PINEAPPLE CASSEROLE

This pineapple casserole with Cheddar cheese is beloved for its simplicity (and short ingredient list).

2 (20-oz.) cans pineapple chunks in juice, drained (reserve 6 Tbsp. juice)
⅓ cups sugar
5 tablespoons flour
1 cup shredded Cheddar cheese
¼ cup butter, melted
1 sleeve Ritz crackers, crushed

Steps:

  • Preheat oven to 350˚F. In a medium size bowl, combine sugar, flour, and reserved pineapple juice. Add pineapple chunks and toss well to combine. Spoon pineapple mixture into 8x8-inch casserole dish and top with shredded cheese.
  • Combine crushed Ritz crackers and melted butter. Spread Ritz cracker topping evenly on top of pineapple mixture.
  • Bake at 350˚F for 30 minutes, or until bubbly.

4 eggs, well beaten
1 (15 1/2 ounce) can unsweetened crushed canned pineapple, drained
5 slices white bread, cubed

Steps:

  • Set oven to 350 degrees.
  • Grease a 1-1/2-quart casserole dish.
  • Cream butter and sugar.
  • Add in eggs; beat until combined.
  • Stir in drained crushed pineapple and bread cubes.
  • Pour into prepared baking dish.
  • Bake for 45 minutes, until lightly browned.
  • Serve hot or cold.

6 tablespoons butter, softened
1 (20 ounce) can crushed pineapple, undrained
2 large eggs
⅛ teaspoon ground nutmeg
¼ teaspoon ground cinnamon
1 pinch salt
4 slices bread, cubed
½ cup chopped pecans
½ cup coconut flakes

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
  • Combine sugar and butter in a medium mixing bowl; beat with an electric mixer until smooth and creamy. Mix in undrained pineapple, eggs, nutmeg, cinnamon, and salt until well combined. Use a spoon to fold in bread cubes, then stir in pecans and coconut. Pour into the prepared casserole dish.
  • Bake in the preheated oven until browned and bubbly, 45 to 55 minutes.

This is a sweet/savory side dish that has such a wonderfully pleasant taste and it goes well with any main dish - ham, beef, or poultry. I kid you not, this recipe is what delicious is all about!

1 c sugar
6 Tbsp flour
2 c sharp cheddar cheese, shredded
2 (20oz) can(s) pineapple tidbits, crushed or chunks, (drain and reserve juice)
1 c cracker crumbs (recommended: ritz or townhouse)
1/2 c (1 stick) butter, melted
6 Tbsp reserved pineapple juice
a sprinkle of cinnamon (if desired)

Steps:

  • 1. Preheat the oven to 350'F. degrees F. Grease a medium-size casserole dish with butter.
  • 2. In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish. (I spray it with Pam)
  • 3. In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice and cinnamon, stirring with a rubber spatula until evenly blended (should be a little wet & crumbly.) Spread over the top of pineapple mixture.
  • 4. Bake for 25-30 minutes or until golden brown. Serve hot out of the oven. Oh Yummm!

I admit, I was skeptical at first when I first saw the dish, but after one bite I was hooked! It tastes almost like a dessert. If you want to try something a little different, I strongly suggest this recipe. I think you'll be pleasantly surprised.

3 eggs, beaten
1/2 cup sugar
2 tablespoons flour
1/2 cup butter
6 -7 pieces white bread

Steps:

  • Mix the 1st four ingredients together and pour into a greased baking pan.
  • Melt the butter in a large skillet.
  • Break the bread into small squares and drop into the melted butter.
  • Stir, being careful not the make the bread mushy, until the bread has soaked up the butter.
  • Spread bread evenly over the 1st mixture.
  • Bake at 325°F for 30 minutes.

1 (20 ounce) can crushed pineapple, partially drained
⅔ cup white sugar
5 tablespoons all-purpose flour
1 stick butter, melted
1 ½ cups shredded orange Cheddar cheese
1 sleeve crushed buttery round crackers (such as Ritz®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix pineapple tidbits and crushed pineapple together in a bowl and layer into the bottom of a 9x13-inch glass baking dish.
