ROASTED BARLEY PILAF

1 tablespoon olive oil
1 cup pearl barley, rinsed
2 shallots, minced
1/4 pound white or wild mushrooms, sliced
2 cups Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat, or water
3/4 teaspoon salt
Freshly ground black pepper

Steps:

  • In a heavy, medium saucepan, heat oil over medium heat. Add barley and cook, stirring frequently, for 10 minutes. The barley should start to brown and give off an aroma.
  • Add shallots, and cook for 2 minutes. Add mushrooms, and cook until wilted, 2 to 3 minutes. Add stock and salt. Bring to a boil; then turn down heat to a bare simmer. Cover, and cook for 45 minutes, or until liquid is absorbed.
  • Stir well, season with pepper and more salt, if needed, and serve immediately.

1 cup/163 g dry pearl barley, washed
water
2 whole zucchini squash, diced
1 red bell pepper, cored, diced
1 yellow bell pepper, cored, diced
1 medium red onion, diced
salt and pepper
2 tsp/ 3.9 g harissa spice, divided
3/4 tsp/ 1.95 g smoked paprika, divided
Early Harvest Greek extra virgin olive oil
2 scallions (green onions), trimmed and chopped (both whites and greens)
1 garlic clove, minced
2 oz / 56 g chopped fresh parsley
2 tbsp/30 ml fresh squeezed lemon juice
Feta cheese, to taste (optional)
Toasted pine nuts, to taste (optional)

Steps:

  • Preheat oven to 425 degrees F.
  • Place pearl barley and 2 1/2 cups water in a sauce pan. Bring to a boil, then turn heat down to low. Cover and cook anywhere from 30 to 45 minutes or until the barley is cooked through (should be tender but maintains some chew.)
  • While barley is cooking, place diced vegetables (zucchini, bell peppers, and red onion) on a large baking sheet. Season with salt, pepper, 1 1/2 tsp harissa spice, and 1/2 tsp smoked paprika. Drizzle with extra virgin olive oil. Toss to coat. Spread evenly in one layer on the baking sheet. Roast in heated oven for 25 minutes or so.
  • When barley is ready, drain any excess water. Season with salt, pepper, 1/2 tsp harissa spice and 1/4 tsp smoked paprika. Toss to combine.
  • Transfer cooked barley to a large mixing bowl. Add roasted veggies. Add chopped scallions, garlic, and fresh parsley. Dress with lemon juice and a good drizzle of Early Harvest extra virgin olive oil. Toss. If you like, top with crumbled feta and toasted pine nuts.
  • Serve warm, at room temperature, or cold! Enjoy.

Wholesome and nutty, barley is a superb alternative to arborio rice in this risotto, since it's naturally plump and chewy when cooked. The grated Parmesan and butter stirred in at the end release the barley's starches, creating a silky, creamy texture. Make sure to use pearl barley, not hulled, since it cooks much faster and is more tender. As for the mushrooms, white button, cremini and earthy shiitakes are a tasty, accessible mix, though any combination of oyster, king trumpet and maitake would raise the bar. Still, the best thing about this risotto, which is a satisfying vegetarian weeknight dinner (or side to any large roast or fish) is that it's baked, taking away the pressure of constant stirring at the stove.

1/2 small white or yellow onion, finely chopped (about 1/2 cup)

Steps:

  • Heat oven to 425 degrees. In a large Dutch oven or heavy pot, heat 2 tablespoons oil over medium. Add onion and garlic, and cook, stirring occasionally, until softened, about 3 minutes. Add mushrooms and remaining 1 tablespoon oil, and season with salt and pepper. Cook, stirring occasionally, until mushrooms start to soften, about 3 minutes.
  • Stir in barley, carrot and 4 1/2 cups water, and bring to a boil over high heat. Cover, transfer to the oven and bake until barley is tender and chewy and almost all of the liquid is absorbed, about 30 minutes.
  • Stir in Parmesan and the butter until slightly thickened and creamy. Season with salt and pepper.
  • Divide among shallow bowls. Sprinkle with chives and more Parmesan, to taste.

1/2 cup uncooked medium pearl barley
1/4 teaspoon salt
2 cups milk
1 cup heavy whipping cream
1/2 cup sugar
2 eggs

1/4 teaspoon ground cinnamon

Steps:

  • In a large saucepan, bring water to a boil. Stir in barley and salt. Reduce heat; simmer, uncovered, for 15 minutes, stirring occasionally. Add milk; cook over medium-low heat for 10 minutes or until barley is almost tender, stirring frequently. In a bowl, whisk the cream, sugar, eggs and vanilla; gradually stir into the barley mixture., Spoon into eight greased 6-oz. custard cups. Sprinkle with raisins and cinnamon. Place custard cups in two 9-in. square baking pans. Fill both pans with boiling water to a depth of 1 in. 1/2 cup slivered almonds or pine nuts

But beneath the crispy topping, it's perfectly cooked barley, not pasta, that's cloaked in a creamy and buttery cheese sauce. Browned onions, garlic and thyme give this decadent side dish deep, rich flavor. Serve it alongside roasted turkey, fried chicken or grilled steak.

