BAKED PINEAPPLE WITH BROWN SUGAR AND KAHLUA

Steps:
- Preheat oven to 400°F. Arrange pineapple in single layer in baking dish. Sprinkle with brown sugar. Dot with butter and sprinkle with cinnamon. Drizzle Kahlúa over. Bake until pineapple juices bubble, 25 minutes.
- If necessary, transfer juices to small saucepan and boil until thickened to sauce consistency. Arrange pineapple on plates. Top with ice cream. Spoon sauce over and serve hot.
KAHLUA GLAZED HAM
This roast ham is glazed with Kahlua, mustard, and brown sugar--a sure crowd pleaser!

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- To make the glaze: Heat brown sugar, Kahlua and dry mustard in saucepan until melted and heated through. Reserve about 1/2 cup to serve with cooked ham.
- Place ham in 9x13 baking pan; add water to bottom of pan. Cover tightly with foil. Bake in preheated oven 45 minutes.
- Remove foil, and coat ham with some of the glaze. Cover with foil again and bake 30 more minutes. Remove foil and bake until thermometer reads 160 degrees inside ham, about 20 minutes.
- Slice ham and serve with reserved glaze.

- Set the roasting pan on the counter and remove the roasting rack. Place 6 to 8 pineapple rings on the bottom of the roasting pan. (Or use a large casserole dish; if the ham fits, the dish is fine.)
- Remove the ham from its packaging and place the ham in the roasting pan. Combine brown sugar and ground cloves together in a small bowl.
- Massage the sugar mixture all over the ham, including the cut side. Really rub the sugar into the meat. It will turn into a paste while rubbing it.

- Cut the first pineapple into chunks. To make fresh pineapple juice: place pineapple chunks in a high-speed blender, and turn on high for about 15-20 seconds. 1 cut pineapple makes approximately 3 cups of fresh pineapple juice if you blend all the pineapple chunks or you can keep some cut pineapple for snacks.
