar, cinnamon and baking powder. Add the wet ingredients to the dry ingredients and mix until well combined and lump free. Whisk the egg whites until just stiff and use a spatula to gently fold in the egg whites.
  • Split the cake mixture evenly between the two cake tins. Bake in the oven for about 30 mins, or until a skewer inserted into the cakes comes out clean. Remove the cakes from the oven, let cool in the tins for 5 mins before cooling completely on a wire rack.