8 tablespoons (1 stick) unsalted butter, plus more for greasing the baking dish
Kosher salt and freshly ground black pepper
2 cups pearled barley
6 ounces Gruyere, shredded (about 2 cups)
2 cups shredded mozzarella
1 cup grated Parmesan
1 1/2 cups panko breadcrumbs
1 large yellow onion, chopped into 1/4-inch pieces (about 2 cups)
2 large cloves garlic, finely minced
1 1/2 teaspoons finely-chopped fresh thyme
1/4 cup all-purpose flour
4 cups whole milk

Steps:

  • Position an oven rack in the center of the oven and preheat it to 400 degrees F. Lightly grease a 3-quart baking dish with butter and set aside.
  • Fill a small pot with lightly salted water and bring to a boil over medium-high heat. Add the barley and boil until just cooked through but still slightly chewy, about 20 minutes (it will continue to cook in the oven). Drain and rinse.
  • Meanwhile, put 2 tablespoons of butter in a medium microwave-safe bowl and microwave until melted, about 30 seconds. Combine the Gruyere, mozzarella and parmesan in another medium bowl. Add the panko, 1 cup of the cheese mixture and 1/2 teaspoon salt to the bowl with the melted butter. Use your hands to work the butter into the cheese and breadcrumbs. Set aside.
  • Melt the remaining 6 tablespoons of butter in a wide large pot over medium-high heat. Add the onions and a large pinch of salt and cook, stirring occasionally, until the onions are lightly browned, 6 to 8 minutes. (The butter will start to foam and brown specks will form, but that is okay; this will add a lot of flavor to the finished dish.) Reduce the heat to medium, add the garlic and thyme and stir constantly until the garlic is just softened, about 1 minute. Stir in the flour and cook, stirring constantly, until a thin paste forms around the onion mixture, about 1 minute. Whisk in the milk and 1 teaspoon each salt and pepper and bring to a boil over medium-high heat. Reduce to a simmer, stirring occasionally until the sauce is a thin gravy, about 10 minutes. Remove from the heat and stir in the shredded cheese mixture and cooked barley. Season to taste with additional salt and pepper. Spoon into the greased baking dish. Sprinkle the reserved cheesy breadcrumbs evenly on top of the barley and bake until bubbly and the top is golden brown, about 30 minutes. Let stand 10 minutes before serving.

  • Melt butter in a 1 1/2-quart Dutch oven or oven-safe pot over medium heat and cook onion until lightly browned, 5 to 8 minutes. 1/2 butternut pumpkin (top half, cubed)
1/2 tablespoon olive oil
salt (sea to taste)
ground pepper (fresh to taste)
3 cups pearl barley
1 liter vegetable stock
2 tablespoons butter
2 tablespoons plain flour
1 liter milk (hot)
2 cups cheddar cheese (grated)
1 tablespoon cream (a splash)
1/2 tablespoon olive oil
250 g cherry tomatoes (quartered)
6 -8 mushrooms (button quartered)
1 cup cheddar cheese (grated)
1/4 cup parmesan cheese (freshly grated)

Steps:

  • Preheat oven to 180C fan forced (200C normal).
  • Toss the pumpkin with a little oil and salt and pepper in a heavy bottom baking tray and cook in the oven until tender tossing now and again.
  • At the same time, put the pearl barley and a pinch of salt in a pot and just cover with stock and gently cook for about 35 minutes until just tender, adding more stock if needed and then drain well.
  • To make the mornay sauce, melt the butter in a pot and add the flour and stir well and gently to cook and then add the hot milk, all at once, and whisk well and then add 2 good handfuls grated tasty cheese, the cream and salt and pepper and whisk until the cheese has melted.
  • Heat a little oil in a pan and gently saute the tomatoes until they collapse a bit, regularly stirring and then toss the tomatoes with the cooked pumpkin, pearl barley and salt and pepper and add a general amount of the mornay sauce (LEAVE ENOUGH TO COVER THE TOP OF THE BAKED DISH) and mix well and transfer the mixture to a gratin dish (or any ovenproof dish).
  • Flatten the top and then spoon more mornay sauce on top and sprinkle with some grated cheddar and parmesan and cook in the oven for about 20 minutes or until golden and bubbling.
  • Can be made ahead and reheated in the oven though you may need to cover with alfoil to prevent cheese burning.

2 onions, chopped
1 1/3 cups pearl barley
1/2 cube butter
4 cups chicken broth
1/2 lb. mushrooms
1 cup slivered almonds

Steps:

  • Brown the onions in 1/3 of the butter. Place in a 13"x9" pyrex, coated with cooking spray. Brown barley in 1/3 of butter and add to baking dish. Pour 2 cups of chicken broth over the onions and barley. Bake uncovered at 325 for 30 minutes. Saute mushrooms in remaining butter. Stir barley and onion mixture. Add sauteed mushrooms, slivered almonds and remaining chicken broth and stir again. Bake uncovered for another 45 minutes or until barley is tender. You may find you need a little more butter - this is roughly 1/2 the original recipe. Also, the original calls for beef broth but I think even veggie would work. It travels and re-heats well. Just make sure you cool properly first.

  • Heat the oven to 220°C/200°C fan/gas 7. Bring a large pan of water to the boil and cook the whole cauliflower for 10 minutes until nearly tender. Drain, refresh under cold water, then drain again and pat dry with kitchen paper.
  • Heat a glug of oil in the casserole, add the onion and leeks and fry gently for 10 minutes until softened.
  • Add the garlic, thyme sprigs and pearl barley, then fry for a few minutes. Turn up the heat, add the wine and bubble to reduce for 5 minutes, then add the stock and simmer for 20-25 minutes until the barley is nearly tender, stirring occasionally with a wooden spoon. Stir in the cream, reserved cauliflower leaves and the lemon juice, then simmer for another 5 minutes.
  • Meanwhile, in a non-stick frying pan, heat a glug of oil over a high heat and fry the mushrooms for 5 minutes until they start to colour and are starting to soften. Add them to the sauce, taste and season.
